Four Seasons Hotel Milano marks the arrival of spring with the reopening of its garden in the heart of the city. The Spring Merenda returns as a seasonal offering to be enjoyed in the outdoor setting.

Stilla Bar introduces the Spring Merenda as a convivial experience served in the hotel’s garden, located in Milan’s Fashion District.

Available from late April through June, every day from 12:00 noon to 7:00 pm, the Spring Merenda is an à la carte offering, allowing guests to choose from a selection of sweet and savoury options. The experience may also be paired with dishes and beverages from Stilla’s all-day menu.

The highlights are the ice cream cups, conceived by Pastry Chef Stefano Trovisi as signature desserts. Options range from the freshness of Cream and Strawberries, featuring strawberry sorbet, cream and Madagascar vanilla, to the tropical notes of the Exotic version with mango, passion fruit and coconut cream (vegan). More intense flavours include Black Forest, made with 100% Sur de Lago chocolate sorbet, mascarpone chantilly and black cherries, while Peanuts and Caramel combines salted peanut sorbet, toffee and caramelised hazelnuts in a bold‑flavoured vegan creation.

Alongside the gelato creations, the dessert menu includes a selection of seasonal fruits, red berries and an assortment of filled cannoli with cream, pistachio and chocolate flavours, a tribute to the tradition of Italian pastry-making.

Savoury options are also available, including the Ham and Cheese Toast, Regina Margherita focaccia and a tiered stand featuring a selection of sweet and savoury snacks, designed for sharing.

To complete the experience, the Merenda drink menu features light, low alcohol cocktails including Happy Julep, Raspberry Cloud and Strawberry Fields, alongside a selection of non-alcoholic mocktails such as Sprizzetto and Secret Garden. HRAWI flags sharp LPG price hike impact on hospitality sector

Association warns of rising operational costs and pressure on margins across the hospitality sector.

The hospitality industry is facing mounting cost pressures following consecutive hikes in commercial LPG prices. Industry bodies warn that rising fuel costs are significantly impacting operations, margins and overall sustainability.

Industry response

“The latest increase of Rs.993/- per 19-kg commercial LPG cylinder, coming immediately after hikes of Rs.195.50/- in April and Rs.144/- in March, has dealt a severe blow to the hospitality industry. With commercial LPG prices now having risen by a staggering Rs.1,332.50/- within just three revisions, the sector is facing an unprecedented escalation in operating costs at a time when businesses are already struggling with supply disruptions, reduced operational capacity and weakened cash flows. For an industry where energy costs form a major chunk of operational expenditure, this is nothing short of catastrophic. Hotels and restaurants are among the largest consumers of commercial LPG and this sharp increase will disproportionately impact the hospitality sector, particularly small and medium establishments, caterers and businesses dependent on large scale food production. Many establishments are already operating with curtailed hours, limited menus and alternative cooking arrangements due to inconsistent supply and rising fuel costs. This latest revision will further strain margins and make operations increasingly unsustainable. Many have already shut down temporarily; this latest hike will accelerate closures and job losses. The impact extends beyond individual businesses. Rising fuel costs inevitably affect employment, food pricing, events and banqueting operations, tourism linked services and the broader supply chain connected to hospitality. Due to the recent rise in LPG prices, a 10 to15 per cent hike in menu prices is imminent. But even that may not be enough to absorb the impact. We urge the Government to urgently intervene, roll back this hike and stabilise LPG prices to give the sector some breathing space. Without immediate relief, the hospitality industry, a key employment generator, faces an existential crisis,” says Pradeep Shetty, Spokesperson, Hotel And Restaurant Association (Western India) (HRAWI) & VP, Federation of Hotel & Restaurant Associations of India.

Kimpton Ashbel New York – Park Avenue opens in Historic Midtown Manhattan Landmark

A townhouse-inspired retreat introduces residential design, gathering spaces and a new neighborhood café in Midtown Manhattan

NEW YORK - April , 2026 – Kimpton Ashbel New York - Park Avenue, a boutique luxury hotel in Midtown Manhattan and part of IHG Hotels & Resorts’ luxury and lifestyle portfolio, is now open at 70 Park Avenue, welcoming guests to a reimagined Beaux-Arts landmark along one of Manhattan’s most storied avenues. Just steps from Grand Central Terminal and Bryant Park, the hotel brings new life to the historic building originally constructed in 1928 as the Doral Park Avenue Hotel, introducing a residential approach to hospitality inspired by the character and charm of a classic Manhattan townhouse.

The newly opened Park Avenue hotel features 205 guestrooms, including 14 family-friendly connecting rooms, each designed with tailored interiors, soft palettes and generous proportions that create a calm and comfortable place to unwind after a day in the heart of New York City.

Sofia L. Vandaele, Regional Director of Operations for Luxury & Lifestyle New York, IHG Hotels & Resorts said: “Kimpton Ashbel is the kind of hotel that feels like a secret key, a personal enclave for those who know where to look. Our intention is for guests to feel as though they are stepping into the home of a stylish New Yorker. An elegant Manhattan socialite and a warm and inviting host.”

Designed to feel more like a private home than a traditional hotel, the experience replaces a conventional lobby with interconnected residential‑style spaces, including a foyer, living room and family room framed by preserved architectural details that encourage guests to linger, gather or work throughout the day. Oversized wood portals frame original architectural columns and windows, linking each space while preserving the building’s historic character.

Sofia adds: “Kimpton Ashbel is a haven for travelers who view luxury not by extravagance, but by the comfort of belonging, the beauty of serenity and the rare feeling of knowing the city before smartphones. Our location is special, for the city, our guests and Kimpton. It was here that Kimpton was first introduced in New York City. Today, still surrounded by storied museums, libraries and homes, we return to offer a timeless hideaway for work, wandering, connection and all the moments in between. This is a place where guests can unwind with a laptop and coffee, gather with friends, or retreat to their room to relax and recharge.”

A DASH OF THE UNEXPECTED

Every Kimpton creates sophisticated spaces that spark refreshingly unscripted moments, from the history, creators, locale, community and people, and Kimpton Ashbel New York-Park Avenue is no exception. Since 1928, 70 Park Avenue has offered a unique perspective on New York City, anchoring the hotel within one of Midtown Manhattan’s most storied corridors. Originally built during the Beaux-Arts architectural movement, the hotel showcases a commitment to proportion, grace, craftsmanship and enduring elegance, evident in its limestone façade and soft, natural light throughout the interiors.

As fate would have it, after 22 years, 70 Park Avenue has returned to Kimpton, now transformed with a revived outlook to create authentic community and memorable moments, with a quintessentially Kimpton wink of curiosity around every corner. Warm woods, soft palettes and curated gold accents are layered with playful flushes of color and eclectic artwork through design concepts led by Busta Studio. Furnishings are custom designed for the hotel, combining refined metal accents with organic textures to give each space a distinct sense of character.

Kimpton Ashbel’s beautifully restored original limestone-clad façade anchors the hotel in its architectural past, while the interiors introduce a more intimate and residential flow. Upon entering, the ground floor unfolds a series of residential spaces; a foyer, living room and family room, seamlessly linked by oversized wood portals that incorporate preserved architectural columns, original steps and historic windows – creating a natural transition between past and present.

At the heart of the hotel, Kimpton Ashbel’s living room serves as a welcoming gathering space, a floating open-space banquette, and a library. Just beyond, Park & Bel, the hotel’s café concept, brings the energy of Park Avenue inside, offering a natural extension of the living room where guests can gather, work remotely or recharge throughout the day. A curated art program from Soho Art Gallery brings personality, featuring commissioned original mixed-media art pieces, while a collection of Assouline and Taschen books enriches the space, reinforcing the hotel’s sense of refined residential living.

LOCAL HOT SPOTS

Complementing the Kimpton Ashbel experience is Park & Bel, serving as both a neighborhood café and a social gathering place, positioned to become a go-to spot along Park Avenue where guests can purchase expertly brewed coffee, reconnect with friends, or recharge in a cozy, thoughtfully appointed setting.

The menu transitions from artisanal baked goods, seasonal fruit and hearty sandwiches in the morning to a selection of small plates designed for evening enjoyment, offering a relaxed and social complement to the space during later hours. Additionally, Kimpton Ashbel also offers guests a curated bar cart featuring à la carte premium cocktails, craft beer and fine wine, adding a sense of occasion to every stay.

Rhino & River Wildlife Retreat & Spa, a boutique luxury sanctuary set between the Brahmaputra River and Pobitora Wildlife Sanctuary in Assam, has been inducted into the prestigious Small Luxury Hotels of the World™ (SLH) collection, marking a significant milestone for both the property and India’s evolving boutique hospitality landscape.

This inclusion places Rhino & River among over 700 carefully curated hotels across 100 countries, recognised globally for their distinctive character, intimate scale, and deeply authentic experiences. For a wildlife retreat in Northeast India, the recognition underscores not only the uniqueness of its offering but also its ability to stand alongside some of the world’s most exceptional independent hotels.

Located in Mayang, a region known for its ecological richness and home to the highest density of the endangered one-horned rhinoceros, Rhino & River offers an immersive, place-led experience rooted in nature, culture, and conscious luxury. Designed as a quiet dialogue with its surroundings, the retreat invites guests to slow down and reconnect with the landscape.

Commenting on the inclusion, Mark Wong, Senior Vice President – Asia Pacific, Small Luxury Hotels of the World™, said, “Rhino & River Wildlife Retreat & Spa is rooted in a place of genuine ecological significance, built by people who deeply care about conservation and sustainability, offering an experience that cannot be replicated anywhere else. Pobitora has the highest density of one-horned rhinoceroses on the planet. When a property sits in a landscape that is rare and matches it with the quality and intimacy that we seek from our member hotels, welcoming it is straightforward.”

Vikas Agarwal, MD & CEO, SM Developers, added, “Joining the Small Luxury Hotels of the World is a proud milestone for Rhino and River Wildlife Retreat & Spa, and a validation of our belief that Assam’s natural splendour deserves a world-class stage. Built in partnership with JDB Group and Assam Tourism, this property was conceived as a tribute to the region’s heritage and the state’s magnificent flora & fauna — and today that vision is recognised on a global platform.

Rana Daggubati’s Loca Loka Tequila wins Gold and Silver at international awards

Loca Loka Tequila received Gold for its Reposado and Silver for its Blanco at the 2026 London Spirits Competition, one of the industry’s respected jury-led evaluations. The awards affirm the brand’s commitment to quality and craftsmanship less than two years after its international debut.

Competition evaluation process

The London Spirits Competition follows a blind-tasting process conducted by industry experts, master distillers, spirits buyers, and sommeliers, who assess entries based on liquid quality, production integrity, and category standards. Winners are selected through consensus scoring across multiple rounds, providing a measure of technical quality and taste profile.

Leadership perspective

“Credibility in the spirits industry is earned bottle by bottle, but validation from a jury of this caliber accelerates trust at retail and on-trade globally,” said Rajiv Ghumman, Chief Operating Officer, Loca Loka. “The London Spirits Competition’s blind-tasting methodology strips away marketing noise and brand equity and judges evaluate purely on what’s in the glass. Our Gold for Reposado and Silver for Blanco signal that when measured against established heritage brands and craft competitors alike, Loca Loka holds its own on product efficacy. This matters deeply as we scale distribution across Europe, Asia-Pacific, and North America, where buyers and bartenders need proof points beyond storytelling.”

Loca Loka is a joint venture co-founded by Rana Daggubati, Anirudh Ravichander and Harsha Vadlamudi. Since its 2024 U.S. launch, the brand has expanded into India, Singapore, the Philippines, and Indonesia, with structured entries underway in the UK, UAE, Australia, and Europe throughout 2026.

How upcycled ingredients are transforming sustainability in hospitality kitchens

From food waste to culinary innovation, hotels and restaurants rethink sourcing, usage and efficiency.
The hospitality industry is undergoing a significant shift toward sustainability, with kitchens across hotels and restaurants rethinking how ingredients are sourced, used, and discarded. One of the most impactful trends driving thi change is the rise of upcycled ingredients—transforming kitchen waste into innovative, high-value culinary creations. What was once overlooked or discarded is now being reimagined as a resource for creativity, efficiency, and responsible dining.

Food waste has long been a challenge in the hospitality sector, with large volumes generated during preparation, service, and storage. From vegetable peels and fruit pulp to stale bread and meat trimmings, a significant portion of ingredients often goes unused.

Today, chefs are shifting their perspective—viewing these by-products not as waste, but as an opportunity. Upcycling encourages a more mindful approach to cooking, where every ingredient is utilized to its fullest potential. This not only reduces waste but also supports a more sustainable and cost-effective kitchen operation.

The art of upcycling ingredients

Upcycling in the culinary world is both a science and an art. It involves transforming surplus or leftover ingredients into dishes that are not only edible but also appealing and innovative.

Vegetable scraps, for instance, can be turned into stocks, purees, or crispy garnishes. Fruit peels can be used in syrups, jams, and cocktail infusions, adding depth and complexity to flavors. Even seemingly insignificant elements like herb stems or cheese rinds can enhance sauces and broths.

This creative use of ingredients allows chefs to push boundaries while reducing their environmental footprint.

From scraps to signature dishes

Many restaurants are now incorporating upcycled elements into their menus as signature offerings. Dishes such as carrot-top pesto, watermelon rind curry, or bread-based desserts are gaining popularity for their uniqueness and sustainability.

In bakeries and pastry kitchens, stale bread is transformed into croutons, breadcrumbs, or classic puddings, while overripe fruits are used in compotes, cakes, and preserves. Coffee grounds are being repurposed for flavor infusions in desserts or spice rubs, showcasing how innovation can elevate even the simplest ingredients.

These dishes not only minimize waste but also offer guests a fresh and memorable dining experience.

Operational benefits for hotels and restaurants

Beyond creativity, upcycling offers tangible operational advantages. By maximizing ingredient utilization, restaurants can significantly reduce food costs and improve efficiency.

Hotels, particularly those with large buffet operations, are increasingly adopting structured waste management systems. Surplus cooked food can be repurposed into soups, fillings, or staff meals, while unused ingredients are tracked and redirected into new preparations.

Technology is also playing a role, with food waste tracking systems helping kitchens analyze patterns and identify opportunities for reduction. This data-driven approach ensures that sustainability efforts are both measurable and scalable.

Meeting the expectations of conscious diners

Today’s diners are more informed and environmentally aware than ever before. They are not only interested in what they eat but also in how it is prepared and its impact on the planet.

Menus that highlight upcycled ingredients resonate strongly with this audience. Terms like “zero-waste,” “sustainably sourced,” and “upcycled” add value and create a compelling narrative. Diners appreciate transparency and are more likely to support brands that align with their values.

This shift in consumer behavior is encouraging restaurants to embrace sustainability as a core part of their identity.

Balancing creativity with food safety

While upcycling offers numerous benefits, it requires careful execution. Food safety and hygiene remain critical, and all reused ingredients must meet strict quality standards.

Proper storage, labeling, and timely usage are essential to ensure that upcycled components are safe and fresh. Kitchen teams must be trained to identify usable by-products and incorporate them effectively without compromising taste or presentation.

Maintaining this balance is key to successfully integrating upcycling into daily operations.

The future of upcycled menus

The future of sustainable dining is closely tied to the concept of circular kitchens, where waste is minimized, and resources are continuously reused. Upcycled ingredients are set to play a central role in this transformation.

As awareness grows and technology advances, more restaurants and hotels will adopt structured upcycling practices. This will not only reduce environmental impact but also redefine how value is created in the kitchen.

Upcycled ingredients represent a powerful shift in how the hospitality industry approaches sustainability. By turning kitchen waste into gourmet innovations, chefs are redefining creativity, efficiency, and responsibility.

In a competitive and ever-evolving market, the ability to innovate while minimizing waste is a significant advantage. Upcycling is not just a trend—it is a necessity for the future of dining.

As hotels and restaurants continue to embrace this approach, they are not only enhancing their menus but also contributing to a more sustainable and responsible food ecosystem.

The LaLiT Suri Hospitality Group Partners with Sofiya NGO to Advance Inclusive Skilling and Employment for Nation Building

New Delhi, India |  May 2026 :In a significant step towards nation building through inclusive economic participation, The LaLiT Suri Hospitality Group, in partnership with Sofiya NGO and the Keshav Suri Foundation, has launched a transformative skilling and employment initiative aimed at creating a more equitable and employable workforce.

Rooted in the belief that India’s growth story must be inclusive, the program is designed to equip Persons with Disabilities (PwDs) and individuals from economically marginalized communities with industry-relevant skills, enabling their integration into the formal workforce. The initiative directly contributes to building a skilled talent pipeline while unlocking the untapped potential of communities often excluded from mainstream employment.

As part of Sofiya NGO’s flagship disability inclusion efforts, the programme bridges the critical gap between skilling and employability by providing immersive, hands-on training within live hotel environments. Interns were strategically placed across key operational departments—including Front Office, Housekeeping, Linen & Tailoring, Bakery, Food & Beverage Production, and In-Room Dining—based on their individual interests, capabilities, and comfort levels, ensuring both dignity and effectiveness in learning.

Beyond technical training, the program places a strong emphasis on holistic development. Participants demonstrated marked growth in confidence, independence, and self-reliance, emerging as job-ready professionals equipped to contribute meaningfully to the hospitality sector. The initiative underscores a powerful truth: when opportunity is aligned with ability and supported by the right ecosystem, it not only transforms individual lives but also strengthens the nation’s human capital.

The success of this initiative is anchored in strong institutional collaboration. The LaLiT team facilitated foundational training and behavioural readiness at the centre of Sofiya NGO in Mustafabad along with the Keshav Suri Foundation which has enabled mobility support and advocacy. The team provided structured mentorship, real-time exposure, and inclusive workplace practices creating a robust, end-to-end skilling and employment pathway.

Encouragingly, the programme has opened avenues for long-term employment, with strong recommendations to transition successful interns into permanent roles. At the same time, it has highlighted key areas for systemic improvement, including enhanced accessibility infrastructure, fully inclusive facilities, and strengthened transportation support—critical enablers for scaling such initiatives across India.

Speaking on the initiative, Keshav Suri said: “This initiative reflects our belief that inclusion must translate into tangible action. Our vision and commitment are to ensure that no community is left behind. When individuals are provided with the right skills, support, and opportunities, they do not just transform their own lives—they contribute meaningfully to the nation’s progress.”

This program stands today as a scalable and replicable model for inclusive workforce development in corporate India. It reaffirms that true nation building lies in empowering every individual with the skills, dignity, and opportunity to participate in and contribute to India’s growth story.
