Mumbai, October 2022: The Covid lockdown (2020 & beyond..)brought out the hidden chef in a lot of people. While most of us decided to limit our experiments to personal kitchens, one SoBo entrepreneur, owner of Gateway Brewing co., decided to take things further and Pizza Dude came to life in August 2022. Pizza Dude is a delivery kitchen that will transport Mumbaikars to the city of Rome, offering Roman-style pizzas that one can buy “by the slice & create a mix box '' to sample 12 different types that are on offer. Since each variant is a slice measuring 5 inches by 4 inches, a person can easily try 3 variants in one go versus buying a whole regular round pie. Additionally, just like Pizza Romana Dude’s dough is not only slow-fermented but also naturally fermented sourdough! Only flour, water & salt are used.

While most of us are familiar with round pizzas, Pizza Dude offers square pizzas, sold by the slice that are cut from a rectangular piece and baked on a sheet pan. During the lockdown, Navin started experimenting with pizza & other sourdough breads to re-create what he had experienced in Rome in 2019.  After days and months of trials and testing, the madness gave birth to Pizza Dude.  “In 2019, I was in Rome where I was introduced to pizza Romana, which is made from dough that is slowly fermented over 24 hours. Cut to 2020, there was a lockdown and I had plenty of time to experiment with this style of pizza, and now I’m happy to share it with the people of Mumbai.” says Navin. 

Using naturally fermented, pillowy, yet strong sourdough base to hold generous amounts of toppings, the pizza is best enjoyed one slice at a time. This also encourages customers to indulge in several flavours at a time. The menu is designed keeping in mind those with classic and adventurous palettes, with innovation, local and variety being the main drivers of the product.

On the menu, one can try classic flavours such as Cherry Tomato, Basil & Fresh Mozzarella, tomato sauce, dude mozzarella blend topped with roasted cherry tomatoes & fresh buffalo mozzarella, finished with basil, extra virgin olive oil and herbs; Creamed Spinach & Corn, white sauce, dude mozzarella blend topped with creamed spinach & sweet corn kernels and finished with crispy garlic flakes; and Truffled Mushroom, garlic white sauce, dude mozzarella blend topped with pan-roasted mushrooms, finished with caramelized onions, truffle oil and greens. Those who like to explore can try novel toppings such as Eggs Kejriwal, garlic white sauce, dude mozzarella blend topped with scrambled eggs. This finished with spicy coriander chili pesto and chives; Hot Chicken & Ranch, tomato sauce, dude mozzarella blend topped with shredded chicken in ghost pepper hot sauce, finished with onion jam & ranch drizzle; Turkish Chicken Doner, dude mozzarella blend topped with spiced chicken, finished with peppers and garlic yoghurt mayo; and Lamb & Za’atar, dude mozzarella blend topped with za’atar spiced mince lamb, finished with fresh salad and labneh. The tomato sauce is made in-house which complements the soft cheese and crispy, light crust. To finish the meal, the Tiramisu makes for the perfect, sweet ending.

Unlike others, Pizza Dude’s pizzas can be topped after they come out of the oven, and taste great, both hot and cold. The fresh and crisp flavours of each pizza is complemented by the vibrant colours of the fresh produce that is used. With the customary cake-mixing ritual, Novotel & Ibis Bengaluru Outer Ring Road officially kicked off the Christmas and New Year festivities.

Hotels and Restaurants Association of Telangana Demands Industrial Status

Hyderabad, October 2022: Hotel and Restaurant Association of Telangana represented by President Mr. Manish Dayya and Reginald Corbett, General Secretary along with other Executive Committee members of the association met Mr. Sandeep Kumar Sultania, Tourism and Culture Secretary, Government of Telangana, and discussed the concerns faced by the sector and submitted a representation demanding industry status for the hospitality industry. Considering the rapid growth of the tourism industry in Telangana, and the scope for scaling it up further, the committee urged the government to provide all the facilities on par with industries.

Speaking on the occasion, Mr. Manish Dayya, General Manager, Novotel Hyderabad Convention Centre & Hyderabad International Convention Centre said “In light of the State's rapidly expanding tourist industry the association has submitted a representation to the government demanding an ‘Industry Status’ to the hospitality sector. Bonding over cake mixing at DoubleTree by Hilton Agra

Agra,  October, 2022The season of making plum cakes and soaking up nuts, fruits and spices in wine and rum is finally here. The traditional cake mixing ceremony which usually happens a month or two ahead of Christmas, ushers in good tidings and fun for the festive season. DoubleTree by Hilton Agra recently organised their annual cake mixing ceremony based on the cricket T20 theme.

The ceremony was based on the popular T20 Series with all the decoration around that. A team of about 20 chefs, led by Executive Chef Ameet Rane marched in elegantly holding the containers with nuts, plums and mixers making a dramatic entrance to the venue. 

Shyam kumar, General Manager at DoubleTree by Hilton Agra hosted the grand event and the invited guests from Agra and well as the in-house guests. The grand ceremony was followed by Hi Tea. 

The star of the show was the mesmerizing assortment of dry fruits such as cashews, prunes, pistachios, almonds, figs, apricots, raisins, nuts, black current etc. in the most unique T 20 theme. The hotel has also organised live music to add on to the celebrations.

IHG Hotels & Resorts Survey reveals guests’ value personalised hotel experiences

New Delhi, October 2022: A pan – India survey commissioned by IHG Hotels & Resorts as part of the launch of their “Guest How You Guest” global loyalty campaign revealed insightful results, to better understand how consumers like to enjoy their time as a hotel guest.

 

With a total sample size of 5000 respondents including male (52.7%) and female (47.3%) from age groups of 18 – 65, the survey aimed to explore preferences and desires of guests during hotel stays, critical to offering a world-class hospitality experience. It revealed how hotel guests value a more personalised experience that allows them to be totally themselves, something the hotel group hopes to offer to each and every guest.

 

The survey results revealed what guests are looking for in a hotel experience, with the three most popular features of a hotel stay rated as -- 58% of respondents enjoy room services in hotels while 53% of guests are fond of selection of food available at in-house restaurants and the facilities such as pool, sauna stands at 50%. Meanwhile, 40% of respondents enjoy in-room entertainment available in hotels for a satisfactory stay.

 

Further exploring how Indians like to guest in hotels, the research showed that 32 per cent are content walking around a hotel in their beachwear. 22 per cent like to get changed for dinner to look their best, while 19 per cent are comfortable enough slouching in their pajamas and hotel slippers. 17 per cent respondents revealed that not having to cook for themselves or clean up after (15%) are truly key luxuries that enrich the hotel stay experience.

 

A stand-out statistic in the survey was that 93% of guests feel they can completely be themselves while staying at hotels. While 56 per cent feel they are always relaxed during their stay and 34 per cent of respondents feel completely at home during their hotel stays, 12 per cent worry that their kids may misbehave and cause disturbance to other guests.

 

The insightful survey also revealed the popularity of a personalised hotel experience (79%), something IHG Hotels & Resorts are seeking to celebrate with the launch of their ‘Guest How You Guest’ campaign. The global initiative highlights the benefits of unique and personalised guest experiences for members of their newly launched IHG One Rewards programme. The programme, a standout in the hospitality sector, provides industry-leading value and relevant benefits for members to enhance their stays beyond what is already carefully curated for guests.

 

IHG also created a series of ‘hotel guest archetypes’ as part of the research. Amongst these, 31 per cent are “memories-makers”, focusing on creating memorable experiences and touristing around the local area and 23 per cent classed themselves as a “groupie”, most likely to relax and enjoy the company of family and friends. 17 per cent admitted to being “party people”, using the pool by day and going for drinks at night, while 16 per cent were “romance-lovers”, enjoying luxurious, romantic trips with their partners, and finally, 10 per cent are “explorers”, going off the beaten track to discover new experiences.

Novotel Hyderabad Convention Centre hosts 'Cake Mixing Ceremony' to usher in the festival season

Hyderabad, October 2022: Novotel Hyderabad Convention Centre, hosted its annual cake-mixing & grape stomping brunch at the Hotel. The event was curated to welcome the advent of Christmas and New Year and usher in a season of good tidings and happiness.  The grape stomping began with enthusiasm, with all guests soaking their feet in the barrels, set against the magnificent outdoor space.   The environment was charged with pre-Christmas cheers and songs playing in the background with lovely weather & an overcast sky. 

Novotel Hyderabad Convention Centre team escorted guests to the mixing table, beautifully arranged with Black currant, Golden Apricot, Rum Soaked Figs, Drunk Resins, Dates, Candied Orange Peel, Candied Ginger, Dry Cherries, etc. The invitees donned aprons, gloves, and caps, and armed themselves with bottles of liquor, ready to tackle the colorful mounds of dry fruits, nuts, and spices.  Everybody enjoyed the lovely afternoon filled with great cheer and festive spirit. As a tradition chefs at NHCC will soak this mixture for over a month and then make some of the best Christmas and New Year Cakes for the season.

COSMETIC MARKET IN INDIA

The beauty market in India is inching to breach the pre-pandemic levels in 2022. According to recent research by EUROMONITOR INTERNATIONAL, from April 2021 to April 2022 local market registered a strong digital push, with e-commerce beauty sales growing at 15%. 2022 sees consumers returning to physical stores, especially to prestige and premium beauty stores. 

India is estimated to be the 6th largest skincare market in the world, but it is still dominated by mass and masstige, so the growth rates of prestige beauty reveal that local consumers are looking for something different. They are experimenting with new products and treatments, they are well-informed and more attuned to international brands, so they are looking for more selective products. 

Euromonitor registered an increase of 17.2% in the prestige beauty market in India during 2021. Premium skincare was the strongest category ($183m, +13% when compared to pre-pandemic data), while make-up reached a value of $94m (+8,5% when compared to 2019). Fragrances saw the greatest growth in 2021, rising 22.9% to $148m, but it remained below 2019 data. In the next months, prestige beauty in India is therefore expected to pass through further changes and new growth.
