The partnership between Indian-born, New York-based Chef Hari Nayak and Baraabaru’s Head Chef Kishan Singh continues with a second menu, marking the next chapter in a collaborative journey that began in October 2023. This new menu not only showcases the rich cultural and culinary heritage of the Indian subcontinent and the Maldives but also ventures into new territories and passions.

The Nayak-Singh Baraabaru partnership is more than a marriage of ingredients and creativity; it’s an alignment of philosophies and passions. Visionary Chef Hari Nayak’s journey from the coastal city of Udipi, India, to the world’s most prestigious restaurants is reflected in his modern yet authentic interpretation of Indian gastronomy. The new season Baraabaru menu expands its gaze beyond the Southern coastal recipes that defined Chef Hari’s India's childhood and the first menu, embracing a pan-Indian approach with a modern twist. "We're excited to elevate the dining experience even further with this new menu selection that features popular favourites as well as a selection of new dishes."

Signature starters include the Kokum Cured Tuna, which marries the tangy essence of Bhel Puri with creamy avocado in a refreshing cold salad. The Tandoori Grilled King Oyster Mushroom is a subtly spiced delicacy; its meaty texture the perfect canvas for the smokiness of the tandoor. The Kosha Mangsho, a Bengali-style slow-cooked mutton, is prepared with black masala, offering nuanced layers of intense yet comforting flavour. The Burrata Butter Chicken combines the charred smokiness of tandoor-baked chicken tikka with the velvet texture of melted burrata and a richly roasted tomato makhini sauce. The Lamb Shank Biryani is a majestic assembly of slow-cooked lamb with aromatic saffron-infused Keralan rice, sweet caramelised onions and the buttery crunch of toasted cashews.

Chef Hari Nayak’s favourite dish, the Ghee Roasted Baby Eggplant, pairs the creaminess of ghee-enriched eggplant with the warmth of red chilli and the tang of tamarind. Served with a feather-light Neer Dosa, this dish expresses the revered chef’s hallmark blend of classic flavours with modern flair. Chef Kishan Singh’s chosen dish is the Goan Peri Peri Prawn served with garlic pachadi and curry leaf oil.

Atithya 2024 – A Reflection of Hospitality | An intercollegiate competition hosted by AISSMS College of Hotel Management and Catering Technology

From February 7th to 9th, 2024, the vibrant hues of creativity and intellect painted the canvas of Atithya 2024, an intercollegiate competition that saw participation from 35 esteemed colleges across Kolkata, Delhi, Mumbai, Bangalore, and more. Hosted by AISSMS College of Hotel Management and Catering Technology, the event was a melting pot of talent and innovation.

The competitions were as diverse as the array of cities represented. From the Budding Chef challenge, where participants tested their culinary acumen by identifying ingredients through taste, aroma, and visual cues, to the Cocktail Adventure, where promising students with interest in mixology from the participating colleges concocted innovative beverages inspired by adrenaline-fueled sports, and there was also Vines & Vases where students created exquisite centrepieces using foliage and non-floral organic material, every event pushed the boundaries of creativity.

Also, Atithya 2024 not only celebrated talent but also nurtured the entrepreneurial spirit with competitions like Seed Story, where participants presented innovative startup ideas transcending the hospitality sector. Additionally, intellectual prowess was put to the test in competitions like Turn The Tables, a debate on various socio-political topics, and Match Thy Wits, a quiz covering technical concepts and current affairs.

The crowning moment came during the Gala dinner and awards night, themed “Champs Élysées – the Allure of the French Boulevard” where participants were transported to the romantic streets of Paris. This evening was graced by the presence of the honourable secretary of AISSMS Society Shri Malojiraje Chhatrapati with Smt Madhurimaraje Chhatrapati, Chief guest for the event-Mr. Ashwin Kotnis, Guest of honour - Chef Ajay Chopra and Director of Suhana Spices, Mr. Anand Chordia.

A notable highlight was the release of the commemorative Coffee Table book ‘The Spice Route’ encapsulating the recipes based on the World Record of 100 curries that was awarded by the World Book of Records, London, immortalizing the memories and achievements of all involved from Principal Dr. Sonali Jadhav to the faculty members and students.

Amidst the ambience of a Parisian setting, adorned with French décor and accompanied by delectable French cuisine, participants celebrated their achievements and shared camaraderie.

In a display of unparalleled skill and finesse, IHM Kolkata emerged triumphant, clinching the champions’ trophy for the third consecutive time. The event was meticulously organized by the students of AISSMS College and they showcased their prowess in various departments such as Accommodation and Housekeeping, Food and Beverage Service, Food Production, Media, and Marketing.

The competence and camaraderie of the students towards the participating colleges was a true reflection of hospitality. From handmade decor for the gala dinner to stirring up exquisite dishes, and serving with gusto to all the guests, the students truly showed geniality

Marriott International Becomes First Hospitality Company to Introduce Neuroinclusive Practices at Its Largest Customer Events

Leveraging work from Google Xi’s The Neu Project, Marriott strives to create a more inclusive experience for meeting attendees

Marriott International, Inc., a hotel industry leader for more than 95 years, today announced its commitment to incorporate neuroinclusive practices at Marriott-hosted customer events of 250 people or more globally. This commitment is a result of joining forces with The Neu Project, an initiative from Google’s Experience Institute (Xi) that aims to share resources designed to better accommodate and create a more inclusive experience during meetings and events for neurodivergent attendees. These practices are initially being previewed at Marriott’s Corporate Partnership Customer Conference, THE EXCHANGE, currently taking place November 28 through December 1, 2023 at the JW Marriott Desert Springs Resort & Spa in Palm Springs, CA.

Approximately 15-20 percent of the world’s population has neuro differences, including ADHD, obsessive-compulsive disorder, autism, dyslexia, epilepsy, and Tourette Syndrome.* In 2022, the Google Experience Institute launched The Neu Project in order to demystify and educate event professionals on the design of more neuroinclusive experiences through a helpful guide and checklist.

The following neuroinclusive practices will be incorporated at Marriott-hosted customer meetings and events of 250 people or more:

Quiet Room: A dedicated room will be available during Marriott customer events for recovery from sensory overwhelm, restoration and regulation. Designed to foster the physical, emotional, and mental well-being of attendees, the room will serve as a calming retreat where guests can break from the event to manage fatigue, overload and/or sensory needs.

Tools and Resources: At registration, event attendees will have the opportunity to request various tools to better accommodate their needs, including sensory & fidget toys, noise canceling ear plugs, sleep masks, sunglasses, printed agendas and venue maps, and details about loud music, flashing lights or surprise moments taking place during the event.

Closed Captioning for Main Stage Presentations: Real-time subtitles and captions will be available on-screen during main stage event and conference presentations.

Last month, Marriott and The Neu Project also implemented a quiet room for attendees at IMEX America, an annual industry event in Las Vegas, NV where members of the global business events community come together.

Looking ahead to 2024, Marriott will further its neuroinclusion efforts by conducting active listening sessions with the community through conversations with The Neu Project and people who are neurodivergent, which will help shape future content.

4th YOUNG VISIONARY HOUSEKEEPERS’ NATIONAL CONVENTION

The Professional Housekeepers Association (PHA) organized the 4th YOUNG VISIONARY HOUSEKEEPERS’ NATIONAL CONVENTION & 6th PHA YUVA ANNIVERSARY on 9th September 2023 at Fortune Park JP Celestial, Bengaluru. The event was witnessed by a record crowd of around 262 participants including YUVAs from 11 different Hotel Management colleges and stalwarts from Hotels, Healthcare sector, Facility Management, Aviation, Railways, Cruise liners, and Faculty Members. The theme of the Convention was “Housekeeping- Sustainable Development Goals & G20”. 

The convention commenced with a mindful meditation session by Dr. D. P. Sudhagar-Head Strategy, PHA & PHA YUVA, followed by the welcome note by Master of Ceremony, YUVAs Mr. Aniruddha K. Alur, Ms. Khushali Adesara from Ramaiah University and IIHM respectively. This was followed by the soulful rendition of a prayer song by Mr. Aneesh Goudar, PHA YUVA member Ramaiah University.

The convention commenced auspiciously with the lamp lighting ceremony led by Ms. Jayashree Nagaraj, Founder President & Chairperson-PHA, Chief Guest-Mr. Achuta Rao, Chief Operating Officer, The Windflower Resort & Spa, Mysore, Key Note Speaker-Ms. Sita Lekshmi, General Manager, Aloft-Bengaluru, Guest of Honour-Mr. Dominic Xavier, General Manager-Fortune Park JP Celestial, Bengaluru, Ms. Smritee Raghubalan, Hospitality Author, Oxford University Press & Honorary Advisor-PHA, and Ms. Elizabeth- PHA PR/ Media.

PHA corporate video was presented by Ms. Bharati Kalappa; the Vice President-Operations-PHA and PHA YUVA video was presented by Ms. Elizabeth to enable the participants to understand the initiatives and contributions made by PHA and YUVA for the fraternity.

In her welcome address, Ms. Jayashree Nagaraj welcomed the Chief Guest for the opening ceremony - Mr. Achuta Rao, Key Note Speaker-Ms. Sita Lekshmi, Guest of Honour Mr. Dominic Xavier, and other esteemed guests, collaborators, PHA life members, YUVA mentors and PHA YUVA member participants to the convention.

Mr. Achuta Rao in his opening remarks stated the importance of using biodegradable products on a professional as well as personal front. In her keynote address, Ms. Sita encouraged everyone to lead a sustainable life and advocated the need for digital transformation and gender equality in every sector. In his opening remarks, Mr. Dominic Xavier suggested that adopting sustainability at every level of our daily lives will help us in enhancing our own personality. 

The proceedings of the convention continued with the launch of PHA YUVA Goals-2030. It was launched by Ms. Jayashree Nagaraj, Mr. Achuta Rao, Ms. Sita Lekshmi, Mr. Dominic Xavier, Ms. Sandhya AnilKumar, Ms. Smritee Raghubalan, and Dr. D. P. Sudhagar. 15 Unique goals were highlighted for PHA YUVA 2030 on Developing Talent for the Global Housekeeping Industry. 

A panel discussion on the topic ‘Role of Housekeeping in Achieving Sustainable Development Goals & G20’ was organized. It was moderated by Dr. Jitendra Das, Senior Lecturer, IHM-Chennai. The prominent members of the panel discussion were Ms. Bindu KC, Corporate Housekeeper, Abad Hotels and Resorts-representing the hotel industry; Ms. Indrani Sanyal, General Manager-Housekeeping Medica Super-specialty Hospital, representing healthcare sector; Mr. Ralph Sunil, Senior Vice President-Administration, JSW Steel, Vijayanagar Works-representing Facility Management sector; Mr. Saptarishi Mukherjee, Director-Head Airside Operations-South and west India, InterGlobe Aviation Ltd, Indigo, representing Aviation sector; Mr. Ajay Singh, Environment and Housekeeping Wing, South Western Railway representing Railways; Ms. Susan James Govanakoppa, Incharge-Shore Excursions, Royal Caribbean International Cruise-liners representing Cruise Liners; and Mr. Amalan Kumar Dasgupta, Vice President-Skill Development, Presidency College of Hotel Management representing Academia.

Setting the milestone in presenting sustainable housekeeping practices, the MCs introduced ‘Pecha Kucha’ - a storytelling format of presentation method that calls for telling a story using images rather than reading texts for slides during a ppt presentation. These presentations use 20 slides and allow only 20 seconds of commentary per slide. Ms. Babita Butola, Deputy Housekeeper, Vivanta Bengaluru, Whitefield presented her Pecha Kucha on the topic ‘contactless experience’, whereas Mr. Shivakumar V, Senior Manager – Housekeeping, Prestige Property Management & Services presented Pecha Kucha on ‘The Significance of Human Resources’. Mr. Ranajit Behera, Senior Maintenance Manager- Services, Bangalore International Airport Limited explained his very interactive and motivated Pecha Kucha on ‘5S’. The last Pech Kucha for the event was presented by Mr. Niranjan Khatri, Founder, iSambhav on ‘Sustainability’.

Ms. Smritee Raghubalan organized a very informative ‘Sustainable Housekeeping’ quiz for the PHA YUVA members. Teams from IHM, Chennai, IHM Hyderabad, Ramaiah University Bengaluru, GIHMCT Nagpur, and Sea College, Bengaluru participated in the final round of the quiz. PHA YUVA team IHM Hyderabad bagged the first place and the team from Ramaiah University was the runner-up.

PHA YUVA also presented India’s First Educational Exhibition for Housekeeping representing varied products and services-based ancillary industry brands like Vooki, Green Maneuver Industries LLP, Diversey, and Raenco. 

Another interesting discussion ‘Face-to-face with Gen Z and the Allied Industry Leaders’ took place on the topic ‘Emerging career opportunities in Allied Industries’, moderated by Dr. Sudhagar. The eminent panel members for the discussion were proud ten PHA YUVA members from different participating institutes, and the experts from Vooki, SARAYA Mystair Hygiene Private Ltd., Raenco, Green Maneuver Industries LLP, Diversey, ZYVANA integrated services Pvt Ltd and Buzil Rossari.

The proceedings of the convention continued with the conferring of the PHA Par Excellence Awards. Fourteen PHA Life Members were recognized for working towards building a sustainable industry, fraternity, and PHA. The award for the competition ‘Innovation in Housekeeping to Achieve Sustainable Development Goals was given to different PHA YUVA members for achieving 17 individual Sustainable Development Goals. The best YUVA Mentors award was presented to 5 esteemed PHA life members for extending their expertise for the growth and development of the PHA YUVA fraternity. And the Overall Champions Trophy of the 4th YOUNG VISIONARY HOUSEKEEPERS’ NATIONAL CONVENTION & 6th PHA YUVA ANNIVERSARY was awarded to the IHM Chennai.

Cultural Extravaganza was presented by PHA YUVA members from GIHM, Nagpur; Ramaiah University of Applied Science, Bangalore; IIHM, Bangalore; IHM, Chennai and Acharya Institute of Management and Science, Bangalore.

All participants grooved to the PHA anthem presented by Mr R. S. Ganesh Narayan-Heritage Associate Support Partner-PHA, and concluding the convention, Dr. Thomas Mathew proposed the vote of thanks. The convention ended with the national anthem.

Celebrated German Chef Tim Raue to helm Flying Sauces at Soneva Fushi

Germany’s best chef and entrepreneur Tim Raue is collaborating with award-winning sustainable luxury resorts operator Soneva to bring Berlin’s two Michelin-starred Restaurant Tim Raue to Soneva Fushi in the Maldives. He will be delighting guests at the resort’s popular fine-dining zipline restaurant, Flying Sauces, during an exclusive residency from October 12, 2023 to January 24, 2024.

In 2010, chef Tim and his business partner Marie-Anne Wild opened Restaurant Tim Raue in Berlin. The restaurant has since been awarded two Michelin stars and five black toques by Gault&Millau. In 2012, it appeared for the first time on The World’s 50 Best Restaurants list and currently ranks 40th. In addition, chef Tim is the only German chef to have been featured on the renowned Netflix show Chef’s Table.

Chef Tim’s cuisine is characterised by strong flavours and a brilliant interplay of spiciness, sweetness and acidity, and his menus are constantly evolving to offer guests the perfect culinary experience. He is also one of the few top German chefs to offer an entirely vegan menu and recently created a new menu called Kolibri x Berlin, which combines German classics with his signature flavours. At Flying Sauces, the menu will include dishes with Asian flavours, German interpretations and Maldivian ingredients.

“With Restaurant TIM RAUE, I have fulfilled a lifelong dream – but my other projects mean culinary freedom for me and the opportunity to fully live out my many ideas with the help of my chefs,” says chef Tim. “Soneva Fushi is a culinary paradise in nature and our residency at Flying Sauces will feature a fresh take on culinary juxtaposition with an exclusive menu of contrasting flavours and textures from across Asia, Europe and the Maldives.

Launched in 2021, Flying Sauces is the first fine dining zipline experience in the world, complete with an open treetop kitchen 12 metres above the ground. After being securely strapped into safety harnesses, guests soar along a 200-metre zipline route to reach an elevated dining platform where stunning views of the island’s lush greens and sparkling turquoise ocean await. Once seated, savour chef Tim’s memorable menu, paired with a selection of over 9,000 wines from Soneva Fushi’s extensive cellar. 

Empowering India's Food Culture: FSSAI and Radisson Blu Kaushambi Delhi NCR Unite to Promote Millets - “From Farm to Plate

Embracing the nutritional value of Millets

New Delhi, August 2023||FSSAI, Northern Region along with Radisson Blu, Kaushambi organized a millet awareness event based on the theme “Millets: From Farm to Plate” on 31st July, 2023 specially for the chefs of numerous acclaimed hotel chains and students from several hospitality as well as culinary institutes. Mr. Navneet Jain, Group CEO, Radisson Blu, Kaushambi Delhi NCR  and Radisson Blu Towers Kaushambi Delhi NCR, was one of the dignitaries in the event and provided tremendous support to FSSAI, Northern Region for successful organising of the event. Mr. Sanjay Kaushik, Senior Regional Director,Operations  Radisson group, South Asia was also instrumental in making the event a great success. He also graced the event with his auspicious presence. In this event more than 50 hotels took part and there were more than 200 chefs from the northern states. Mr. Praveen Kumar Singh, the Agriculture Commissioner, Ministry of Agriculture & Farmers Welfare, Government of India, was the special guest of the event and he shared information about policies and subsidies to promote millets in the country. Dr Hamid Latif, Principal, Regional Institute of Rural Development, Ghaziabad, a dignitary of the event, focussed on the importance of millets in combating challenges related to food security and the synergistic relation between balanced diet, millets and healthy lifestyle. Chef Davinder Kumar, President, Indian Culinary Forum efficiently sensitized chefs as well students from hospitality and culinary art institutes towards reinvention of their menu towards healthy diet. 

Dr. Manisha Narayan, Deputy Director, FSSAI Northern Regional Office, taking the theme forward, suggested the ways and highlighted the role of chefs in promoting the consumption and improving palate acceptability of millets. In the presentation, Dr. Narayan aligned the consumption of millets with the Eat Right India Movement of FSSAI. She also emphasised that the India’s concept of ‘वसुधैव कुटुम्बकम् - One Earth, One Family, One Future’ can be achieved by promoting the consumption of millets globally, millets being ‘nutri-cereals’.

Further, Chef, Rakesh Sethi, corporate chef of Radisson blu group of hotels through a video shared a recipe of millet shami kebab and he also informed about their initiative “Farmer Millet Brunch”. Chef Dhreeraj Mathur, Executive Chef of Radisson Blu, Kaushambi, made an excellent demonstration of ragi based khandavi. 

Ranveer Brar and Kunal Kapoor through videos motivated appreciated the programme specially designed for Chefs. Several other chefs from renowned hotels demonstrated and showcased their cuisines prepared from various millets. 

Ms. Anuja Agarwala, former senior dietician from AIIMS shared insight about the optimisation of portion size of millets to be included in our daily diets.. The event also had participation from Indian Agricultural Research Institute (IARI), which was represented by a senior scientist, Dr. Vinutha T. who emphasized on the current research trends and different processing technologies associated with millets.  A large number of manufacturers and vendors participated in the programme by sharing their experiences in manufacturing millet based food products. The vendors also showcased the various ready to cook and ready to eat value-added millet based products, like idli mix, khichdi, laddu, savouries, cookies, etc. The experiences and insights shared amongst FSSAI, chefs, vendors and entrepreneurs during the event have laid a concrete foundation for the utilization of millets as part of the healthy and diverse diet.

In his thank-you speech at the FSSAI function, Mr. Navneet Jain expressed heartfelt gratitude to the FSSAI team for taking this beautiful initiative. He emphasized that chefs are the driving force in hospitality institutions, whether they are stand-alone restaurants or 5-star deluxe hotels. Mr. Jain passionately advocated for the incorporation of millets into everyone's daily diet, not just as a practice, but as a culture. He believes that promoting millets in various culinary settings will lead to a healthier and more sustainable lifestyle for all.

Environment Week Celebrations at Meluha, The Fern, Mumbai

Meluha, The Fern celebrated the World Environment Week by organizing various activities involving women, children, guests and staff members to create awareness about the importance of environment preservation and sustainability, highlighting the ill effects of pollution and ways and means to control it.

 The highlight of the celebrations was a rally involving small children between 6 to 12 age group who carried placards and shouted slogans to highlight the hazards of plastic pollution. The rally involving more than 50 kids and green team members of the hotel started from Powai plaza and culminated at the hotel.

 Similarly, another program was organized in a park in a nearby locality where the women were given a presentation on how to save energy by adopting some basic energy-friendly practices and inculcate the same in their children so that they can also become responsible citizens once they grow up.

 The guests were also encouraged to participate in a small eco-quiz. They were requested to scan the QR code and answer a few questions and all those who got the answers correct were offered discounts and other gifts.

The staff created a paper tree which had messages written  by them highlighting the hazards of plastic pollution. The messages were artistically displayed on leaves, flowers and branches. 

A session was also organized for the newly-inducted staff members to teach them the environment ethos which the company follows and educate them about the importance of environment preservation.

LIMITED TIME DEHLNAVI CUISINE POP-UP MAKES WAY WITH VISITING CHEFS  AT ITC MARATHA & ITC GRAND CENTRAL 

ITC Hotels have consciously carried the culinary-advocacy of heritage and modernist India; through an ever-evolving research on native dining experiences that transcends the anecdotal to actual achieved through the scrupulous supervision of groups Master Chefs. 

This time the group is taking the iconic Dehlnavi trail all around India, with its multicity culinary tour bringing the cross-border melange of erstwhile Capital City- in a handpicked curation of unaltered taste influenced from Mughal, Baniya, Kayasth, Punjab and many more. Served at homes, by food carts or at the high table, Delhi’s flavours, like her unique gharana, tells the story of the city. Successive settlers have invested the city with their own heirloom flavours and sense of urbanity. 

The four-day Dehlnavi trail dinner pop-up in Mumbai can be enjoyed ITC Maratha at Sahar Andheri East and ITC Grand Central Dishes at Parel in its award-winning restaurants Peshwa Pavilion & Hornbys Pavilion respectively giving an ease proximity access to gourmet enthusiast from North, Central and South districts of Mumbai. The culinary showcase is led by cuisine authority Chef Rais – ITC Maurya & Chef Mofid – Welcomhotel Sheraton New Delhi  Hotel to Mumbai. 

The food trail will start off with chaats such as papdi chaat, and the unique kulle ki chaat, Bhe ke Kebab, Tulsi ke kebab from the walled city. Kulle ki chaat, for the unversed, is made by scooping out the centres of boiled potatoes, sweet potatoes or summer specials like watermelons, and filling them with a mixture of chickpeas, pomegranate seeds, spices, and tangy chutneys. The stuffed potatoes or watermelon are then garnished with a variety of toppings such as sev, coriander leaves, and chaat masala, which is a spice blend commonly used in Indian cuisine.  

Besides the chaats, Dehlnavi cuisine trail will also feature kebabs and fish fry. While bhey ke kebab or lotus stem kebabs will stand true to the earnest effort for uniqueness, the other offerings on Purani Dilli Fried Chicken and Fish Fry will reflect the vast diaspora of Mughlai kebabs and street foods of Delhi.

The main course, however will remain the highlight of the fare and perhaps for the first time ever, the vegetarian side will seem more enticing with Dal Dehlnavi served with a crisp biscuitty roti will catch your fancy. Imagine the tantalizing fragrance of slow-cooked moth and split moong dal, infused with the pungency of chopped chillies, roasted cumin, and ginger juliennes. As you dip the sweet, biscuit-like roti into the creamy and thick textured dal, a heavenly blend of flavours dances on your taste buds.

The nimona pulao will be as intriguing as the dal and biscuitty combination, since the usual nimona pulao has green peas (matar), it is given a unique spin with matar stuffed inside the salan mirchis! The matar paneer naize would be the perfect nod to rustic flavours and a smooth, creamy-like texture thanks to the pine nuts. The chatpate soya charra aloo mime the mock meat hype in Mughal corterie introduced by Bania community. While kunni dal which is slow cooked on a gentle flame with a blend of Bengal gram and black lentils is infused with a handful of secret spices and a hint of garlic, is sure to comfort you to no end.

The non-vegetarian fare on the other side will be as royal as it could get. Expect the all-time favourite Dilli Butter Chicken in luscious gravy with a velvety texture and an indulgent buttery taste that coats the tongue. The juicy and tender boneless chicken pieces perfectly cooked and complemented the buttery goodness of the dish, will guarantee a lasting impression on the taste buds. The extravagant Nihari and Gosht Pulao too irresistibly delicious and added the perfect touch of Mughlai to the unforgettable experience.

Four Points by Sheraton, a premium hotel in Navi Mumbai, marked World Earth Day 2023 by hosting a range of activities focused on promoting sustainable living and environmental awareness. These initiatives were designed in accordance with this year’s theme for

EARTH DAY, i.e., ‘Invest in Our Planet’ and to encourage the community to act towards a greener future, in line with the hotel’s commitment to making a positive impact on the environment. While issues such as climate change and a decrease in oxygen levels in the atmosphere are a matter of concern, trees are said to be holding the entire planet together by providing enough oxygen to all living creatures. As part of the Earth Day 2023 activities, the hotel distributed 101 saplings to guest and Associates. A custom-made DIY germination kit, curated by ‘Book a Workshop’, was handed out for guest who were travelling and couldn’t carry the pot.

This kit had a pot, soil, and seeds with a QR code on how to start plant parenting at the comfort of their home or office. The tree selected for the activity are native and draught tolerant species that enhances biodiversity of the property and a healthy mix of fruit bearing, flowering and trees that produce the most oxygen, such as Neem, Arjun, and Amla. The hotel also organized a plastics cleaning drive to address the hazardous impact of plastic waste on the environment.

Moreover, the hotel is also promoting sustainable fashion by encouraging hotel associates to upcycle and donate their clothes to the needy. 

The hotel advocated for simple yet effective ways such as ‘Five Things to Consider to Reduce Single-use Plastic & Carbon Emission’ so that individuals can contribute to environmental protection. Additionally, the beverage workshop in partnership with Almitra Sustainables showcased interesting techniques for creating zero waste summer healthy hydrating drink.

Speaking about the Earth Day activities, the Cluster General Manager of Four Points by Sheraton Navi Mumbai, Mr. Stephen D’Souza said, "We at Four Points by Sheraton Navi Mumbai are committed to promoting sustainability and protecting our planet. In September 2022, we became the first hotel in Navi Mumbai to install an Electric Vehicle (EV) charging station in our premises. We have also introduced several initiatives in the past including the introduction of energy-saving techniques and water conservation measures.  Similar to our other sustainability initiatives, the Earth Day activities are designed to inspire the community to take action towards a greener future, and we hope to make a positive impact on the environment and the community."

Raffles Hotels in Cambodia Host Exclusive International Champagne Sabrage Ritual

PHNOM PENH, Cambodia (February 2023) — The worldwide organization dedicated to the noble art of Champagne sabrage will host two exclusive events in Cambodia next month with 5-star Raffles hotels, including at Raffles Hotel Le Royal in Phnom Penh and, for the first time ever, at Raffles Grand Hotel d’Angkor in Siem Reap.

Confrérie du Sabre d’Or is internationally renowned among Champagne aficionados for the ritual, which involves severing the top of the bottle with a sword. Champagne sabrage dates to the era of French emperor Napoleon Bonaparte, who is said to have cherished a drink of Champagne from bottles newly opened with a military saber after every winning battle.

Raffles is the only establishment in Cambodia where one can experience the official ceremony and has scheduled two exclusive events in March.

Raffles Hotel Le Royal’s Restaurant Le Royal on Friday, March 17 will serve a special four-course French menu with Champagne pairing priced at $145++ per person. Each guest is invited to saber a bottle of Champagne and officially join the Confrérie du Sabre d’Or. This will mark the second time the ceremony has been held at the hotel; the first occurred in 2019.

Raffles Grand Hotel d’Angkor on Sunday, March 19 will host the ceremony for the first time ever, with a luxurious brunch at Café d’Angkor including live music. The event is priced from $55++ per person or $95++ with free flow Champagne.

Established more than 200 years ago by stylish young French military officers, the traditional sabrage ceremony will be conducted by the Grand Master of La Confrérie du Sabre d’Or in the historic Raffles properties.

The master holds a bottle of Champagne by the heel, then slides his or her sword up and down the neck of the bottle to warm it. Then, in a single smooth movement, the master accelerates his or her arm forward, sliding the saber firmly along the neck of the bottle and—hopefully—decapitating the ring, or top neck of the bottle, and sending a gush of Champagne all over the floor and sometimes fellow guests.
