KOH SAMUI, Thailand (June 7, 2021) – A Taiwanese national with 15 years of hospitality experience in Asia, the Middle East and Europe has been named Meliá Koh Samui’s director of food and beverage.

Ting Yueh Hu (Yolande) has joined the 159-room and 41-suite beachfront resort on Koh Samui’s north-east coast in the Gulf of Thailand, with ambitions to work in tandem with award-winning executive chef Azizskandar Awang to establish the island’s leading fine dining restaurant.

Before joining Meliá Koh Samui, Hu was executive assistant manager at Sokha Phnom Penh Hotel & Residence in Cambodia and F&B director at both Conrad Koh Samui and Anantara Lawana Koh Samui Resort.

Previously, she was assistant F&B director at Jumeirah Himalayas Hotel Shanghai and Shangri-La Hotel Fuzhou, restaurant manager at Madinat Jumeirah’s Al Muna, Honyaki and Zheng He restaurants, assistant restaurant manager at InterContinental Doha and head waitress at Marriott Forest of Arden Hotel & Country Club in the United Kingdom.

After studying a Bachelor of Applied Science of Living at Taiwan’s Chinese Culture University, she completed a post-graduate diploma in hospitality with Switzerland’s Glion Institute of Higher Education and a certificate in hotel revenue management from Cornell University in the United States.

Meliá Koh Samui’s general manager Ernesto Osuna said Hu would oversee all F&B planning and services and work with the team to position the resort’s Breeza Beach Restaurant & Bar, focused on contemporary Thai cuisine, as well as Western and Mediterranean fare, as Koh Samui’s leading fine dining restaurant.

“Yolande is a versatile and results-driven individual with a track record of driving projects, identifying sales opportunities and encouraging positive contributions from all of her team members; she will no doubt excel in propelling our F&B landscape to a new level,” he said.

Meliá Koh Samui’s host of facilities include two restaurants, a swim-up bar, a lagoon pool that meanders through the resort’s lush grounds like a river, a two-level infinity pool with sunken seating areas, an executive lounge, spa, fitness centre, ballroom and conference facilities and, for families, a kid’s club, outdoor playground and mini water park.

The Tempeh Treat

The word Tempeh comes from Indonesia and has been known for quite some time, however, most of us have not yet tried and incorporated it into our favorite recipes in our kitchens, it is very obvious to have a doubtful thought process on the how’s? what’s? and what if not? when it comes to trying something new. The same thing happened with me as well when I found myself acquainted with tempeh but once it turned out to be a delight and burst of flavors in the form of a recipe it has now become an anytime welcome with a number of ways doing it and that is how this feature of sharing more about tempeh started.

Tempeh is actually a meatless source of rich protein, vegan in nature, healthy and nutritious for those who love plant-based foods and enjoy experimenting with recipes that are not only colorful to the eyes but also tempting to the palate. Tempeh is made from fermented soybeans which are broken down by micro-organisms and are further compacted and pressed into cakes that have a nice texture, appealing color, and a little chewy in texture with a little nutty in its taste.

Most tempeh in Indonesia is sold wrapped in banana leaves and is available in local markets, though in the united states and other places we have seen it is available in vacuum-packed formats. Besides being packed and being a powerhouse of proteins and nutrients tempeh is also a good source of essential vitamins and minerals but is a bit low in sodium and carbohydrate content.

Tempeh is also great to add to stir fry concepts and recipes.it is a good match to a number of exotic veggies like mushrooms, broccoli, zucchini, bell peppers, asparagus, etc and with a little bit of celery, garlic, spring onions and stir fry sauce, and a dash of chili and pepper it is good to go with.

7. Tempeh in baked dishes creates variety in our meals as well. Steam the cut tempeh pieces for around 10 mins and then marinate it with a choice of ingredients and sauces and place it into a baking dish with add ons and alternates to enhance the dish. Recipe-1] TEMPEH BROTH OF GOODNESS

Ingredients:

  • Tempeh- 150 gms cut into cubes.

  • Veg stock- 500- 750 ml

  • Oil- 2 tbsp.

  • Salt and pepper to taste

  • Chili flakes- ½ tsp

  • Soy sauce- 1 tsp

  • Red chili sauce- 1 tsp

  • Garlic- 2-3 cloves, chopped

  • Onion-1 small, chopped.

  • Carrots- ¼ cup cut into cubes.

  • Celery- 2 tbsp. chopped

  • Mixed herbs/ fresh basil leaves- 2 tbsp.

  • Bayleaf-1 no

  • Green/yellow zucchini-1/2 cup cut into cubes.

  • Fresh parsley/micro-greens to garnish the soup- 2 tsp.




Method:

1. Heat 1 tbsp. oil in a saucepan and add in the pieces of tempeh and saute it for a couple of minutes until golden browned, remove and keep aside.

2. In the same saucepan add in a little more oil and add in the Bayleaf, garlic, onion, celery, carrots, and cook for 1-2 mins, add in the seasonings, herbs, and chili flakes, sauces to taste.

3. Bring to a boil and add in the zucchini cut into med cubes and also add in the tempeh pieces, simmer for 10-12 mins until all veggies are just done right in texture.

4. Serve hot garnished with fresh herbs, micro-greens, and a dash of crushed black pepper.




Recipe-2] TEMPEH KA DESI TADKA

Ingredients:

  • Tempeh- 150 gms cut into cubes.

  • For the marination:

  • Curd -1 cup

  • Lime juice-2 tsp

  • Cumin Powder-1/2 tsp

  • Ginger-garlic paste-1 tsp

  • Garam masala powder-1/2 tsp

  • Salt to taste

  • Kasuri methi-1 tsp

  • Oil-1 tbsp.

  • Red chili powder-1/2 tsp.

  • For the sauce/gravy:

  • Oil-2 tbsp.

  • Onion- 2 medium chopped

  • Ginger-garlic-green chili paste-1 tsp

  • Red chili powder-1/2 tsp

  • Salt to taste

  • Turmeric powder-1/2 tsp

  • Tomato puree-1/4 cup

  • Coconut milk-1 cup

  • Green peas- ½ cup boiled

  • Coriander leaves- 2 tbsp. chopped

Method:

1. In a mixing bowl combine together the ingredients for the marination, add in the cut cubes of tempeh into the same and mix well, keep in the fridge for 45 mins.

2. Heat oil in a pan add in the onions, ginger-garlic-chili paste, and saute them all well around 3-4 mins, add a little water if needed. Add in the powdered spices and salt and mix them all well.

3. Add in tomato puree, the marinated tempeh, and stir well. Now also add in the coconut milk and green peas and mix well. Simmer and allow to cook for 20 mins.

4. Serve hot garnished with fresh coriander leaves.


Recipe-3] ASIAN STIRY FRIED TEMPEH

Ingredients

  • Tempeh- 150 gms cut into cubes/fingers

  • Oil- 2 tbsp.

  • Ginger- 1 tsp chopped

  • Garlic- 1 tsp chopped

  • Green chili & red chilies- 2-3 each slit

  • Spring onions- 3-4 sliced

  • Red/green/yellow capsicums-1/2 cup cubes

  • Salt and pepper to taste

  • Red chili sauce-2 tsp

  • Soy sauce- 2 tsp

  • Sugar-1/2 tsp

  • Tomato ketchup-1 tbsp.

  • White sesame seeds- 1 tsp

  • White vinegar-1 tsp

  • Veg stock/water-1 cup

  • Corn flour and water solution-2 tbsp. to thicken up.

  • Spring onion greens-2 tbsp. chopped.

Method:

1. Cut the tempeh into cubes/fingers as desired and heat oil in a pan and slightly saute the tempeh for a couple of minutes, once slightly browned remove and keep aside.

2. In the same pan and a little more oil saute the ginger, garlic, chilies, onions and add in a little stock or water to prevent burning and to have a little sauce being formed.

3. Add in the salt, pepper, sauces to taste and bring it all to a boil, add in the peppers and the saute tempeh and allow to simmer for 2 mins.

4. Now add in the cornflour water solution and thicken the gravy and get it to a nice coating texture on the tempeh, check for seasonings, add in the vinegar and finally garnish with toasted white sesame seeds, the spring onion greens and serve hot as a snack/starter.

Ingredients

Tempeh-150 gms cut into slices

For the marination of tempeh:

  • Mustard paste-1 tsp

  • Olive oil-2-3 tbsp.

  • White vinegar/ balsamic vinegar- 2 tsp

  • Honey- 1 tbsp.

  • Peanut butter-2 tsp

  • Mixed herbs-1/2 tsp

  • Chili flakes-1/2 tsp

  • Soy sauce- 2 tsp

  • Red chili sauce- 2 tsp

  •  Sliced bread of your choice- 4-6 no.

  • Spread of your choice on the bread- mayo-mustard, cream cheese- herb spread, almond and mint butter, peanut butter, and honey spread, etc.

For the additions in the sandwich:

  • Assorted lettuce leaves- ½ cup fresh and crispy

  • Sliced tomatoes- 3-4 slices

  • Sliced cucumber- 4-5 sliced

  • Avocado slices- 4-5 no

  • Salt and crushed black pepper to taste

  • Vegan cheese/ cheese- as desired.

  • Accompany the sandwich with olives, pickled vegetables/chips etc.






Method:

1. Assemble all the ingredients for the sandwich with tempeh.

2. Steam the tempeh slices for 10 mins and remove, apply the marination and keep aside for 30 mins.

3. Heat 1 tbsp. oil on a grill pan/ non-stick pan and saute/grill the marinated tempeh for 2 mins on each side, remove and keep aside.

4. Arrange the slightly toasted slices of bread, apply the spread of your choice from simple butter to the varieties and place the lettuce leaves, tomato slices, cucumber slices, avocado, etc add a little seasoning as needed.

5. Finally place the tempeh and close the sandwich and grill/ toast the sandwich as desired and serve hot with assorted dips and chips etc.

Phasing out single-use plastics and introducing bottling plants
IHCL has strengthened its endeavor of phasing out single-use plastics from across its hotels, in addition to introducing bottling plants that will replace all plastic water bottles with reusable glass bottles at 15 hotels across the globe, resulting in eliminating 0.2 million kilograms of plastic. Taj Exotica Resort & Spa, Andamans, located at Radhanagar beach - voted as one of the world-class beaches in Asia - has set up an onsite bottling plant eliminating the use of plastic bottles, a waste disposal system that converts wet waste to gas and compost and a sanitation treatment plant to limit its carbon footprint.

Plastic carry bags have been replaced with paper carry bags, while plastic garbage bags and plastic wet umbrella bags have been replaced with oxo-biodegradable bags. All the plastic waste generated by the hotels is sent for recycling through Pollution Control Board-authorised scrap traders. NITI Aayog CEO Amitabh Kant expresses the need for government support for the sectors like tourism and hospitality which are badly hit due to the second wave. “We should be as innovative as possible and support our industries both on the monetary as well as the fiscal side,” he said at virtual interactive sessions on saving lives and livelihoods organized by the Federation of Indian Chambers of Commerce & Industry (FICCI).

Several industry stakeholders like Ritesh Agarwal, CEO of OYO Rooms, Rohit Kapoor, CEO for India and South Asia at OYO Hotels & Homes, Gaurav Gupta, COO, Zomato, and Anil Rajput, Head, Corporate Affairs, ITC Ltd were present in the online meet.

Kant mentioned that the second wave is more catastrophic than the first one, and the private sector in such time has shown much support in order to support the government. “There has been further ramping up of the vaccination drive and the private sector has played a very pivotal role in managing the pandemic and has complemented the efforts of the government in a significant way,” he said.

He applauded OYO for giving all its room for medical care and stepping forward with various initiatives. Agarwal mentioned that smaller budget hotels need support from the government for survival. Further, he said, there are certain hygiene and sanitization practices that hotels need to adopt in order to attract more travelers. “Customers want sanitization to happen in front of their eyes,” he added.

Elon Musk is gearing up to launch his own drive-in food chain at Supercharger locations as his electric car company Tesla has applied for a new trademark for its brand under restaurant services.

According to a report in Electrek, the company has applied for three new trademarks with the United States Patent and Trademark Office that will cover the categories of "Restaurant services, pop-up restaurant services, self-service restaurant services, take-out restaurant services".

"The application is awaiting examination and will be reviewed by an attorney around August 27," the report said on Tuesday.

Tesla's iconic 'T' logo is featured on the application, to be trademarked for use by its branded restaurants.

Way back in 2017, then Tesla CTO JB Straubel had said that the company might move into the restaurant business.

In 2018, Musk said in a tweet: "Gonna put an old school drive-in, roller skates & rock restaurant at one of the new Tesla Supercharger locations in LA".

A few months later, Tesla applied for building permits for -- restaurant and Supercharger station -- at a location in Santa Monica in the US.

The project went into cold storage for about three years and now, a new building application has been submitted earlier this year.

The new development probably means that the company plans for a 'Tesla' branded restaurant chain.

With more than 25,000 Superchargers, Tesla owns and operates the largest global, fast charging network in the world, located on major routes near convenient amenities.

NEWS | FHRAI Writes To MoHFW Requesting Banquet Halls To Be Opened For Mass Immunization Of Corporate Sector

The apex Association of hotels and restaurants in the country - Federation of Hotel & Restaurant Associations of India (FHRAI) in a letter to the Ministry of Health & Family Welfare (MoHFW) has suggested making necessary changes in the vaccination guidelines to include banquet halls in hotels as venues for mass immunization of corporate sector. FHRAI has stated that banquet halls in hotels are better equipped than schools, colleges, or community halls for the purpose. It further said that during the first lockdown many hotels were requisitioned by local authorities for accommodating doctors and medical workers and also for quarantining COVID patients and hence they are aware of all the safety protocols and are fully capable of conducting mass vaccination at their venues. 


“Our country is carrying out one of the world’s biggest vaccination drives. Time is of the essence and the quicker we manage to vaccinate the entire population, the better it will be for the nation. The availability of vaccines is anticipated to only increase from here during which safe and controlled environments will be required to accommodate and vaccinate citizens. Banquet halls in hotels offer just the right kind of venue that will facilitate and expedite the vaccination drive. We request the Ministry of Health & Family Welfare to consider our suggestion and make necessary changes in the vaccination guidelines to include banquet halls in hotels as venues for mass immunization of corporates,” says Mr. Gurbaxish Singh Kohli, Vice President, FHRAI.


The Indian Hotel industry’s total revenue fell roughly 75 per cent in the last financial year. The industry has taken a revenue hit of close to Rs.1.30 lakh Cr in FY 2020-21 which in FY 2019-20 stood at Rs.1.82 lakh Cr. The hospitality industry’s revenue at the beginning of 2021 was below 20 per cent of pre-pandemic levels and since April 2021 the revenue hasn’t even crossed 5 per cent. Engulfed in massive losses and mounting debts due to the pandemic, the Hospitality sector in the country is undergoing a very gloomy economic situation.


“Hotels have been at the frontline and have been serving doctors and other health workers since the first lockdown and are fully aware of operating with the required safety guidelines. The financial repercussion of the lockdown has dealt a severe blow to the industry. We were the first sector to be affected by the pandemic and will be the last to revive. The Hospitality sector in the country is waging a battle for its existence today. Under these extra ordinary circumstances, we are hoping that the Government could extend its support by allowing us to open banquet venues for mass vaccination. This will give our industry some source of revenue while contributing to the nation in its vaccination drive. The Hospitality industry is committed to follow all the health and safety protocols issued by the Government and it has our unwavering support in its efforts to combat the present pandemic,” concludes Mr Kohli.


The FHRAI has expressed regret with reference to some hotels letting out premises to private hospitals for mass immunization programs for corporates. It has advised all its member hotels to not indulge in any such endeavour that contravenes the National COVID19 Vaccination Guidelines.

Telehealth assistance and Tele counselling 

Ascott’s guests have unlimited round-the-clock telephone access to International SOS’  Assistance Centres via the property’s front desk from the comfort and privacy of their own apartments. Guests can tap the International SOS’ panel of accredited doctors for medical advice and assistance2on matters including but not limited to medication, non-life-threatening ailments,  acute and chronic illnesses. Guests can also seek advice on other health-related matters such as pandemic-related information, arrangement for medical evacuation1and repatriation2, as well as outpatient case management2.  

Guests can also access the International SOS panel of accredited counselors to help with a wide range of mental and emotional health issues, including depression, anxiety, relationship management, trauma, anger and grief. International SOS will also provide tips and exercises to  Ascott, to help guests build mental resilience, promote mindfulness, manage stress and improve their overall well-being.  

Travel security advisory 

International SOS will provide Ascott and its guests with timely information on incidents such as street protests, natural disasters, travel restrictions and security threats - gathered from  International SOS’s various technical and on-the-ground sources. The travel security information will help Ascott and its guests to avoid, mitigate and navigate any potential or ongoing security risks and threats encountered. It also includes advice on but not limited to the choice of safe ground transportation and emergency evacuations. Guests can also contact International SOS via the property’s front desk to obtain more specific global travel security advice.

Annex B - Enhanced ‘Ascott Cares’ commitment  

The enhanced ‘Ascott Cares’ commitment to provide stringent hygiene and safety standards,  wellness support, and implement sustainable practices cover seven areas: 

1. Our Staff  

Personal protective equipment such as masks, protective screens, gloves, and hand sanitizers will be provided to staff. Workspaces and staff accommodation will be regularly sanitized,  and staff has to undergo regular temperature screening. Ascott will leverage technology to create virtual communities for social activities and events, and use social media platforms and digital tools to meet training commitments where necessary. Staff is to also adopt contactless greetings.  

2. Wellness & Security  

A comprehensive suite of health and security teleservices will be provided to all guests round-the-clock. Guests have ready access to masks and hand sanitizers at the property upon request or in high-traffic areas. Guests are to also provide health and travel declarations and undergo temperature checks where applicable and required by local authorities. 

3. Social Distancing 

The number of guests will be limited to high-touch zones. Floor markings will be used as a  visual guide, while furniture at the lobby and other interaction points will be reconfigured where necessary to allow social distancing, comfort, and facilitate a smoother flow of traffic.  The number of visitors in guests’ apartments will also be restricted.  

4. Hygiene & Cleanliness 

Enhanced processes to raise the standard of hygiene and cleanliness in accordance with the  World Health Organization’s standards and local regulations have been rolled out across  Ascott’s properties. This includes increased disinfection and cleaning frequencies with stricter audits by in-house and independent agencies, as well as the adaptation of food &  beverage services. Antimicrobial coatings and effective disinfection technology have been applied in the lifts where possible to enhance safety. 

5. Contactless & Paperless 

Leverage digital technologies to minimize contacts such as the use of the ‘Discover ASR’  mobile app to access apartments, make contactless payments, and self-check-in and check-out. To introduce Aria, (acronym for Ascott Robotic Intelligent Assistant) Ascott’s service delivery robot at properties, where applicable. There is a further reduction of paper products such as providing digital manuals to operate kitchen appliances as well as offering digital newspapers and magazines. 

6. Our Vendors 

Enhanced protocols and collaboration with Ascott’s vendors and partners to ensure stringent health requirements are met. Improved supply chain visibility, tighter measures during

The BTS Meal Will Hit McDonald’s Restaurants in North and East India Starting 1st June 2021 and McDonald’s Restaurants in South and West India Starting 4th June 2021

New Delhi, 01 June 2021: Get ready, because the Golden Arches are about to shine even brighter thanks to a new collaboration with 21st-century global pop icons, BTS.  

This one-of-a-kind menu “tour” will arrive in North and East India on 1st June and South and West India on 4th June, when customers can enjoy the band’s signature order at participating restaurants across India. The BTS Meal includes a [10-piece] Chicken McNuggets®, medium World Famous Fries®, medium coke, and Sweet Chili and Cajun dipping sauces inspired by popular recipes from McDonald’s South Korea.

Siddharth Shanker Giri, a seasoned hospitality sales professional, is appointed Director of  Sales at Radisson Blu Resort Dharamshala. 

With over two decades in hospitality, Siddharth has worked with leading hotel brands  including Holiday Inn Resort Goa, Hilton Hotels, Pride Group of Hotels, Sarovar Hotels, Eros  Hotel New Delhi and Cidade De Goa (now IHCL). He has held various positions across  corporate and regional brand set-ups as well as at unit hotels. Chef Jitendra Nakhwa appointed Executive Chef 

Bringing close to two decades of culinary mastery, Chef Jitendra Nakhwa joins Radisson Blu  Resort Dharamshala as Executive Chef. 

A hospitality management graduate, Chef Jitendra Nakhwa initiated his career in hospitality  with Grand Hyatt Mumbai. He soon moved to London, and thereafter to the US to work with  Master Chef Jose Gutierrez and learn nuances of French fine dining. He moved back to  India in 2007 and has been steadily climbing the ladder of success ever since. He also has 

many awards under his belt including a Gold medal secured at a prominent culinary  challenge in Mumbai. His last assignment was at Hyatt Hyderabad as Executive Chef. 

At Radisson Blu Resort Dharamshala, Chef Jitendra Nakhwa will lead the hotel’s culinary  division to showcase a fine balance of International and Indian cuisines at the property,  along with an emphasis on traditional food from Himachal Pradesh and organic, farm-to-fork  culinary concept.
