Launch of Mumbai’s Newest Roman Style Pizza - Pizza Dude, By the Slice. Create a Mixbox.

Mumbai, September 2022: The Covid lockdown (2020 & beyond..)brought out the hidden chef in a lot of people. While most of us decided to limit our experiments to personal kitchens, one SoBo entrepreneur, owner of Gateway Brewing co., decided to take things further and Pizza Dude came to life in August 2022. Pizza Dude is a delivery kitchen that will transport Mumbaikars to the city of Rome, offering Roman-style pizzas that one can buy “by the slice & create a mixbox '' to sample 12 different types that are on offer. Since each variant is a slice measuring 5 inches by 4 inches, a person can easily try 3 variants in one go versus buying a whole regular round pie. Additionally, just like Pizza Romana Dude’s dough is not only slow-fermented but also naturally fermented sourdough! Only flour, water & salt are used.


While most of us are familiar with round pizzas, Pizza Dude offers square pizzas, sold by the slice that are cut from a rectangular piece and baked on a sheet pan. During the lockdown, Navin started experimenting with pizza & other sourdough pieces of bread to re-create what he had experienced in Rome in 2019.  After days and months of trials and testing, the madness gave birth to Pizza Dude.  “In 2019, I was in Rome where I was introduced to pizza Romana, which is made from dough that is slowly fermented over 24 hours. Cut to 2020, there was a lockdown and I had plenty of time to experiment with this style of pizza, and now I’m happy to share it with the people of Mumbai,” says Navin. 


Using a naturally fermented, pillowy, yet strong sourdough base to hold generous amounts of toppings, the pizza is best enjoyed one slice at a time. This also encourages customers to indulge in several flavors at a time. The menu is designed keeping in mind those classic and adventurous palettes, with innovation, local, and variety is the main drivers of the product.


On the menu, one can try classic flavors such as Cherry Tomato, Basil & Fresh Mozzarella, tomato sauce, dude mozzarella blend topped with roasted cherry tomatoes & fresh buffalo mozzarella, finished with basil, extra virgin olive oil, and herbs; Creamed Spinach & Corn, white sauce, dude mozzarella blend topped with creamed spinach & sweet corn kernels and finished with crispy garlic flakes; and Truffled Mushroom, garlic white sauce, dude mozzarella blend topped with pan-roasted mushrooms, finished with caramelized onions, truffle oil and greens. Those who like to explore can try novel toppings such as Eggs Kejriwal, garlic white sauce, dude mozzarella blend topped with scrambled eggs. This finished with spicy coriander chili pesto and chives; Hot Chicken & Ranch, tomato sauce, dude mozzarella blend topped with shredded chicken in ghost pepper hot sauce, finished with onion jam & ranch drizzle; Turkish Chicken Doner, dude mozzarella blend topped with spiced chicken, finished with peppers and garlic yoghurt mayo; and Lamb & Za’atar, dude mozzarella blend topped with za’atar spiced mince lamb, finished with fresh salad and labneh. The tomato sauce is made in-house which complements the soft cheese and crispy, light crust. To finish the meal, the Tiramisu makes for the perfect, sweet ending.

BOCA Dubai introduces sustainable and waste-free cocktail menu

BOCA’s Omar Shihab commissioned an artist to design the new illustrated menu

BOCA Dubai, Gault&Millau UAE 2022’s Sustainable Kitchen of the Year, has launched a new cocktail menu inspired by local and regional ingredients and an obsession with reducing waste in the bar. The new cocktail list is the result of months of research and close collaboration within the restaurant.

Founder and GM Omar Shihab sat down with Caterer Middle East to chat about the new cocktail offering. He said: “Our new bar offering features ingredients that are local and new, perhaps never been explored in the bar. Some of the ingredients are made out of waste from the kitchen.”

Introducing new ingredients can always be challenging Shihab explained, but due to his culinary team’s extensive experience with sustainable ingredients, he knew that adapting the ingredients into a drink format was doable. He said: “We understand these ingredients’ taste profiles and we know how they react to specific preservation methods. Giedre Bielskyte, our bar manager, was mapping out the taste profiles of each drink and seeing what we need to match the botanics of the cocktail’s main liquor.

“We were able to look at new items that are considered waste in the kitchen. Things like tomato water and fruit skins. We found ways to maximise those ingredients. For example, we use the skins as dehydrated garnish. We also thought it was very important to tap into what the kitchen usually buys. That was our inspiration for the pimientos del padron cocktail, which is our take on a paloma, made with BOCA’s favourite tapas.”

Oher cocktails on the list include the cold brew martini made with the UAE’s own Boon coffee. The foraged martini is made with UAE-native desert plant khansour, dried apricots and apricot leather made from apricot skin. The summer in Bethlehem cocktail is made with Palestinian brandy. Others include a frankincense negroni made with white Omani frankincense, and tomato and rayhan, made using tomato pulp that’s left over from paellaand native basil.

“We spent a lot of time with the kitchen team when developing this menu. They helped us explore new ingredients and provided us with a new source that may have been destined to the bin,” added Bielskyte.

The growing popularity of non-alcoholic beverages


BOCA’s new cocktails are also available with a low-ABV or no alcohol option using Lyre’s Non-Alcoholic products. Shihab said: “We are going through an evolution in the market. We are seeing a lot of new bars and menus including the no ABV option. The idea is how to integrate that in an organic way, without having to create a brand new category and what we are doing with this menu. We are using Lyre’s products in replacement for alcoholic products. So essentially we keep the cocktail the same but use zero-proof spirits instead. It is important not to alienate the non-drinkers.”

Over the last year, Shihab has seen see the market adapting a lot more to zero-proof beverages. He added: “The products are getting a lot more visibility, so the consumer is more open to drinking non-alcoholic beverages. We are so happy to get behind that as well.”

Indian plant-based meat leader GoodDot signs Indian Tennis Player Rohan Bopanna as their ambassador

The association will also aim to propagate the message that small changes in lifestyle and food choices can go a long way in making the world a better place.

Rohan Bopanna has been a member of India’s Davis Cup team since 2002 and has a Grand Slam title and four ATP Masters 1000 titles in his long career. The Bangalore-based player is the oldest and the highest-ranked Indian player in Men’s Doubles. The veteran, who is still going strong at 42 years old, has also represented India at the 2012 and 2016 editions of the Olympics. Recently Rohan was a semi-finalist in the 2022 French open doubles.

Brews Wayne (Weizen Bock) is a darker and more malty version of the Weiss beer. It features a lot of melanoidin malt aroma and flavor due to an extended boiling process and the use of dark crystal malts. The beer has a banana and clove aroma and ends on a semi-sweet note with a rich, creamy mouthfeel. It’s a perfect beer for the monsoons, designed to savour slowly, thanks to its richness and 7.5% ABV.

The designer hotel collection will become the world’s first to commit to an ongoing vegetarian-led offering

Independent and dynamic designer hotel collection, Ovolo Hotels announces its latest move in an ongoing pledge to ethical eating, conscious cuisine, and cutting-edge veg, becoming the first hotel brand globally to commit to a vegetarian-led offering, Plant’d across its hotel restaurants, globally.

 

The announcement signifies a further progressive shift for the designer hotel collection ongoing, following the success of its ‘Year of the Veg’ campaign which launched in October 2020, where venues transitioned to a vegetarian only offering for an initial 365 days, serving up vibrant vegetarian and plant-based cuisine. 


“Meat is being removed for a second year in a row at Ovolo Hotels. With a number of our Ovolo venues already serving plant-based cuisine, we have decided to go the full 100%. It’s been a strategic move, but Ovolo prides itself on being an industry leader. We believe that the world changes, therefore we continue to evolve – we want to ensure we are doing our bit to help preserve our environment, promote healthy eating and enhance the image of amazing vegetarian and plant-based dining,” said Ovolo Group’s Founder and CEO, Girish Jhunjhnuwala.

All venues will launch with new menus from launch day.


Inspired by an increasing consumer interest in the many benefits of a plant-based diet, this change reflects Ovolo’s commitment to delivering on its customers' desires, while promoting an ‘eating good to feel good’ mentality. Further demonstrating the hotel’s trailblazing efforts, the new vegetarian offering will extend to in-room dining menus, which have been carefully curated by Ian Curley to ensure an approachable veg-led offering across the group.


Ovolo’s newly appointed Creative Beverage Director, Andrea Gualdi (ex-Maybe Sammy), will lead the drinks offering. The menu will feature seasonal cocktails and wines sourced from some of Australia’s most progressive producers, alongside a strong non-alcoholic offering as part of its new health-conscious direction. 


Of spearheading the new drinks offering, Andrea Gualdi says, “Coming up with healthier, vegetarian-led beverage options has been a creative challenge that our team has really enjoyed. We have access to some incredibly progressive Australian producers, both in the alcoholic and non-alcoholic categories, and we’re proud to represent more of those producers across our new menus, with a strong focus on seasonality and local producers”. 


The Ovolo team have created a ‘Veg Pledge Playbook’ which includes information on the reasons Ovolo has made the switch with their food and beverage offering; what to know before you go veg; tips on defining food and beverage menus; and learnings along the way. Committed to continuously finding ways to further reduce their environmental footprint, this launch comes off the back of several eco-friendly initiatives already implemented by the hotel collection in the past year. These include switching to free-range eggs, opting for a more natural-led wine list, providing refillable water containers, using more planet-friendly paper on the menus and takeaway containers working with suppliers, and Ovolo being an early adopter of removing plastic straws to eliminate plastic.


This also includes the bold move away from single-use bathroom amenity plastics, all OMG Amenities being designed in a sustainable manner, and making use of re-fillable, tamper-free pump bottles which are HDPE recyclable. In addition to this, introducing reusable woven bags for slippers, and the use of biodegradable materials in laundry bags and packaging.

New Delhi, July 2022: MansionHaus, a heritage property turned boutique hotel, is all set to regale guests with its timeless architecture, curated gastronomic journeys and luxury stay at Goa’s most effervescent neighborhood, Anjuna. The private residence turned luxury boutique hotel boasts of its neo-classical interiors paired with iconic Goan architecture and delicately balances the luxuries of a hotel with eco-friendly sustainable sensitivities. The pre-independence era private residence has been transformed into a luxury hospitality property where old-world Portuguese charm blissfully marries contemporary aesthetics. The property is envisaged as a private escape for the conscious traveller providing comforts, privacy and familiarity of a home enriched by a wealth of history, art, culture. world class hospitality to provide an immersive experiential hospitality that has a warm human connection. 

Kezya De Bragança says, “We pledge to offer a true conscious hospitality experience, in harmony with the environment, local cultures, traditions, and the communities that uplift them.” The property was home to Kezya’s paternal grand agnate Marie Antoinette. The Salon Privé previously a ‘Sala’ (room for entertaining visitors) has been named after her and the property layout was retained to exemplify how these spaces interacted for centuries. In restoring the iconic structure, the complex, multi-layered evolution of architecture in Goa and the intricate cultural expressions of Goa have been kept as the leitmotif.

MansionHaus’ nine suites come either with pool access, private pool or jacuzzi and range from 310 – 650 sq. ft.  Each suite has a garden or overlooks the mansion’s main garden. The restoration has been fashioned with weathered wood, porcelain floors, polished marble, distressed surfaces, and muted fabrics accented by eclectic art on rotation from local artists.

Food is local and organic

All fruits and vegetables used at the MansionHaus kitchen are organic and sourced locally. The in-room minibars are stocked with locally produced superfoods, preservative free health snacks and pre/pro-biotic Haus made drinks.


The Angler, an experiential bar and bistro, serves as an energy centre for the mansion, offering brasserie style dining taking you from coffee to cocktails over the course of a typical day. From dining by design to communal, al-fresco, private and in-room dining, guests can enjoy the finest, freshest, locally sourced produce from a continuously evolving menu in the most private setting. 


Other culinary offerings include an in-house culinary lab Cozinha, that features chefs’ tables by both local and international food artisans. 

Commitment to environment

MansionHaus sets the standards for conscious luxury. From building materials to the entire supply chain, the owner Kezya De Bragança has ensured that every decision in the development of MansionHaus is made to minimize environmental impact and maximize commitment to sustainable development. In their efforts, the wood of a 100-year-old ship marooned on the coast of the Arabian Sea has been repurposed to create the Summer Room, the tea is sourced locally, and the glass packaging is recyclable. As a plastic and paper free property, all in room amenities are glass bottled by their very own “HausLab”.

Rooms range from 12,000 to 40,000 rupees per night (£150-£400) with four room categories. MansionHaus is being formally launched this season though it was open for family and friends last year.

In the coming months, White Monkey F&B LLP (the holding company behind DM) will launch its first-ever international outlets in the United States, which is considered one of the biggest markets for smoothies in the world. Founded in 2016 by Samrat Reddy, Drunken Monkey is the only Indian smoothie brand with a pan-country presence.
