The Ravishing Ravioli

Italian cooking is one of the favorites of many of us and the very name of pasta and pizzas is so very inviting and mesmerizing. The basic of this universally accepted cuisine revolves around a few choice of ingredients which suit almost all of us and it starts from the varieties it has to offer from vegetarian to poultry, meat, seafood and even vegan in today’s times.

The word pasta as it goes back into history was all hand crafted and the chefs have designed some really amazing creative pieces of art with shapes and sizes of pasta which today are on menu cards across the globe with everyone’s own little twist of taste and flavors modifying it to suit the need of every guest and foodie.

To me ravioli has been a very exciting experience since it is possible to stuff these two sheets of pasta sheets with almost anything you can think of as your most favorite to the unusual combinations as well come out really well when tried out with a little open mind and out of the box. The concept of a ravioli is to place a filling between two sheets of pasta and seal the edges, ensure they open during boiling or frying and then they are tossed in a sauce or served with a dip when fried.

Innovation with ravioli from my kitchen include cheesy chicken tikka olive ravioli with creamy makhani sauce, palak aur soya ki ravioli tossed in a coriander peanut pesto sauce, shrimps cooked with butter garlic and dill leaves stuffed into a ravioli and then fried, served with a mayonnaise based tangy desi cocktail dip and the list goes on and on.

Here are a few of my all-time ravioli recipes to try out in your kitchens and enjoy the ravioli delicacies!

Recipe-1] CHEESY RAVIOLI WITH WALNUT PESTO

Ingredients

For the Ravioli dough:

Maida- 1 cup

Salt -1/4 tsp

Olive oil/ oil-2 tsp

Mixed herbs-1/4 tsp

Chili flakes-1/4 tsp

Egg-1 no optional

Warm water-as needed.

For the cheesy stuffing:

Oil-1 tsp

Garlic-1 tsp chopped

Onion-1/2 chopped

Cottage cheese-1/2 cup grated

Green capsicum-1/2 chopped

Salt and pepper to taste

Mixed herbs and chili flakes to taste

Cheese-2 tsp grated

For the walnut pesto:

Basil leaves- 1 cup

Garlic-1 tsp

Walnuts- 4-6 no

Olive oil/oil- 2 tbsp.

Chilled water-2 tsp

Lime juice-2 tsp

Salt and pepper to taste

Parmesan cheese/ cheese-2 tsp grated.

Method:

1. Prepare the ravioli dough and cover and keep for resting under a damp kitchen towel for 15-20 mins, divide the dough into 2 and roll out 2 thin rotis and cut the edges shape them into rectangle shapes of same size, side by side.

2.Heat oil in a pan and saute the ingredients for the stuffing and cook for 2-3 mins and remove, cool completely.

3.Using a chutney grinder, combine all ingredients for the pesto and churn them all into a nice chutney concept, remove and keep chilled.

4. Place the cooled filling on the rectangle sheets around 1 tsp, keep some gap between two. After placing the filling apply a paste of maida and water on all sides and edges and sandwich with the second sheet and using a fork pinch the sides, cut into small squares as per filling placed and boil the ravioli in boiling water for 3-4 mins and remove.

5. In a bow toss together the prepared pesto sauce with the ravioli and add cheese, cherry tomatoes and olives, basil etc and serve as a pasta snack or a mini meal concept.




Recipe-2] FRIED KEEMA MATTAR RAVIOLI

Ingredients

For the Ravioli dough:

Maida- 1 cup

Salt -1/4 tsp

Olive oil/ oil-2 tsp

Mixed herbs-1/4 tsp

Chili flakes-1/4 tsp

Egg-1 no optional

Warm water-as needed.

For the keema mattar stuffing:

Oil-2 tsp

Ginger-garlic-chili paste-1 tsp mix

Onion-1 small chopped

Chicken keema-1 cup

Green peas-1/4 cup boiled

Salt to taste

Garam masala powder-1/2 tsp

Tomato puree-2 tbsp.

Coriander powder-1 tsp

Mixed herbs and chili flakes to taste.

Water to cook the keema.

Cheese- 2 tsp grated.

Oil to deep fry the ravioli.

For the dip:

Tomato ketchup/ sweet chili sauce/ hot garlic sauce can be served.

Method:

1. Prepare the ravioli dough and cover and keep for resting under a damp kitchen towel for 15-20 mins, divide the dough into 2 and roll out 2 thin rotis and cut the edges shape them into rectangle shapes of the same size, side by side.

2. Heat oil in a pan and saute the ingredients for the stuffing and cook the onions until light pink, add in the chicken keema and peas, salt and all masalas, tomato puree and saute for 2-3 mins, reduce the flame add little water just to cook the keema and dry it at the end, cool and add cheese.

3. Place the cooled filling on the rectangle sheets around 1 tsp, keep some gap between two. After placing the filling apply a paste of maida and water on all sides and edges and sandwich with the second sheet and using a fork pinch the sides, cut into small squares as per filling placed and deep fry in medium hot oil for 3-4 mins and remove, drain excess oil on a kitchen paper.

4. Serve the fried chicken keema mattar ravioli with assorted dips or sauces of your choice.

Recipe-3] NUTTY SPINACH STUFFED RAVIOLI

Ingredients:

For the Ravioli dough:

Maida- 1 cup

Salt -1/4 tsp

Olive oil/ oil-2 tsp

Mixed herbs-1/4 tsp

Saffron water-few drops

Egg-1 no optional

Warm water-as needed.

For the nutty spinach stuffing:

Oil-2 tsp

Garlic-1 tsp chopped

Spinach-1 cup blanched and chopped

Salt, pepper, herbs, chili flakes to taste

Cheese- 2 tsp grated

Nuts- almonds/cashews/walnuts-2 tsp chopped

To serve with:

Mayonnaise-chili dip/ hung curd dips/ assorted sauces of your choice.

Ingredients:

For the Ravioli dough:

Maida- 1 cup

Salt -1/4 tsp

Olive oil/ oil-2 tsp

Mixed herbs-1/4 tsp

Chili flakes-1/4 tsp

Egg-1 no optional

Warm water-as needed.

For the stuffing:

Oil-2 tsp

Garlic-1 tsp chopped

Onion-1/2 chopped

Chicken sausages-2-3 chopped

Salt, pepper, herbs and chili flakes to taste

Cheese- 2 tbsp. grated

Fresh basil-4-5 leaves cut.

For the tomato herb sauce:

Olive oil/ oil-2 tsp

Garlic-1 tsp chopped

Onion-1/2 chopped

Tomato puree-1 cup

Salt, pepper, herbs, chili flakes to taste

White wine-2 tsp- optional

Sliced green/black olives- 3-4 no

Fresh parsley/basil- 2 tsp

Method:

1.Prepare the ravioli dough and cover and keep for resting under a damp kitchen towel for 15-20 mins, divide the dough into 2 and roll out 2 thin rotis and cut the edges shape them into rectangle shapes of same size, side by side.

2. Heat oil in a pan and saute the ingredients for the stuffing and cook for 2-3 mins and remove, cool completely and add the cheese last.

4. Prepare the sauce in a pan add oil, garlic, onion saute until pink, add tomato puree, salt, pepper, herbs, chili flakes, wine and cook for 3-4 mins, add sliced olives and parsley/basil and add in the cooked pasta and toss it for 1-2 mins. Garnish with cheese, basil and serve hot.

Recipe-5] RAVIOLI WITH TOFU & GARDEN VEGGIES

Ingredients

For the Ravioli dough:

Maida- 1 cup

Salt -1/4 tsp

Olive oil/ oil-2 tsp

Mixed herbs-1/4 tsp

Chili flakes-1/4 tsp

Egg-1 no optional

Warm water-as needed.

For the tofu- veg stuffing:

Oil-1 tsp

Garlic-1 tsp chopped

Extra firm tofu- ½ cup crumbled

Sliced mushrooms-3-4 no

Boiled sweet corn-2-3 tbsp. crushed

Salt, pepper, herbs, chili flakes to taste

Grated cheese-2 tbsp.

Dipping sauces:

Tomato chili sauce/ sweet garlic dip/ mayonnaise chili/ schezuan dip.

Method:

1.Prepare the ravioli dough and cover and keep for resting under a damp kitchen towel for 15-20 mins, divide the dough into 2 and roll out 2 thin rotis and cut the edges shape them into rectangle shapes of same size, side by side.

2. Heat oil in a pan and saute the ingredients for the stuffing and cook for 2-3 mins and remove, cool completely and add the cheese last.

3.Place the cooled filling on the rectangle sheets around 1 tsp, keep some gap between two. After placing the filling apply a paste of maida and water on all sides and edges and sandwich with the second sheet and using a fork pinch the sides, cut into small squares as per filling placed and deep fry in medium hot oil for 3-4 mins and remove, drain excess oil on a kitchen paper.

4. Serve the fried tofu & garden veggie ravioli with assorted dips or sauces of your choice.








Recipe-6] SEAFOOD RAVIOLI

Ingredients:

For the Ravioli dough:

Maida- 1 cup

Salt -1/4 tsp

Olive oil/ oil-2 tsp

Mixed herbs-1/4 tsp

Chili flakes-1/4 tsp

Egg-1 no optional

Warm water-as needed.

For the stuffing:

Oil-2 tsp

Garlic-1 tsp chopped

Onion-1/2 chopped

Shrimps-1/2 cup chopped

Salt, pepper, herbs, chili flakes to taste

Soy sauce-1 tsp

Red chili sauce-1 tsp

Cheese-2 tbsp. grated.

For the cream sauce:

Oil-2 tsp

Butter-1 tsp

Maida-1 tsp

Garlic-1 tsp chopped

Prawns- 10-12 med sized

Salt, pepper, herbs, chili flakes to taste

Fresh cream-1/2 cup

Water/fish stock-1 cup

Cream cheese-2 tsp

Fresh herbs/olives/cherry tomatoes.

Method:

1.Prepare the ravioli dough and cover and keep for resting under a damp kitchen towel for 15-20 mins, divide the dough into 2 and roll out 2 thin rotis and cut the edges shape them into rectangle shapes of same size, side by side.

2. Heat oil in a pan and saute the ingredients for the stuffing and cook for 2-3 mins and remove, cool completely and add the cheese last.

3. Place the cooled filling on the rectangle sheets around 1 tsp, keep some gap between two. After placing the filling apply a paste of maida and water on all sides and edges and sandwich with the second sheet and using a fork pinch the sides, cut into small squares as per filling placed and boil the ravioli in boiling water for 3-4 mins and remove.

4. To prepare the cream sauce for seafood ravioli, heat oil and butter in a pan add in the garlic, maida and saute for 30 seconds, add in the fish stock /water and salt, pepper, herbs, chili flakes to taste, add a little saffron water as well for a nice shade. As the sauce starts thickening, reduce the flame and slowly add in the full fat cream and cream cheese and blend it well then add in the cleaned prawns and cook for 4-5 mins.

5. Once the sauce is ready add in the cooked ravioli and toss it carefully in the pan and serve hot garnished with fresh herbs, cherry tomatoes, cheese, olives, etc.

NEWS | IHCL to convert Jaisalmer’s Gorbandh Palace into a SeleQtions hotel

The Indian Hotels Company (IHCL) has announced the signing of Gorbandh Palace in Jaisalmer, which will be converted into an IHCL SeleQtions hotel post comprehensive renovations. This hotel is yet another partnership between IHCL and Historic Resort Hotels (HRH).

Puneet Chhatwal, MD and CEO, IHCL, said, “With the signing of this hotel, IHCL is stepping into another strategic location in Rajasthan. We will now complete the important tourist circuit of Jaipur-Jodhpur-Jaisalmer. We thank Shriji Arvind Singh Mewar for reposing his trust in us for the third hotel in this partnership.”

The 83-key hotel is located in the heart of Jaisalmer, close to major tourist attractions. The yellow sandstone heritage hotel will have an all-day diner, bar, recreational facilities including a spa, a banquet hall and gardens for social and business gatherings. The hotel will shut down and undergo a complete renovation before it is launched under the SeleQtions brand in the second quarter of 2023.

Shriji Arvind Singh Mewar, chairman and MD, Historic Resort Hotels (HRH), said, “This is the 50th year of our relationship with IHCL, which commenced with Taj Lake Palace, Udaipur in 1971 and continued with Taj Fateh Prakash Palace, Udaipur. Nicknamed ‘The Golden city’, Jaisalmer in the Thar desert, stands on a ridge and is crowned by the ancient Jaisalmer Fort. Many of the houses and temples of the fort and the town below are built of finely sculptured sandstone, which gives it a golden colour.

With the addition of this hotel, IHCL will have 21 hotels across brands in Rajasthan including eight under development.

NEWS | Rain and flood delay business prospects for Chennai hotels

No sooner had the State’s hospitality industry begun to crawl back to some level of normalcy after travel restrictions and lockdowns were lifted, the unexpected heavy rains and floods poured water over post-Diwali business prospects for Chennai hotels.
While Deepawali is low season for room occupancies in the city hotels, it generally picks up after the festivities. But, the incessant rains and flooding in Chennai has by and large has delayed that schedule of business flow. The cancellation of domestic and international flights and train services had also truncated movement inbound traffic

T Nataraajan, CEO of GRT Hotels, hopes that things will change in the next few days, with weather conditions improving. “Rains have completely stopped and water has started draining up in most parts of the city. Flight services have also resumed to and from Chennai. Train services as well as inter-state bus services are also back to normal. We expect normal business to start latest by November 15,” he said.

“In general, people have stopped moving out for the last one week because of heavy rains and that itself has affected all sorts of businesses in the city,” says a senior official of the MGM Hotels. In the absence of banquets, conferences and corporate business in general, it was the FIT (free independent traveller) business which was keeping the hotel business alive in the city in the pandemic times. The hoteliers fear some contraction even in that business segment.
Holiday for FITs in Chennai is largely around the eight or nine beach resorts along the East Coast Road (ECR). The frequent weather alerts do not augur well for these resorts which thrive on FIT business, he says.

However, due to the heavy rains in the city, a lot of hotels and restaurants in the northern Chennai area have suffered huge losses due to flooding of low lying areas. “Areas from Egmore to Parrys Corner are the worst hit with flood water entering many restaurants and hospitality units,” says M Ravi, president of Chennai Hotels Association.

Even the low-lying areas in the main town are impacted badly in the floods and will take time even after the water recedes from those areas. “Power supply is not yet restored in many areas in the city and therefore business is only 20 percent for the last one week,” he added.

The Paradise Group has a strong expansion pipeline starting 2022 with most of the company’s upcoming properties slated for leisure destinations on the lines of The Westin Pushkar Resort & Spa. Additionally, the newest tie-up is with Ramada by Wyndham Jaipur North with Wyndham Hotels & Resorts which is a conversion of the existing 108-room property and is expected to open in November 2021.

The real estate company is also working on a new luxury project in Pushkar, which is scheduled to open in 2022. “India shall continue to be at the forefront when it comes to hospitality investments. We will surely see tremendous growth in the coming decade. The only difference between pre- and post-Covid eras would be that, before commencing any project, it would be analysed better. Upcoming projects will be envisioned well, both in terms of feasibility and design,” Vinayak Saboo, partner, Paradise Group, said.

“Covid-19 has undoubtedly been an ongoing challenge for the hospitality business owners. It is probably the worst crisis to hit the industry since its inception. However, the unprecedented situation called for unconventional solutions. Most of the owners sailed through the situation by implementing the right approach at the right time to weather the impact,” he commented.

Taking the learnings forward, the company has implemented a sustainable approach in its daily practices that will ensure a progressive future for the industry. “We are certainly witnessing an encouraging recovery. One can affirm that the recovery rate has been specifically higher for our leisure destination resort post-pandemic as most of the international destinations remain closed and at the same time people are now looking forward to staycations more than ever before,” Saboo added.
The company’s Jaipur hotels are witnessing a surge in occupancy rates and optimistically the hotels shall reach the pre-pandemic levels in 2022. “The brands and owners have worked in tandem over the past year and mitigated a lot of risks, which the pandemic had imposed on the industry. As far as the new business practices are concerned, a lot of them are already in place now; technology is going to be the key driver moving forward. Smart operations would be the new normal in the industry, which can ensure efficiency and enhance the guest’s experience at the same time,” he commented.

Saboo believes in further expanding the business at key leisure destinations. The first Hyde Hotel has opened outside of the US. The lifestyle brand has a buzzy presence in both Miami and Hollywood Beach, Florida and now in Dubai.

Hyde Hotel Dubai Business Bay “celebrates true discovery and authentic human connection, aiming to create iconic, personal, and captivating moments,” said Hyde Hotels, Resorts and Residences in a statement.

There are four dining outlets in the property, including Mediterranean venue Cleo, Japanese restaurant Katsuya, gastropub Hudson Tavern and café The Perq. The five-star hotel also has 276 rooms with balcony

The processes that make a service experience may not be rocket science, at least not until we open hotels on the moon, but adding a dash of scientific temper can dramatically change the outcome.

The only two things you need to know, from a practical, implementation point of view are:

  • Create a towering peak moment in every positive guest experience.

  • Reduce the peak moment in every negative guest experience.

Let’s take Restaurant Dining for example.

Create a towering peak moment in every positive guest experience.

  • If the guest is a repeat guest, can you remember their favorite drink and bring it to them?

  • Maybe, instead of "asking" for Indian bread orders, bring them some and offer it? Charge only if consumed.

  • Offer a taster - the mini size of a dish, dressing, or drink you think would go nicely with what the guests have ordered.

Reduce the peak moment in every negative guest experience.

  • When you can see the guest is not particularly enjoying the food, offer to bring something else for them.

  • When a guest complains about a dish, do not argue, contradict or try and make it seem like the dish is perfect but they don't know what is what. Reduce the peak moment, by apologizing & swiftly removing the offending dish from the table. Then convert it into a positive peak moment, buy having the Chef come over and prepare something off the menu.

Designing / Managing Ends

Remember, the end of a process is as important as the peak moment in the process.

Dining ends, usually with the bill being presented. Can you make this fun? Can you do something to keep the guest occupied or even entertained? Please, no customer satisfaction form or tool at this point. You want to create a good, last moment, not have them recollect the entire evening.

Gift & Farewell

We love gifts and we love a good farewell. Can you combine the two?

Make the server or the hostess walk the guests out, maybe even to the car, and make them hand over something - a small treat, a little note, a thank you card or coupon. Tell them the next time they visit or order for home delivery, the one dish they liked the most will be complimentary or 50% off.

It does not need to be about free stuff or discounts. You want to use the farewell, to remind them of the peak moment in the experience.

International travel to Thailand is back and Anantara Hotels Resorts and Spas is ready to welcome fully vaccinated guests with no quarantine requirements from 63 low-risk countries.

From Chiang Mai in the north, to the brand’s luxury properties in the capital of Bangkok, down to the islands of Phuket and Koh Samui in the south, Anantara guests are now welcome to visit any part of the country after meeting the governments health and safety requirements under the new ‘Test & Go’ scheme.

These requirements, amongst others, include proof of guests being fully vaccinated with an approved vaccine at least 14 days prior to arrival and producing a negative COVID-19 PCR test result issued within 72 hours before travelling. Upon touch-down in Thailand, a final COVID-19 test is conducted at the airport. Guests then spend one night in an Amazing Thailand Safety and Health Administration Plus (SHA+) certified hotel while waiting for their test result. Guests staying at an Anantara property in Bangkok will have their tests done in their room upon arrival for added convenience.

All Anantara properties that have been certified SHA+ have ensured a concerted effort to fully vaccinate all their employees and have reinforced the governments health and hygiene measures.  Anantara has also implemented the “Stay with Peace of Mind” programme ensuring a series of rigid brand health and safety guidelines are met and surpassed.

NEWS | Delhi's new excise policy hopes to organise the liquor industry

With the new policy coming into force, all the 849 liquor vends in the capital city will be handed over to the private sector.

While the new Excise Policy of Delhi for 2021-22 will see the government completely leaving the ground of liquor retail to private players in Delhi, it is hopeful that the retail rates of liquor in the city will remain the lowest compared to other States because of the play of “competitive market forces” in the field.

The new policy opens the scope for a hike in retail prices due to the removal of caps on retail margins for retailers of both IMFL (Indian-manufacture foreign liquor) and FL (foreign liquor), and a marginal rise in wholesale prices. However, the government and the excise department of the State feel that the competitive spirit of the private players will help keep the rates under check even after handing over the liquor retail to the private sector.

With the new excise policy coming into force, all the 849 liquor vends in the capital city will be handed over to the private sector. The government expects more efficiency to come into the sector and thereby improving the customer experience at the retail level and thereby growth in excise revenue for the State.

While the excise department, in consultation with retailers, will fix the MRP of the products, retailers will have the liberty to offer concessions and discounts to consumers.

Given the impact of the increase in wholesale prices, the government expects a natural increase in MRP of products across brands in the range of 8 to 9 percent. However, despite that increase, the government is hopeful that the retail rates of liquor in the city will remain approximately in the range of the 2020-21 rates.

In a recent note, the excise commissioner noted, “The changes brought about in the new excise policy will need reasonable time to play out in the market. In the overall interests of consumers of Delhi, to prevent interstate smuggling, the MRP for 2021-22 should as far as possible be in the same range as prevailing in Delhi. This can be achieved if the currently prevailing amount of Excise Revenue, VAT and retail margin as per the rates for the year 2020-21 is continued at approximately the same level in the year 2021-22.”
