Lexicon Institute of Hotel Management hosted a Fruit Mixing Event

Pune November 2022: Lexicon Institute of Hotel Management organised a Fruit Mixing Event, also known as the Cake Mixing Event. The institute celebrated the occasion with all the members of the Lexicon IHM family.

Traditionally, the purpose of the occasion was to celebrate the onset of the festive season with everyone. Fruits, nuts and spices which were used to make festive goodies were mixed with local alcohol for preservation and flavor. Every family brought in their ingredients and after the mixing they were shared equally amongst all households. This assured that the poorest of poor in the community too had their share of fruits and spices to celebrate. This age-old Christmas tradition also marks the arrival of the harvest season.

Mr. Nasir Shaikh, Group CEO, The Lexicon Group of Institutes, MultiFit and EduCrack, also joined the students and the hospitality veterans to celebrate the occasion. While talking about the event Mr. Nasir said, “We aim to create an environment full of exposure and industrial knowledge which will help the students to become the professionals of tomorrow and grow better in the hospitality world.”

Signing of Wyndham Garden Sonipat Murthal

Sonipat, November 2022 – M/S Rajdhani Realcon Private Limited, a real estate and hotel development company based out of Delhi, today announced the signing of a franchise agreement with Wyndham Hotels & Resorts for a new hotel development in Sonipat, Haryana under the Wyndham Garden brand.

WELCOMING HORIZONS – THE ORIENTATION PROGRAM @BCIHMCT

Banarsidas Chandiwala Institute of Hotel Management and Catering Technology (BCIHMCT), New Delhi organized the Orientation Programme for the First Year students, (Batch 2022 -2026).

The institute welcomed the radiant and energetic bunch of students with host of activities including – Introductory Session, Name Game Activity, Communication Skills Enhancement session by Peeyush Srivastav (HOD, F&B, BCIHMCT), Session by the Training and Placement DepartmentBY Dr. Manish Malhotra, Mr. Sidharth srivastav and Mr. Nikhil Sharma, Assistant Professors, BCIHMCT, Speeches by Prof. R K Bhandari, Principal, BCIHMCT, Mr. Ranojit Kundu (HOD, Patissiere) among many other activities.

The main purpose of the Orientation Programme was to make students aware about the college, the educational facilities available to them and to learn about the faculty members.

Each day, the orientation programme commenced with a warm welcome to all the students of the First years and gave ample opportunities to students to showcase their skills and talents in a variety of ways. It is a first step for a college student to prepare himself/herself to embark on their future journey.

In one of the sessions of art and craft activity, the students were asked to make handicrafts and paintings with a theme in their mind in which we discovered many talented artists among the first year students.

In another session on communication skills, Mr Peeyush Srivastav, faculty, gave important inputs on enhancing and improving vocabulary through developing a reading habit, to read newspapers, use dictionary, play word games and its usage in conversation. He explained that the primary focus of the students should be to be observant, inquisitive and to have a recall value. The communication skills require teamwork which is a combination of 3C's - Collaboration, Cooperation and Coordination. It helps us to create a vision which inspires us to imagine and become innovative. It is one of our important life skills which would be helpful in our coming future and our life is totally meaningless without it.


The Session on Career opportunities by Mr. Ranojit Kundu was invigorating and exhaustive with a light sense of humour. He motivated the students to remain focused on the opportunities which the hospitality sector brings along. Only the students with dedication, sincerity and discipline will be able to harness the true potential of this professional course, he explained. The session on Computer Department was taken by Mr. Mohan Jain, Assistant Professor wherein explained the various facilities provided by the institute and the session on Library was taken by our experienced and dedicated Librarian, Mr Mohinder Pal Singh. He explained the importance of books in the modern times and how this facility can be utilized by the students during the entire year.

Students also watched a movie “The Hundred-Foot Journey”, which was about a chef and his family proving his passion towards Indian cuisine and his battle with the orthodox French cuisine, in terms of culture, ingredients and taste. This movie portrayed the chefs’ love and passion for cooking. The programme came to an end with a question- answer session in which the students shared their doubts and queries.

Ms. Smriti Saneja, alumni , BCIHMCT and now an Image Consultant, took a session on Professional Grooming. Students understood the importance of grooming in their profession. She addressed all doubts and provided them with guidance on classes, grooming and communication skills. The activity ended with a group photograph followed by a huge round of applause. The day ended with students walking away carrying many value points and lessons of life which would benefit them in their professional journey.

Class Coordinators Ms Divya Thakur and Mr. Durga Prasad Shukla, Assistant Professors, handled the entire Orientation program effectively and got a positive response from all the students.

 

THE CURTAIN RAISES FOR KERALA LITERATURE FESTIVAL 2023 

One of Asia’s largest literature festivals, the Kerala Literature Festival (KLF) is now open for delegate registration. The 4-day festival will be held at Kozhikode beach from 12th to 15th January 2023. The festival is promoted by DC Kizhakemuri Foundation and supported by the Government of Kerala. Renowned Poet & Critic, K. Sachidanandan is the Festival Director.

KLF is part of the tourist calendar of the region with participation from across India and from other parts of the world.  KLF is expected to have the world’s best writers and speakers over the 4-day span of the event.  Kozhikode, where Vasco da Gama landed in 1498 was known as the spice capital of the world since ancient times. SHRI RAJINDERA KUMAR MEMORIAL SCHOLARSHIP ANNOUNCED By BCIHMCT

During the valedictory function of the 21st Chandiwala Hospitality Ensemble, which was held at the Banarsidas Chandiwala Institute of Hotel Management and Catering Technology, New Delhi (Oct 19-Oct 21, 2022), it was an honor for BCIHMCT to announce SHRI RAJINDERA KUMAR MEMORIAL SCHOLARSHIP for the budding hoteliers.

This scholarship aims to provide financial support to one of the deserving meritorious and underprivileged students every year. This Memorial Scholarship Fund will offer renewable, four-year scholarships to students with financial needs who display academic achievement.

Ms Prisha Walecha, (Batch 2021 – 2025) became the first recipient of Shri Rajindera Kumar Memorial Scholarship. This award was given by Mrs Komal Kumar (wife of Late Shri Rajindera Kumar) and Mr Shivendera Kumar (son of Late Shri Rajindera Kumar) Director, The Ambassador, New Delhi. This award was announced by Mrs Komal Kumar (wife of Late Shri Rajindera Kumar) and Mr Shivendera Kumar (son of Late Shri Rajindera Kumar) Director, The Ambassador, New Delhi.

Mr Kumar was a Guide and Mentor to the entire hospitality industry and we used to get tremendous support from him always. We don’t see many philanthropic acts in our industry nowadays, whereas during this pandemic the need for such noble initiative has arisen more. Mumbai, October 2022: The Covid lockdown (2020 & beyond..)brought out the hidden chef in a lot of people. While most of us decided to limit our experiments to personal kitchens, one SoBo entrepreneur, owner of Gateway Brewing co., decided to take things further and Pizza Dude came to life in August 2022. Pizza Dude is a delivery kitchen that will transport Mumbaikars to the city of Rome, offering Roman-style pizzas that one can buy “by the slice & create a mix box '' to sample 12 different types that are on offer. Since each variant is a slice measuring 5 inches by 4 inches, a person can easily try 3 variants in one go versus buying a whole regular round pie. Additionally, just like Pizza Romana Dude’s dough is not only slow-fermented but also naturally fermented sourdough! Only flour, water & salt are used.

While most of us are familiar with round pizzas, Pizza Dude offers square pizzas, sold by the slice that are cut from a rectangular piece and baked on a sheet pan. During the lockdown, Navin started experimenting with pizza & other sourdough breads to re-create what he had experienced in Rome in 2019.  After days and months of trials and testing, the madness gave birth to Pizza Dude.  “In 2019, I was in Rome where I was introduced to pizza Romana, which is made from dough that is slowly fermented over 24 hours. Cut to 2020, there was a lockdown and I had plenty of time to experiment with this style of pizza, and now I’m happy to share it with the people of Mumbai.” says Navin. 

Using naturally fermented, pillowy, yet strong sourdough base to hold generous amounts of toppings, the pizza is best enjoyed one slice at a time. This also encourages customers to indulge in several flavours at a time. The menu is designed keeping in mind those with classic and adventurous palettes, with innovation, local and variety being the main drivers of the product.

On the menu, one can try classic flavours such as Cherry Tomato, Basil & Fresh Mozzarella, tomato sauce, dude mozzarella blend topped with roasted cherry tomatoes & fresh buffalo mozzarella, finished with basil, extra virgin olive oil and herbs; Creamed Spinach & Corn, white sauce, dude mozzarella blend topped with creamed spinach & sweet corn kernels and finished with crispy garlic flakes; and Truffled Mushroom, garlic white sauce, dude mozzarella blend topped with pan-roasted mushrooms, finished with caramelized onions, truffle oil and greens. Those who like to explore can try novel toppings such as Eggs Kejriwal, garlic white sauce, dude mozzarella blend topped with scrambled eggs. This finished with spicy coriander chili pesto and chives; Hot Chicken & Ranch, tomato sauce, dude mozzarella blend topped with shredded chicken in ghost pepper hot sauce, finished with onion jam & ranch drizzle; Turkish Chicken Doner, dude mozzarella blend topped with spiced chicken, finished with peppers and garlic yoghurt mayo; and Lamb & Za’atar, dude mozzarella blend topped with za’atar spiced mince lamb, finished with fresh salad and labneh. NEXA Journeys presents Highway Dreams will be hosted by renowned food traveller, show host and singer, Rakesh Raghunathan. An avid traveller himself, with a passion to research, document and discover heirloom recipes, with quintessential dining destinations native to the region, Rakesh will be seen exploring the region, while interacting with millennials and Gen-Z, as he drives through some known and some unknown highways in the new age NEXA Baleno by Maruti Suzuki.

Commencing this explorative journey from Chennai, Rakesh drives over to the “Manchester of South India” – Coimbatore, exploring the GeeDee Car Museum with a vintage car enthusiast along the way. The drive in Coimbatore also witnesses him zipping through on the racetrack. Moving on to his next adventure, driving through the Nilgiris, we enter the “Queen of Hill Stations” – Ooty, where the host takes us on an immersive and cerebral rejuvenation at MindEscapes®, before heading out to explore one of the largest moving telescopes - The Ooty Radio Telescope, riding an electrical cycle and ending the day with dinner at Canterbury Bar, a British style vintage hotspot.

With the customary cake-mixing ritual, Novotel & Ibis Bengaluru Outer Ring Road officially kicked off the Christmas and New Year festivities.

 

During the occasion, guests, hotel staff, and various corporate professionals came together to mix the ingredients—massive types of candied fruits, assorted nuts, blended spices, and fruit peels—which were all soaked in rum, wine, and other alcoholic beverages. It was orchestrated under the watchful eyes of newly appointed General Manager – Mr. Sandeep Johri and Executive Chef Karan Kohli.

 

“The heady blend of exotic ingredients will now be given at least a month to settle. The flavor improves as the components are steeped in a sufficient amount of liquor. This combination will be mixed with flour to make the dough for some of the best Christmas Cakes, Carrot Cakes, Dundee Cakes, Stolen bread, and other seasonal delights.” Chef Karan said.

Hotels and Restaurants Association of Telangana Demands Industrial Status

Hyderabad, October 2022: Hotel and Restaurant Association of Telangana represented by President Mr. Manish Dayya and Reginald Corbett, General Secretary along with other Executive Committee members of the association met Mr. Sandeep Kumar Sultania, Tourism and Culture Secretary, Government of Telangana, and discussed the concerns faced by the sector and submitted a representation demanding industry status for the hospitality industry. Considering the rapid growth of the tourism industry in Telangana, and the scope for scaling it up further, the committee urged the government to provide all the facilities on par with industries.

Speaking on the occasion, Mr. Manish Dayya, General Manager, Novotel Hyderabad Convention Centre & Hyderabad International Convention Centre said “In light of the State's rapidly expanding tourist industry the association has submitted a representation to the government demanding an ‘Industry Status’ to the hospitality sector. This sector is a major contributor to employment generation and GSDP, besides playing a pivotal role in promoting tourism in the state. ‘Industry status’ in the hospitality sector will go a long way in encouraging the operators to propel tourism in the state, as it will be easier to do business. We expect a positive response from the authorities on the submitted proposal and look forward to a speedy output on the same.”

Bonding over cake mixing at DoubleTree by Hilton Agra

Agra,  October, 2022The season of making plum cakes and soaking up nuts, fruits and spices in wine and rum is finally here. The traditional cake mixing ceremony which usually happens a month or two ahead of Christmas, ushers in good tidings and fun for the festive season. DoubleTree by Hilton Agra recently organised their annual cake mixing ceremony based on the cricket T20 theme.

The ceremony was based on the popular T20 Series with all the decoration around that. A team of about 20 chefs, led by Executive Chef Ameet Rane marched in elegantly holding the containers with nuts, plums and mixers making a dramatic entrance to the venue. 

Shyam kumar, General Manager at DoubleTree by Hilton Agra hosted the grand event and the invited guests from Agra and well as the in-house guests. The grand ceremony was followed by Hi Tea. 

The star of the show was the mesmerizing assortment of dry fruits such as cashews, prunes, pistachios, almonds, figs, apricots, raisins, nuts, black current etc. in the most unique T 20 theme. The hotel has also organised live music to add on to the celebrations. 

The event also marked the announcement of the “Far East Soiree” the exclusive Asian food festival at the hotel’s All day dining restaurant, North 27.
