PHUKET, Thailand (Jan. 18, 2022) – Meliá Phuket Mai Khao, a wellness-inspired resort that fronts Phuket’s longest stretch of sand with a chilled-out beach club and private pool villas has opened on Thailand’s largest island.

The resort is the second five-star property to be launched in Thailand under Spanish hotel group Meliá Hotels International as part of a brand roll-out in key destinations across the Kingdom.

Situated on secluded Mai Khao beach, commanding eight acres of Phuket’s northwestern coastline on the Andaman Sea, Meliá Phuket Mai Khao opened its doors for business on December 1.

The 30-suite and 70-villa resort, owned by residential real estate developer Phuket Villa Group, is a 15-minute drive to Phuket International Airport and near an array of attractions including Mai Khao Marine Turtle Foundation, Sirinat National Park, and Wat Phra Thong temple.

The resort’s design melds traditional and contemporary Thai aesthetics with a smattering of Mediterranean accents and uses a neutral palette of colours to complement Mai Khao’s sandy shoreline. High ceilings and decorative metal screens make the most of the natural surrounds and sunny, tropical weather.

GUEST SUITES AND VILLAS

Meliá Phuket Mai Khao’s contemporary, light-filled and spacious Mediterranean-inspired accommodations - with a focus on simple, clean lines and indoor-outdoor living - comprise 30 one-bedroom suites and 70 one-bedroom villas.

The resort has three accommodation categories. Each features a single bedroom and is differentiated by an anchoring amenity -- be it an outdoor bathtub, a private plunge pool or a wellness arrangement.

All of the suites and villas feature outdoor bathtubs, open-air showers and outdoor terraces to take advantage of Phuket’s tropical climate, which averages 28 degrees Celsius year round. Exquisite gardens and fixtures such as white stucco exterior walls also ensure secluded enclaves and the utmost privacy.

The 78sqm suites are complemented by cabanas and the 85sqm one-bedroom villas have private plunge pools.

At the top of the accommodation scale, the 15 wellness villas each feature an open-air Vitamin C shower, ultrasonic essential oil diffuser, GermGuardian air purifier, Tempur-Pedic pillows, aromatic salts for the outdoor bathtub, a fit ball and yoga mat. A highlight of staying at a wellness villa is a daily 60-minute massage.

Mod-cons in all of the accommodations include individually controlled air-conditioning, 43-inch LCD TV with satellite channels, Bluetooth speaker, Nespresso coffee maker and gourmet capsules and more.

The minibar has healthy snacks such as energy bars on request. Trays and tissue boxes made from banana leaves are among sustainable items in the suites and villas.

DINING

The resort’s diverse dining landscape comprises four outlets under the stewardship of culinary director Luca Mancini and adds a dash of Mediterranean flavor to Phuket’s culinary scene.

Adjacent to a beach pool framed with cabanas and sun lounges, the Gaia Beach Club celebrates Spain’s famed gastronomy by serving Mediterranean and fusion cuisine from an open kitchen and a creative cocktail selection from a long bar.

A warm and intimate setting adorned with timber finishes, SASA is an elegant all-day dining restaurant that specialises in international and Thai cuisine. SASA offers a healthy, freshly made breakfast and delectable Thai set lunches and dinners.

The Elyxr Café features a spacious lounge area with comfortable sofas and a selection of books and serves coffee and tea.

The Pool Bar is a swim-up affair at the centre of the resort that serves a range of refreshments including fresh juices, smoothies and cocktails.

SPA, WELLNESS AND RECREATION

Privately tucked away behind the lobby and Elyxr Café, Meliá’s signature YHI Spa is 300sqm and home to five treatment rooms. In addition to its extensive menu of massages, facials, body scrubs and wraps, spa therapists also provide poolside and in-villa treatments.

The resort will offer wellness packages that include healthy menus and freshly squeezed juices as well as activities such as meditation, yoga, and walks and cycling amid stunning natural scenery.

The fitness center is equipped with treadmills, ellipticals, exercise bikes, and weights machines.

The kids club Kidsdom has workshops to keep youngsters entertained and the resort also provides a babysitting service.

Recreational pursuits on offer range from horse riding on the beach, to scuba diving at Racha Yai, Koh Dok Mai, Phi Phi Island and Shark Point, to golf at the nearby Blue Canyon Country Club.

MICE FACILITIES

The resort’s conference facilities include a grand ballroom and two additional multi-function rooms at 231sqm. The Grand Ballroom totals 131sqm and caters to up to 100 guests for a standing cocktail reception or 88 guests for a sit-down dinner. The two adjacent multipurpose rooms are each 47sqm that seat up to 16 guests for a boardroom meeting.

The resort’s event planners provide customized catering to suit any occasion. Mini mindfulness sessions also enhance the wellbeing of attendees.

Let me recount a recent experience. My mother called our neighbourhood chemist, who has been looking after us for over 2 decades now, to order a hot water bottle/bag for her neck pain. He sent the bottle as ordered, but he also sent a balm. He called her to ask her to try it. 'it will help' he said.

It did help. It also made an extra sale for him, but that is secondary. 

Why is this amazing? He anticipated what the customer needed, not just what she wanted. He proactively provided it.

Three Steps Of Service according to The Ritz-Carlton Hotel Company Gold Standards are:

  1. A warm and sincere greeting.

  2. Use the guest's name. Anticipation and fulfilment of each guest's needs.

  3. Fond farewell. Give a warm goodbye and use the guest's name.

  • Guest Point Of View. Look at everything, from GPOV

You know your hotel lobby. You work there, you see it every day, you know where everything is, but that is not true for your guests. Is there enough signage?  

A guest once asked me 'why don't you have little lights as they have in aeroplanes, that tell you if the loo is vacant?'. In restaurants or spaces that have only one facility, this makes sense. It makes sure the guest does not need to keep checking and rattling the doorknob, which makes it very disturbing for the guest inside too.  

  • Be Proactive

Anticipation is a stay ahead of the curve game. If you change something or introduce something because of a customer complaint, that is not anticipation. It's when you create a solution that the customer just loves and thinks 'that's nice!' or 'that's thoughtful', then it is anticipation.

A restaurant kept some prescription reading glasses in a nice little box for guests who may not be carrying their own reading glasses with them. A very thoughtful touch to let your guests read the fine print on menus or bills. 

  • Take Bets

Start small experiments. We mentioned it before, and it is worth mentioning again. 

Here is one you can start today - If a guest visits the gym in the morning, prior to breakfast, be proactive, anticipate that she may want a healthy breakfast option and present it to her when she orders via In-Room Dining or visits your Coffee Shop.

It is a small bet you are making. One that says, this guest seems someone who might want a healthy option. It may not be true. If the guest is anything like me, probably a bigger breakfast is in order because of the morning workout. Either way, you will find out something about your guest and they will appreciate the thoughtfulness shown.

  • Listen & Then Go Be Responsive

VOC - Voice Of The Customer is a powerful concept. I always tell my clients, if you collect any information or feedback, it automatically creates an expectation in the mind of the customer. Answer this, how many times did a business ask you for your birthday and not wish you? That is a gap.  

More importantly, listen for the unsaid. Respond to the obvious, but also, think about the not-so-obvious. Search for absurd or funny reviews and I am sure you will find a lot of them. I did. Here is one. I really think highlights all the points I am trying to make:

If you were the museum director, you throw this into the 'they don't know what they are talking about' pile or, look at this as the future coming to you faster than you think and create engaging content around your displays.

  • Look To Add Value

This is a brilliant way to look at Anticipation. At every step of the process, for every interaction, if you can ask the question 'how can I add value here?' you will have done a super-duper job of it.

For example, Imagine you are visiting a country or city for the first time. You book a hotel car to pick you up from the airport. Wouldn't it be nice if your valet told you approx how much time it will take to get to the hotel? The pilots of all major airlines tell you that, even though you know from the booking, the ticket etc. They tell you again, in the flight, coz you may be on multiple flights in a day. It's just a nice thing to do. It adds value.

Make Front Desk Predict Customer Behaviour. 

Ok, this is going to sound a little out there, and yet, it is something I really think you should try. As a leader, this will make work fun for your team and a little challenge never hurt anyone.

The idea is simple: After a guest checks in, ask the front desk or the guest relations team member who interacted with them to make some predictions. Will the guest eat in the hotel restaurant? Will the guest use the Spa? Is the guest going to call and ask for a room change?

Log these down. The team member who gets the maximum predictions right at the end of the month gets a reward.

This powerful exercise will 10X the ability of your team to anticipate.

FHRAI Pleads To The PM For Urgent Intervention, Requests For Sector Specific Special Relief Package

India’s apex hospitality Association and the voice of the hospitality industry - Federation of Hotel & Restaurant Associations of India (FHRAI) has submitted a representation to the Hon’ble Prime Minister – Shri Narendra Modi requesting urgent attention towards the deteriorating situation of the hospitality and tourism sector. Flagged as the ‘Most Distressed Sector due to COVID-19’ in the country, the Association has pleaded the PM to immediately provision a sector specific special relief package to enable the sector in its fight for survival. With 30 per cent hotels and restaurants across the country permanently shut over the last two waves of the pandemic, the remaining operational establishments continue to run in losses even today. The hospitality industry has reported losses of a whopping sum of Rs.1.40 lakh crore with around 50 million jobs lost since the beginning of the pandemic.

“The third wave of COVID has ripped apart the hospitality industry. The recent restrictions came right in the middle of Christmas and New Year festivities and preceded the marriage season. The revenue loss incurred due to the cancellations of celebrations and bookings to the hospitality industry is conservatively estimated at Rs.200 crores. Half of the hospitality sector was on the ventilator caused by the ripple effect of the lockdowns and restrictions during the first and second COVID waves. The sector somehow tried to tide over the crisis by availing the credit facility provided by the Government and infusing own capital. But then, all of a sudden, the third wave came as a debilitating blow. FHRAI has knocked on the doors of all the concerned Ministries for bringing them up to speed on the existential crisis faced by sector. At present, the entire hospitality industry is hanging on by a thread and only a special relief package can reinvigorate the industry. We plead to the Hon’ble PM to offer a sector-specific special relief package for the survival of the Tourism and Hospitality sector,” says Mr Gurbaxish Singh Kohli, Vice President, FHRAI.


The FHRAI has stated that the successive waves of the pandemic and disruptions caused by it have created a volatile economic environment in the sector. Being a highly capital-intensive industry, hospitality has to manage a lot of overhead expenses even while it is not functioning.


“After the second wave had subsided and restrictions partially withdrawn, in the beginning of the third quarter of FY 2021-22, hotel and restaurant businesses saw a marginal rise in occupancies and footfalls. By the middle of December 2021, occupancies in resorts and holiday destinations had reached 60 to 70 per cent, while in the city and corporate hotels it touched approximately 25 to 30 per cent. Likewise, restaurants had just started to return to normalcy as corporate offices and businesses had opened up. Although this was much lower than the pre-COVID levels, the signs were encouraging. But, things started changing for the worse by the end of December and since then there has been a drastic plummeting of rates and occupancies in hotels and footfalls in restaurants. City hotels are back to 10 to 15 per cent occupancy accompanied by low room rental rates and restaurants are deserted. Resorts and holiday destination hotels that were otherwise doing well have drastically fallen below 40 per cent,” adds Mr Kohli.


FHRAI has stated that the present restrictions imposed are almost equivalent to a lockdown. Business in hotels and restaurants is almost nil across all major locations in the country. The Association has pointed out that such restrictions compound to the existing crisis causing extensive damages to the sector. It has estimated nothing less than five years for the industry to return to the pre-pandemic levels.

“It is imperative for the hospitality industry to have an environment conducive for businesses to sustain. Frequent lockdowns and restrictions coupled with travel restrictions are anti-business especially, for the hospitality and tourism sectors. Every time the situation eases a bit and the industry receives a glimmer of hope a new hurdle presents itself. The cyclical ‘stop-start-stop’ arrangement hasn’t allowed the industry to do anything. Hotels and restaurants are in a state of suspended animation since 2020. The current situation also has a cascading impact on the employment in the sector. Apart from another round of lay-offs and pay cuts, the situation will pose another serious threat before the industry in the form of unavailability of trained manpower to work in the sector. The volatility in the sector and continued disruptions has dissuaded people to continue working in the sector and large numbers have moved to other sectors for viable employment opportunities. With another tourist and business season washed off, the sector has nothing to hope for now. It is staring at a dark future in the midst of increasing debt burden, obligations and statutory liabilities with no means to meet them. Under the present circumstances, without adequate support from the Government, many more hospitality establishments in the country would be compelled to shut shop,” concludes Mr Kohli.

On my quest for healing through food, I chanced upon this quaint restaurant located in the Mumbai Suburbs of Malad, known as Sawdshakti. Little did I know that this would become such a great gastronomical experience.

Ayushakti’s Swadshakti restaurant is located right amid a busy locality yet is a pleasant surprise for those looking for a peaceful, nutritious, and sumptuous meal. The restaurant is associated with a renowned chain of Ayurveda centres famously known as Ayushakti and shares the space in their facility. A bungalow with sprawling green trees and nature sounds of a chirping bird, and if that still doesn’t get you excited, ask the Chef for the masala tea/coffee. A delicious yet healthy kadha welcomed us that got my digestive juices flowing and calmed my Kapha.

They boast a vast menu ranging from Indian vegetarian to continental food and is often combined to make customized dishes. They serve the clients that visit for their treatments or walk-ins who can surely enjoy the impeccable food. Their famous Thali is fully-loaded with nutritious thali maize, makai, and a whole grain roti with nutrient-loaded six vegetables. Along with multiple side dishes such as moong bean papad, energy curry, their yellow moon bean curry cooked with coconut curry will kick you out of your afternoon siesta.

Their generous portion sizes make the meal affordable and increase the entire well-being value that one receives. One which makes you feel light even after hours of consuming a whole thali! In a surge of emerging food choices to embrace a healthy lifestyle, especially with the changing times due to the pandemic, Ayurveda has stood relevant and its guiding principles are incorporated carefully during the cooking process.

For example, Chef talks about the in-house Ghee as a replacement for oil or using jaggery to make sweets nutritionally packed, yet those that help you satiate the sweet cravings. Another example includes boiling the Rajma (red kidney beans) along with a white and red pumpkin to balance the Vata element of the Rajma, which also helps cut down the acidic nature. Kokum replaced tomatoes in this dish yet didn’t taste any different than my Grandma’s secret Punjabi recipe, which so far I know as best.

Accor has appointed Philip Mahoney as Vice President of Food & Beverage for India, Middle East, Africa and Turkey, with the main responsibility to drive the group’s strategy in the region: making food and drink the heart and soul of each of its hotels.

Throughout his 30-year career, Philip has managed hotels in the UK, Croatia and Mauritius for Malmaison, Lonrho, De Vere Deluxe, Radisson Blu and Regent Hotels, before moving into a regional responsibility for Radisson Blu and Hotel Missoni in the UK and Ireland. He then became Vice President Food & Drink for the Radisson Hotel Group for Europe, Middle East and Africa, with an overseeing role for the US and Asia Pacific, based in Brussels, Belgium, a position he held for 6 years.

His last role was Chief Operating Officer for Riverstone, a Goldman Sachs portfolio company developing luxury apartments and hospitality experiences in London, UK, before moving to Dubai to take on his current post.

Some of the common characteristics of a good tart include that a Tart is a dessert or savory preparation which has a bottom crust and shallow sides. The crusts are made from pastry dough, which is usually made using flour, sugar, unsalted butter, and ice-cold water. The goal is to get a thick, firm, and crumbly crust. The filling is directly added to the crust, which is later baked to make it settle down. One of the most common tart bases used for a long time now is shortcrust pastry, while a Shortcrust pastry dough is a simple recipe used for pies, tarts, and quiche. It calls for just four ingredients—flour, fat, salt, and water—and the ratio of flour to fat is usually 4-to-1 [ has also been modified and or redesigned by many bakers as well] Shortcrust pastry is easy to make and can be prepared either by hand or with a food processor.

We also come across products made with a base of puff pastry/ flaky pastry tarts/ filo pastry sheets can also be used to prepare small tarts shells/ cup like shapes to fill with savoury delicacies and more. The best option today we all look for is the ready to use tarts which are available in a nearby market place. We prefer to avoid doing lengthy steps and time-consuming recipes sometimes in that case this convenience cooking concept really works well for parties / get together etc.

Recipe-1] BEET AND WALNUT TARTS

Ingredients:

Tart shells /short crust/ canape cups- 12- 16 pieces

For the stuffing:

Oil- 1 tsp

Butter-1 tsp

Garlic-1 tsp chopped

Shallots- 5-6 no sliced

Boiled beetroot- 2 medium-sized, peeled, small dices

Boiled sweet corn-1/2 cup

Feta cheese- 2-3 tbsp.

Salt and pepper to taste

Fresh parsley- 2 tsp chopped

Chaat masala-1/2 tsp

For the final dressing:

Lime juice- 2 tsp

Honey- 2 tsp

Chili flakes- ½ tsp

Spring onion greens- 2 tbsp. chopped

Walnuts-2 tbsp. chopped

For non- veg options:

Boiled chopped chicken- ½ cup

Boiled eggs- 1-2 no cut into small pieces

Method:

1. Prepare all the ingredients for the tarts as per the recipe.

2. The tart shells need to be kept ready to use.

3. To prepare the stuffing for the tarts, heat oil and butter in a pan, add in garlic and shallots and saute them for a few seconds.

4. Add in the corn, beetroot, seasonings, herbs and cook it for 2 mins, turn off the flame and allow to cool a little.

5. Now add in the final dressing ingredients along with feta cheese and walnuts into the mixture, keep the mixture at room temperature.

6. Just before serving the tarts the prepared filling can be stuffed or spooned into the tart shells and can be garnished appropriately and arranged on a platter.




Recipe- 2] CHICKEN CHEESE TARTS

Ingredients:

Short crust tart shells/ filo tarts/ canape cups- 12- 16 pieces

For the stuffing:

Oil-1 tsp 

Butter- 1 tsp

Maida- 2 tsp

Milk- ¾ cup

Cheese- 2-3 tbsp. grated

Boiled chopped chicken-1 cup

Salt and pepper to taste

Red/yellow/ green capsicums- 2-3 tbsp. chopped

Mixed herbs- ¼ tsp

Chili flakes- ½ tsp

Tomato ketchup-2 tsp

Capsico sauce-1/2 tsp

Parsley- 2 tsp chopped

Sliced black/ green olives- 2 tsp

Method:

1. Prepare all the basic ingredients needed for the filling as per recipe.

2. Heat oil and butter in a pan add in the maida and cook it for 5- 7 seconds add in hot milk and stir well, add in the chicken pieces, a little fresh cream as well to enrich the filling, add salt, pepper, herbs, chili flakes.

3. Cook the mixture for 2-3 mins, add capsicums/ olives etc as per choice and mix well, turn off the flame and allow to cool a little.

4. Just before serving place the prepared filling into the tart cups or shells, top with a little grated cheese and place under a hot oven/ salamander to lightly melt the cheese, serve warm.





Recipe- 3] ITALIANO TARTS

Ingredients:

Short crust tarts/ canape cups/ filo tarts – 12-18 pieces

For the stuffing:

Oil-1 tsp

Butter-1 tsp

Garlic-1 tsp chopped

Onion-1 small chopped

Ham/ salami- ½ cup chopped

Boiled macaroni pasta-1/2 cup

Green/red/yellow capsicums-2-3 tbsp.

Fresh cream-1/4 cup

Cheese-2-3 tbsp. grated

Capsico sauce- 1 tsp

Salt and pepper to taste

Fresh basil/ mixed dried herbs- 6- 8 no/ ½ tsp

Chili flakes-1/2 tsp

Parsley-2-3 tsp chopped

For veg options:

Crumbled paneer/tofu- ½ cup

Capsicums-2 -3 tbsp. chopped

Soya keema- ½ cup cooked

Boiled mashed potatoes-1/2 cup

Method:

1. Prepare all the ingredients as per the recipe.

2. Keep the tart shells ready to use and then start the filling.

3. Heat oil and butter in a pan, add in the garlic and onions and saute for a few seconds, add in the non-veg/ veg ingredients as per choice and add seasonings, herbs, chili flakes.

4. Cook the mixture for 2 mins, add in the pasta, capsicums, and fresh cream, little cheese and mix well, turn off the flame.

5. Place the filling into the tart shells top with a little more cheese and bake in a pre-heated oven at around 150 degrees celsius for 8-10 mins and garnish with fresh herbs and serve.






Recipe- 4] SPINACH AND EGG TARTS

Ingredients:

Canape cups/ short crust tart shells/ filo tarts- 12- 16 no

For the filling:

Oil-1 tsp 

Butter-1 tsp

Garlic- 1 tsp chopped

Onion-1 small chopped

Green chili-1 tsp chopped

Spinach-1 cup, blanched and chopped

Paneer/tofu for veg options-1/2 cup crumbled

Boiled chopped eggs- for non-veg- 2-3 no

Salt and pepper to taste

Mixed herbs- ½ tsp

Flax seeds/ pumpkin seeds- 2 tsp

Chili flakes-1/2 tsp

Capsico sauce- ½ tsp

Tomato ketchup-2-3 tsp

Cheese-2-3 tbsp. grated

Fresh cream-1/2 cup

Mixed fresh herbs for garnish

Method:

1. Prepare all the ingredients as per the listed ones in the recipe.

2. The tart shells to be kept ready to use beforehand.

3. Heat oil and butter in a pan saute the garlic and onion for a few seconds add in the spinach, salt, pepper, herbs, chili flakes.

4. If using paneer or tofu add them in or add in the eggs, mix well add fresh cream and little grated cheese or cream cheese and mix well.

5. Add in the tomato sauce, Capsico and turn off the flame, add in the choice of seeds as mentioned for a little crunch.

5. Now place the filling into the tart shells, top it with a little cheese and flash the tarts into a hot oven for a few mins, around 150 degrees celsius for 6- 8 mins.

6. Remove the tarts from the oven, place them on a serving platter and garnish them appropriately with olives, jalapenos, fresh herbs, micro-greens etc and serve.



Recipe- 5] TIC TAC TOE SPROUT TARTS

Ingredients:

Short crust tarts/ canape cups/ filo tart shells- 12- 16 no

For the filling:

Oil- 1 tsp

Butter-1 tsp

Garlic- 1 tsp

Onion-2 tbsp. chopped

Green chilies- 1 tsp chopped

Boiled/blanched sprouts- 1 cup

Cucumber-1 small, peeled and chopped

Tomato -1 small, chopped

Mint leaves- 12-15 no

Salt and pepper to taste

Roasted crushed cumin- ½ tsp

Chaat masala-1/2 tsp 

Tamarind chutney- 2-3 tsp

Schezuan sauce-1-2 tsp

Tomato sauce- 1-2 tsp

Chopped coriander-2 tsp

Anardana-2-3 tbsp. fresh

Salt and pepper to taste

Mixed herbs-1/4 tsp

Chili flakes-1/2 tsp

Nylon sev/ bhujia sev- 2-3 tbsp. for garnish

Method:

1. Prepare all the ingredients as listed for the recipe for the tarts.

2. Keep the tart shells ready to use and then start the filling.

3. Heat oil and butter in a pan saute the garlic and onions for a few seconds, add in the blanched sprouts or raw as well can be added for a better crunch.

3. Add in the salt, pepper, herbs, chili flakes, tomatoes, and cook for 2-3 mins, add in green chilies and turn off the flame.

4. Now add in the sauces, chutney as per taste and choice, add coriander, cucumber and toss it all up.

5. This filling can be served cold as well in ready to eat tarts/cups. Assemble them on a serving platter, garnish with fresh anardana and garnish with mint leaves etc and also add a dash of chaat masala, sev, bhujiya, grated cheese if desired and enjoy it.






Recipe- 6] ALOO BHUJIYA TARTS

Ingredients:

Canape cups/ ready to use tart shells- 12- 16 no

For the stuffing:

Boiled potatoes- peeled and diced

Boiled sweet potato-1/2 cup cubed

Oil-2 tsp

Garlic-1 tsp chopped

Ginger-1 tsp chopped

Green chilies -1 tsp chopped

Spring onion-2-3 tbsp. chopped

Salt and pepper to taste

Water-4-5 tbsp.

Soy sauce- 2 tsp

Red chili sauce-1 tsp

Green chili sauce- 2 tsp

Chaat masala-1/2 tsp

Tomato- 1 medium sized, chopped

Lime juice- 2 tsp

Aloo bhujia- ¼ cup for garnish

Mint and coriander leaves- 2 tbsp. chopped for garnish.

Method:

1. Prepare the tart shells/ canape cups in advance and keep them ready to use.

2. To start the recipe for the filling, heat oil in a pan add in the garlic, ginger, green chilies, onions and saute for 1 min.

3. Add in the potatoes, sauces, salt and pepper, herbs etc to taste and mix well. Add a little water if needed.

4. Cook the potato mixture for 2 mins, turn off the flame, add in the tomatoes, chaat masala, lime juice, mint and coriander and mix well.

5. Just before serving, place the aloo mixture into the canape cups and garnish with mint, coriander and aloo bhujiya and assemble on a serving plate, ready to go.
