Too Hot to Skip: Foo Turns Up the Heat Again With Its Fiery Edit Menu | May 11


FOO is back with its most addictive annual drop - The Fiery Edit 2026, and this year, it’s all about knowing exactly how much heat is just enough. Titled “Dial Up The Heat”, the new edition isn’t about overwhelming spice, it's about rhythm, balance, and that slow, lingering burn that keeps you coming back for more.

At FOO, heat isn’t just about intensity, it’s about control. This year’s menu is designed as a progression: subtle warmth that builds bite after bite, creating a rhythm that keeps diners coming back.

This year’s menu plays with progression: first bite, you’re in… second bite, it builds… third bite, you’re hooked. It’s a carefully dialled journey where flavours unfold in layers, moving from subtle warmth to bold intensity without ever tipping over.

The sushi selection sets the tone with dishes that balance familiarity with heat. The Slow Burn Maki features mock duck, avocado, cucumber, and spicy cheese, rolled with Thai chillies that build gradually before delivering a sharp kick. The Sneaky Heat Roll combines prawns, avocado, and snacky peppers, finished with chilli mayo and teriyaki starting sweet, then turning distinctly fiery.

Dumplings continue this interplay of subtlety and surprise. Sizzle That Stays brings together lotus root, pak choy, and zucchini in a seared dumpling with a slow-building spice, while Steam & Sting features prawns with bird chillies, coriander, and scallions delivering a sharper, more immediate heat. 

The small plates lean into bold, ingredient-driven combinations. Highlights include All About That Charred Edamame, tossed in a fragrant spicy sauce with sesame; Silk Meets Fire, where soft tofu is paired with intense doubanjiang heat and served with mantou; and Crunch With A Kick, golden-fried lotus root tossed in a tomato hot pepper glaze that balances sweetness with spice. Other standouts you’ll definitely want to dig into include Coming In Hot! and Beans Gone Rogue which are bold, addictive picks that bring just the right kind of kick to keep you going back for more.

For those seeking comfort dishes with an edge, A Spicy Hug  combines ancho chilli with beans and carrot in a smoky, wok-tossed rice preparation, while Blue Blaze Noodles feature blue rice noodles with pok choy, snacky peppers, bean sprouts, and house-made chilli sauce served on the side allowing diners to control their level of heat. 

And just when you think you’ve figured it out, the desserts flip the script Cool Down, Maybe is a roasted coconut ice cream with deep, toasty notes, while Soothe It Out offers a smooth Earl Grey ice cream and both designed to mellow the palate while still carrying a subtle warmth.

The cocktail program mirrors the menu’s layered approach, clearly balancing spirit, flavour, and heat. The Sizzling Sip blends tequila with mango jalapeño cordial and pandan soda for a tropical-spicy profile, while Gunpowder Glow combines gin with gunpowder tea cordial, lime, and rose water for a more aromatic heat. Electric Ember uses whiskey with an Italian bitter aperitif, yuzu cordial, and pineapple mogo mogo tea for a smoky-citrus complexity, and Slow Burn Blush features vodka with muskmelon purée, peach, basil, and plum vanilla foam for a softer, fruit-forward finish.

The Fiery Edit 2026 will be available from 11th May to 10th June, 20226; across all FOO restaurants in Mumbai, Bengaluru, Pune, Hyderabad and Ahmedabad inviting diners to turn up the heat, find their threshold, and keep going back for just one more bite.
