shoot where every part of ingredient is utilized to create a dish and nothing goes to waste from the

The Root to Shoot explains the need of the nutrients from every bit of the vegetables. This exactly

Jhakaas, a modern Indian delivery brand created during lockdown, has launched its first bricks and mortar site on Brockley Rise in London.

Rajasthan born Michelin Plate Winner Chef Dayashankar Sharma recently launched a new delivery service and Home dining experience with his new brand Jhakaas in London that brings fine Indian food.

The kitchen is led and owned by Chef Dayashankar Sharma who brings his Michelin-starred experience and gives a contemporary twist to some popular classics. Jhakaas, a modern Indian delivery brand created during lockdown, has launched its first bricks and mortar site on Brockley Rise in London.

Trained from honing an impeccable reputation right from the beginning across 32 years of culinary experience, Chef Dayashankar Sharma has become recognized for pairing time-honored tradition with contemporary ideas and creating his food with full commitment and passion for every occasion. Opening nine months to the day after Heritage, Jhakaas offers a food menu that takes its inspiration from India’s four major cities – Delhi, Bombay, Kolkata and Chennai. Chandiwala Launches Scholarship Scheme For Hospitality

This scholarship aims to provide financial support to one of the deserving meritorious and underprivileged students every year.  This Memorial Scholarship Fund will offer renewable, four-year scholarships to students with financial needs who display academic achievement.

Gordon Ramsay opens pizza restaurant at Atlantis, The Palm

Gordon Ramsay has opened his third restaurant in Dubai – Gordon Ramsay’s Street Pizza. Envisioned as a more relaxed venue, Street Pizza offers unlimited pizza by the slice and will host live DJ performances every night of the week.

The new outlet will be next to his existing Bread Street Kitchen in Atlantis, The Palm. Made in the showcase central pizza oven, guests can choose from five pizza combinations. Signatures include Margherita, pepperoni, charred aubergine, and corn and chorizo, along with a daily special, with options including pulled lamb or wild mushroom.

Ramsay said: “Pizza doesn’t need to be complicated, and I’m ready to introduce Dubai to simple, delicious bottomless pizza – served by the slice so guests can enjoy as much of our signature toppings as they like. I believe in supporting growth, and more importantly, opening really great places for people to eat and have fun. I invite everyone to come and enjoy fantastic pizza, listen to the best DJs, and have an amazing time.”

His other Dubai restaurant – Hell’s Kitchen – is at Caesar’s Palace on Bluewater’s Island and is at a different price point to his two Atlantis outposts. His new outlet offers bottomless pizza for AED95.

Atlantis has 35 individual restaurants, bars and a beach club, with venues from Gordon Ramsay, Nobu Matsuhisa and Giorgio Locatelli. The resort serves 4.4 million dining guests every year and, with the addition of Atlantis, The Royal in 2021, Atlantis Dubai will be home to more celebrity chef outposts than any hotel in the world. 

NEW LAUNCH | Cocoberry soon to announce FMCG products, to open 200 outlets

10 outlets are already in line and will be opened soon, covering Srinagar, Dimapur, Nagaland, Kolkata, and Faridabad.

The frozen yoghurt chain Cocoberry is expanding into the FMCG sector. The products are right now in stealth mode and will be launched in Q3 2022. The company wants to expand to 200 outlets in India, mostly company-owned. The company is expanding after a decade of operations in Delhi NCR while having a very strong and retained customer base. There are 10 outlets that are already in line and will be opened soon, covering Srinagar, Dimapur, Nagaland, Kolkata, and Faridabad. Launched in 2009, Cocoberry specialises in frozen fresh yoghurts and also offers beverages, sandwiches, and more.

“An acquired taste strategy is adopted and the outlet is opened to its customers. Once they begin to flow, a basic market activation and a successful launch are undertaken. Month on month, growth is recorded,” Laksh Yadav, CEO, Cocoberry India commented.

Yadav informed that the brand is showing better response in tier 2 cities as well. “If I compare to Delhi NCR, Mumbai, Bengaluru, for a brand that resides in South Delhi and in a niche area of Delhi, Gurgaon, or Noida, we have been further working in Srinagar, Kanpur, and Jamshedpur, and right now we are opening in Dimapur and Kolkata as well” he added. The company is working with a lot of tier 2 cities, and they are showing a good response.

India's frozen dessert market is projected to grow at a CAGR of over 19 percent by 2023, on the back of rising GDP per capita and growing demand from expanding middle-class population.

While choosing locations, Yadav stated that with a vision for each outlet to perform for a longer time, the company purposely give up on the mall location because of the management changes, the rental changes etc. “I would say the first thing we look for is a good high street in a good residential area, and that is how we get good retention. For example, I would prefer GK1 market over Saket mall,” he added.

For each outlet to reach its break-even point it takes roughly around 18 to 24 months, rentals being the major factor. “For a franchise to break even, since our capex is quite low compared to the other brands, I have to compare them with any other brand. That is the only way a franchise would understand,” he commented.

Ratnani and his team plan to expand Speak Burgers, an online delivery brand, across Mumbai and then India.

Chef Vicky Ratnani along with actor Kashishh Rajput, and entrepreneur Alberto Bestonso has announced the launch of a new burger brand, Speak Burgers. Currently operating out of Pali Hill in Bandra, Mumbai, Ratnani and his team plan to expand this delivery brand across the city and then across the country.


Speak Burgers is presently equipped to handle about 200-300 orders per day, and the brand plans to have a company-owned central kitchen in every city and franchise at least 10 outlets in each city. “We will supply the franchise outlets with our products to ensure quality and consistency,’ Ratnani informed.

Ratnani feels that burgers have tremendous potential in India. “Looking at the growth of the other international burger brands in India which have shown that this is a over a billion-dollar industry and I think burgers are the future vada pav,” he added.

The Indian market is expanding now more than ever and global brands are finding this to be the perfect time to tap into the market. As of now, there are only a few burger chains that have made their presence felt. With Speak Burgers, the team aims to give the consumers an authentic premium gourmet burgers experience.

“The most important aspect for the burgers to reach the customers in perfect condition is the bun. At Speak Burgers, we have put in lots of research and efforts to create a perfect bun that has the perfect blend of taste, texture and consistency, which can hold the sauces and toppings without breaking, becoming soggy like most other burgers. Visit Maldives | Maldivian to commence direct flights connecting New Delhi with Maafaru & Male from Oct 21

Flights on the Delhi to Maafaru route will operate on Wednesdays, Fridays, and Sundays. The direct flight will offer the fastest connection for Indian travelers looking to holiday in North Maldives luxury resorts.

Maldivian, the national carrier of the Republic of Maldives, will commence direct flights from New Delhi to Maafaru and Male from October 21, 2021. Flights on the new route, New Delhi to Maafaru, will operate on Wednesdays, Fridays, and Sundays. The airline will be operating A321 and A320 aircraft on this route offering both business and economy class configuration.

Maafaru International Airport located in Noonu atoll was opened in 2019 and is also managed by Island Aviation Services Limited (IAS). With three direct weekly flights to Maafaru, another international hub of the largest source market will connect North Maldives to India.

The Sattvik Council of India, in partnership with the international auditing/certifying company, Bureau Veritas, brings out standards and certification for vegetarian food.

The Sattvik Council of India has announced the world's first certification programme for vegetarian food in partnership with world’s leading auditing and certifying body, Bureau Veritas. Through this, both Sattvik Council and Bureau Veritas, plans to offer certification to vegetarian food globally, in the lines of Halal and Kosher standards, for Islamic and Jewish dietary principles, respectively.

The objective of the certification programme is to render an assurance to vegetarian/vegan consumers in India and global markets that the food they are consuming is prepared after following thorough guidelines and standards prescribed.

Speaking to ETHospitalityWorld after the launch of the certification scheme in Delhi, Abhishek Biswas, founder of Sattvik Council of India, said that they have filled the vacuum and probably alleviated the dilemma faced by vegetarians across the world while travelling to places. The certification will bring trust, reliability and confidence in consumers. He said that it will also trigger new investments and generate employment opportunities in the ecosystem going forward.

“Globally, people are converting to vegetarianism in a big way after Covid. Veganism is also catching up fast in many countries. By bringing standards and certification, we want to promote vegetarianism and veganism with purity assurance. With a certifying partner like Bureau Veritas onboard, the world is the target,” Biswas said.

Amit Ghosh, senior vice president - South Asia (Commodities, Industry and Facilities Division) of Bureau Veritas (India) said that they have developed a comprehensive Sattvik Management System after a lot of research, consultation with experts in the field and with inputs from the Sattvik Council of India. He said that the entire supply chain will be audited, verified and certified periodically as well as through surveillance audits to ensure the standards are strictly followed.

With the new standards, Ghosh said that the suppliers and food businesses can set their objectives by following the guidelines set by the certifying agency for them.

News | Rajasthan govt to launch mobile application for tourists on World Tourism Day

To facilitate tourists visiting Rajasthan, the state government will launch a mobile application on World Tourism Day on September 27, an official said on Wednesday. The application will initially be available on the Google play store while its iOS version is also under development and will be launched in a few weeks.

"All information regarding tourist spots, modes of transport and other services will be available through the application... Users will be able to know if the local service provider is registered with the department," Nishant Jain, Director of Tourism Department said in a statement.

While there are several websites providing information regarding tourism in Rajasthan, the official application will give reliable and real-time information, he said. Schemes and promotional activities of the department will be promoted through the application, Jain said.

Porsche could soon have their name on the side of a hotel in Dubai. Following the launch of Steigenberger Porsche Design Hotels in July, we caught up with Deutsche Hospitality CEO Marcus Bernhardt.

Steigenberger is hotel group’s flagship brand, and Bernhardt says the two companies are already eyeing Middle East markets for their modern hotel brand.

He said: “Our latest announcement was the collaboration with Porsche Design and we’re already looking into that for Dubai, Abu Dhabi, Qatar… Really these are the areas.

“The feedback has been tremendous so far, even from Porsche drivers. They think it’s great. We’re seeing guests head in a new direction, lifestyle is more important than ever. Traditional hotels are good, but the digital natives want somewhere else.”

Porsche Design is known for its range of high-end luggage, timepieces, electronics, eyewear and clothing, which are inspired by sports cars. The new hotel brand will follow the same standards of luxury and craftsmanship.


So how does Porsche’s automotive craftsmanship translate over to hotels exactly? The CEO explained: “We have joined forces and we’ve gained access to Porsche’s high level of product development. We will make sure any of these hotels will have the highest levels of quality. The quality of the product will be equal to that seen in Porsche cars, not only in terms of materials used but also the technology being deployed. We’re really going a step ahead on this, they’ll be fancy hotels certainly but also elegant.

Owner Jimmy Patel’s passion for the wilderness, dedication to conservation and love for Gujarat has come together to create an experience entrenched in local culture, designed with authenticity and luxury in equal measure providing a wildlife experience that rewrites the script.

Located within the 18 square kilometre area that skirts the National Park, Aramness Gir sits within a rarely undeveloped natural paradise in a protected teak forest. This forest is home to abundant bird and animal species freely roaming between the park and the lodge.

Aramness is the culmination of collaborative design between internationally renowned Fox Browne Creative and Nicholas Plewman Architects to create a truly unique and immersive experience in the Indian wilderness. The lodge design takes its inspiration from the characteristic local village, Haripur, with its central cobbled streets fringed with courtyard homes (kothis). Natural forest and meadow gardens have been revived on the property wherever possible and are experienced in and around the kothis and guest areas, merging the natural habitat of the area with the built environment and paying homage to the original use of the land as farmland.

Each of the 18 sensitively appointed private village-style kothis take their cue from the charmingly informal arrangement of the local Gujarati village homes, whose buildings develop spontaneously with time. True to the name (Aramness – peaceful village), the understated yet utterly luxurious interiors have been designed to instill deep comfort and tranquility and have been constructed using the many natural materials and craft techniques native to Gujarat and India.

The lodge houses 15 standalone single bedroom kothis and 3 standalone double bedroom kothis with a shared dining space. Each kothi is a spacious double storey building that draws on the honesty of materials, and the sophistication of simplicity. All kothis have a cool shaded courtyard and upper deck veranda that overlooks waterways and beyond to the dense forest. To accentuate the bespoke elements, each kothi boasts of a private pool inspired by the characteristic Indian step wells. The thoughtfully curated experiences at Aramness will be delivered by butlers assigned to each kothi.

Throughout the lodge, the interiors draw on the honesty of materials, and the sophistication of simplicity, culturally relevant design and local craftsmanship. Everything that makes up the design inventory has been sourced or made in Gujarat. From the pattern on the large sandstone and steel Jali screens (which is a replica of the perforations of the dried leaf of a sal tree) to the striking wall of Kutchi lipan plasterwork with its intricate inlaid mirrors handcrafted by local artisans. The vintage applique scatter cushions and hand-beaten brass tables add to the detailed layering.

At Aramness, the rich culinary repertoire is a wholesome experience that gets to the heart of Gujarati cuisine. The food menu has been expertly crafted to not just include traditional flavours of Gujarati vegetarian delicacies but also lends a unique opportunity to pique the palate with the most authentic Gujarati non vegetarian fare, inspired by the tastes of the regions that encircle the lodge.
