This April, The Hood by Olive introduces "Flavour Pop ft. Kochi," an all-day culinary residency featuring Chef Abhilash. Running until 3rd May, this pop-up series transforms the space into a passage across Kerala, spanning from the coastal flavors of Kasaragod in the north to the sun-soaked heritage kitchens of the south.
Chef Abhilash began his culinary journey in Kozhikode, immersing himself in the traditions of Mappila cuisine. Now based in Bangalore, he brings his signature fusion of global inspiration and classical techniques to this exclusive collaboration.
The menu is a thoughtful collection of traditions and memories shaped by family and time-honoured recipes. Guests can start their journey in North Kerala with Jackfruit Sukka and String Hoppers, a preparation of tender young jackfruit and traditional Kasaragod spices. The exploration continues into Central Kerala with a classic Duck Roast in spiced, roasted coconut gravy, paired with Neer Pathiri, or the rustic, toddy-shop-inspired Kozhuva Fry, crisp-fried anchovies served over creamy tapioca mash.
For the main course, the menu highlights the robust coastal staples of Calicut, featuring a Malabar Fish Curry simmered with kokum and served with lacy appams. Also featured is the Angamaly Mango Curry, a Syrian Christian-style dish that balances ripe mangoes with a mild, tangy coconut base. The experience concludes with a South Kerala classic: Vattayappam, a steamed rice-and-coconut cake finished with sun-dried Nendran banana and a warm coconut-jaggery glaze.
