The Clayfield Opens in Niagara-on-the-Lake as Part of The Unbound Collection by Hyatt
/Hyatt Hotels Corporation has opened The Clayfield, a boutique wine-and-wellness hotel in Niagara-on-the-Lake, Canada, as part of The Unbound Collection by Hyatt. The hotel opened on 17 September 2026.
The project brings together two local Niagara families. David Feldberg, founder of Stratus Vineyards, saw the potential for a hotel guided by the same design-led philosophy as his winery, while John Hawley and his family were completing a New Urban neighbourhood with a village centre now known as Clayfield Commons. The two met in 2019.
Designed by Montreal-based Sid Lee Architecture, the building uses sculptural forms and sweeping curves inspired by the Niagara Escarpment, with slender vertical timber elements that echo the rows of neighbouring vineyards. Inside, floor-to-ceiling windows frame the vineyards and gardens, with warm oak, natural stone and woven textiles.
Dining is anchored by Terrain, a contemporary wine-country restaurant from The Ascari Group led by Executive Chef Joel LaBute, with an 80-seat dining room, a 25-seat lobby bar and a Chef’s Table. Its wine programme focuses on Niagara’s leading wineries and small-lot producers. The Rooftop at The Clayfield, described as Niagara-on-the-Lake’s first rooftop patio, serves cocktails and small plates over the vineyards.
A full-service spa takes its cues from the region’s mineral-rich clay and wine culture, with clay-based body rituals and vinotherapy. More than 5,400 sq ft of event space includes a ballroom.

The hotel sits within Clayfield Commons, which combines an existing grocer, bank, drug store and medical centre with independent retailers, restaurants, a café and a weekly seasonal farmers’ market around a landscaped green.

Reservations are open, with opening offers for stays through April 2027.
