Foie Gras Phở and Abalone on the Menu at The Anam Mui Ne’s New Fine-Dining Pop-Up

MUI NE, Vietnam (Sept., 2026) – Foie gras phở consommé, chargrilled abalone and pan-seared turbot with lotus-seed purée are among highlights of The Anam Mui Ne's new fine-dining pop-up, where just eight guests take their seats of an evening.

Launched at The Indochine Restaurant, the intimate experience is staged every Tuesday and Thursday from 6-10pm in a private space adjoining the restaurant’s outdoor terrace. With just four tables accommodating a maximum of eight guests, the setting gives the resort’s chefs a stage for more ambitious and experimental cooking in an unusually intimate alternative to traditional resort dining.

At the helm is Chef Le Huu Nghia, who has crafted two five-course tasting menus, based on seasonal ingredients, by coupling European techniques with Asian influences. The menus unfold as a progression of contrasting flavours, textures and temperatures, with optional curated wine pairings accompanying the journey.

Tuesday's menu begins with a nori tart with salmon belly tartare, salmon roe, gherkin, shallot, sesame, ginger and wasabi mayonnaise before moving to chargrilled abalone with homemade oyster sauce and pickled kombu. After a daisy soup with vegetable broth and bonito flakes, and pan-seared foie gras is paired with fig, apple purée, pistachio and candied ginger, a grilled filet mignon with red wine sauce, carrot purée, mushrooms and baby broccoli forms the heart of the menu. Petit fours send the dinner on a sweet note.

Thursday’s menu starts out with a shrimp-wrapped scallop with caviar and coriander aioli and pickled shallots before a beef filet mignon tartare accompanied with ginger jam, nori and lemon mayonnaise. Among the menu's most distinct creations is Chef Nghia's foie gras phở consommé with shiitake mushrooms and truffle oil, followed by chargrilled hamachi crudo with ponzu reduction, pickled jalapeño and guacamole.

Pan-seared turbot with lemon-ginger sauce, lotus-seed purée, pickled coconut tubers and ikura anchors the Thursday menu before a strawberry mille-feuille with goat's cheese mousse provides its finale.

For The Anam Mui Ne, the concept is as much about intimacy as gastronomy.

Lime juice- 2 tsp
Ginger juice- 2 tsp
Honey- 1 tbsp.
Rock salt/ pink salt- ¼ tsp
Mint leaves- 10-12 no

Method:

  1. Prepare all the ingredients for the detox juice.

  2. Chill the glasses to serve the same ahead of time.

  3. In a mixing bowl or tumbler combine together the above ingredients and give it a nice stir.

  4. We can also add lemon slices/ orange segments etc for more Vitamin c and color contrast in the glasses.

Ingredients:

Fresh pomegranate seeds- ½ cup
Spring onions- 2 diced
Lime juice- 2 tsp
Green chilies- 1 tsp chopped
Tomatoes- 1 med sized cubed
Cucumber- 1 peeled and cubed
Chili flakes-1/2 tsp
Mixed herbs-1/2 tsp
Fresh basil- 8-10 no.
Feta/ cottage cheese/ processed cheese- ¼ cup cubes
Tomato ketchup-2 tsp
Red chili sauce- 2 tsp
Honey- 1 tsp
Coriander and mint leaves- 2 tbsp.
Olives- 2- 3 tbsp. sliced
Parsley/ micro greens- 2 tbsp. for plating and garnish
Nacho chips/ crackers to serve with as desired.

Method:

  1. Prepare all the ingredients for the salsa snack.

  2. In a mixing bowl combine together the ingredients and give them a nice toss.

  3. Add a little white vinegar or white wine if desired as well.

  4. Arrange the nacho chips/crackers in a serving plater or platter and spoon up the pomegranate salsa into salsa bowls and garnish it.

  5. Offer a little cheese sauce as well along with the salsa and the nachos for a perfect filling delicious snack.

Recipe-3] QUINOA POMEGRANATE BOWL

Ingredients:

Fresh pomegranate-1 cup
Quinoa or brown rice may be used- 1 cup cooked.
Olive oil-1 tbsp.
Butter- 1 tsp
Garlic cloves- 2-3 chopped
Green chilies- 2 tsp chopped
Shallots/onion- 4-5 / 1 small chopped.
Bayleaf- 1 no
Peppercorns- 3-4 no
Salt and crushed black pepper to taste
Roasted crushed cumin powder- ½ tsp
Lime juice -2 tsp
Chat masala-1/2 tsp
Roasted nuts- 2 tbsp. assorted
Flax seeds/ melon seeds/ pumpkin seeds- 2 tsp
Boiled American corn- ½ cup
Assorted blanched veggies- carrots/ beans/ cauliflower- 1 cup mix.
Water/veg stock-1/2 cup
Mint/coriander/parsley/basil- 2-3 tbsp.

Method:

  1. Prepare all the ingredients for the recipe.

  2. Ensure the quinoa or brown rice is cooked and cooled before continuing with this recipe.

  3. Heat oil and butter in a pan add in the Bayleaf, peppercorns, shallots or chopped onions, garlic, chilies and give it a nice mix.

  4. Add in the assorted veggies of your choice with corn and add seasonings, herbs, chili flakes to taste, also add in the spices and little water and allow to simmer.

  5. Cook for 2-3 mins and add in the cooked quinoa or brown rice and turn off the flame.

  6. Finally add in the fresh pomegranate seeds, lime juice, mint/coriander/basil and the nuts and seeds and serve as a healthy mini meal/ snack.

Recipe-4] ANARI DESI CHAAT KA MAZAA

Ingredients:

Fresh pomegranate seeds- 1 cup
Papdi/flat Puries- 10-12 no.
Boiled crumbled potatoes-1/2 cup
Khara boondi- ½ cup
Samosa/ Kachories- 2-3 no crumbled.
Boiled chickpeas/moong etc- ½ cup
Sev-2-3 tbsp.
Chaat masala-1/2 tsp
Lime juice- 2 tsp
Chopped onion- 2- 3 tbsp.
Chopped tomatoes-2-3 tbsp.
Chopped green chilies- 1 tsp.
Beaten curd- ½ cup
Tamarind chutney- 2-3 tbsp.
Red chili garlic chutney- 2 tsp
Green chutney- 2 tsp
Mint and coriander leaves- 2 tbsp.

Method:

  1. Prepare all the ingredients for the chaat.

  2. Assemble the chaat into serving plates just before service.

  3. Chaats are a versatile concept and can include any variety of ingredients available on hand and they just blend in well with the toppings of chutneys etc.

  4. For non-veg options pick and choose between sliced chicken tikka, seekh kababs, saute prawns with butter garlic, roast sliced meat or simply boiled eggs.

  5. Add in the chaat toppings and chutneys to taste and garnish the chaat with fresh pomegranate seeds, mint and coriander add a splash of fresh lime juice and serve immediately.

Recipe-5] REVIVAL BOWL OF GOODNESS

Ingredients:

Fresh pomegranate seeds-1 cup
Curd/yogurt- 2 cups beaten – sweet or sour curd may be used
Crushed digestive biscuits/oatmeal cookies- 3-4 no
Chia seeds/ sunflower seeds- 2 tsp
Assorted chopped nuts- 2 tsp
Dates- 2-3 chop
Mango/ Pineapple/ apple/ guava/ pears/ grapes- assorted fruits can be added to this bowl of goodness as per seasonal availability.

Method:

  1. Prepare all the ingredients for this quick fix dessert/ bowl of goodness.

  2. Individual serving bowls or a pudding bowl may be used to set this recipe.

  3. Pour the beaten up curd at the base of the bowl, sprinkle the crumbs or soil made from the digestive biscuits, add in the fruits cut into small pieces, dates, sprinkle seeds and nuts of your choice and repeat the layers.

The Making of Bombay Island - From Curiosity to Craft

Rupal Jain’s journey into coffee began while studying to become a Chartered Accountant in Mumbai. Since coffee was, in her view, the foundation of every good cafe, Rupal decided to understand the craft herself. New Hyatt research finds hotel rooms have become one of the few places travelers can truly switch off - underscoring the role of Hyatt’s Essentials portfolio in delivering the comforts business travelers value most

( 2026) – Business travel doesn't end when the workday does. New research commissioned by Hyatt finds that 90% of business travelers say their hotel room is the only place they truly feel "off the clock" during a work trip.

Nearly half (47%) would rather spend free time relaxing alone in their room than attending optional networking events. And some travelers are going to creative lengths to protect that time – including blocking fake meetings on their calendars or inventing excuses to skip optional work events, from caring for a pet anaconda to video calls with family.

The findings underscore the increasingly important role hotels play in supporting business travelers beyond providing a place to sleep. The tactics may be humorous, but the motivation is relatable: for many travelers, the hotel room is where the workday finally ends. Hyatt's Essentials portfolio, including the Hyatt Place, Hyatt House and Hyatt Studios brands, is designed to deliver the everyday comforts and conveniences travelers value most, wherever their journeys take them.

Ramee Group of Hotels relaunches Tanatan, its signature restaurant as pure vegetarian

The new version will present a wider, hyperlocal pure veg menu led by Chef Roshan Seth, with 12 new signature dishes, a dedicated chaat section, and refined Indian, Chinese and Continental options

Indore,  September 2026: Ramee Group of Hotels has announced the relaunch of Tanatan, its signature dining destination in Indore, with a refreshed pure vegetarian identity that includes an expanded culinary programme and a reimagined guest experience. The relaunch is led by Chef Roshan Seth, Corporate Executive Chef and General Manager – F&B Operations, who has overseen the redevelopment of the menu from the ground up.

The restaurant has added twelve new pure vegetarian signature dishes, along with a separate chaat menu built to appeal to Indore's palate for bold, punchy flavours. The kitchen has also introduced Chinese and Continental options for guests who want to try something different. 

Commenting on the relaunch, Saurab Gahoi, Senior Vice President, Ramee Group of Hotels, said, “Tanatan has always been about creating memorable dining experiences. With this relaunch, we have made Tanatan a fully vegetarian restaurant. This relaunch gives the kitchen more room to work, and gives guests more reasons to choose Tanatan, whatever the occasion.”

Among the new additions is the Saunfiyani Paneer Dum Biryani, an Awadhi-style preparation that leans on the sweetness of fennel rather than heavy spice. Chef Seth developed the dish for guests who prefer a milder, more layered biryani over the sharper, chilli-forward versions common on most menus. The kitchen has paired it with dishes such as the Kaddu and Kalonji Ka Shorba, a pumpkin soup built around the flavour of khatta meetha kaddu served in liquid form, and the Benarasi Tamatar Ki Chaat, a tangy, spiced tomato broth drawn from Old Banaras street food traditions. On the dessert side, the Gulab Tres Leches brings together gulkand and three types of milk preparation, finished with rose and saffron, meant to evoke the experience of a betel leaf without the leaf itself.

Speaking about the new menu, Chef Roshan Seth said, “We looked closely at what Indore already loves to eat and built the new menu around that. Nothing here is meant to be complicated. Every dish is 100% vegetarian and has a reason behind it, whether it comes from an old family recipe or a street food memory. We wanted guests to taste something familiar, even in the dishes that are entirely new to the menu.”

The team has kept Tanatan's core identity of hyperlocal, playful food intact while reinterpreting it through a 100% vegetarian culinary lens. Ramee Group expects the new offerings to draw both long-time regulars and first-time visitors over the coming months.
