Kidney beans are also known as rajma is a very popular legume and don’t really need a formal introduction, just as the name suggests the shape represents kidneys with a reddish-brown color and thick skin. It has a strong and dense flavor and a slightly mild after taste pleasing to our palates in various forms of its preparations.

Brazil has been known to be the top producer of kidney beans out of the others, it is popular with India and Nepal as well in most curried forms. There are many varieties of these beans available in the market lighter ones in color and also a bit small to big in size.

They are also called king beans of nutrition since they are packed with elements of proteins thus making them a great replacement for red meat in many ways too. The overall composition of its balanced approach in our diet has been strongly recommended and we must include them in various ways in our day-to-day meal plans.

CULINARY USES OF KIDNEY BEANS OR RAJMA:

  • One of the most popular ingredients especially in north Indian homes where rajma Chawal refers to one of the best comforting food in day-to-day cooking made with love and affection by the women of the house.

  • Besides being curried or in gravy form served with rice or parathas, rajma also features well in salads, soups, subzi concepts too.

  • Kidney beans are also very popular with Mexican cooking as well, they use it in a number of ways by adding it to the tortilla wraps, the burritos, the enchiladas and more.

  • Boiled and mashed laced with flavors and spices we can also have rajma tikkis, cutlets, burgers, and sliders, having them mashed incorporating them into a paratha stuffing works well too, how about trying rajma and paneer kofta in a palak gravy.

  • Rajma is also well known to have just boiled with a touch of salt, pepper, lime juice, mint /coriander leaves. They add a feeling of fullness to the meals and also help curtail overeating.

1] KIDNEY BEAN PATTIES


Ingredients

  • Boiled kidney beans- 2 cups

  • For cooking the mixture:

  • Oil-2 tbsp.

  • Ginger-garlic paste- 1 tsp

  • Chopped green chilies- 1 tsp

  • Chopped coriander- 1 tbsp.

  • Chopped mint leaves-2 tbsp.

  • Salt to taste

  • Garam masala powder- 1 tsp

  • Red chili powder-1/2 tsp

  • Dried anardana- 1 tsp

  • Grated paneer- 50 gms

  • Chat masala- 1/2tsp




For the binding:

  • Breadcrumbs-1/2 cup

  • Maida/corn flour- ¼ cup as needed for coating.

  • Oil to shallow fry

To serve with:

Green chutney/ tomato ketchup/dips and salsa.

Sliced onions/slice of lime.





Method:

1. Prepare all the ingredients for the patties.

2. Heat oil and saute the ingredients one by one and add in the boiled beans, seasonings, spices and cook for 3-4 mins.

3. Remove onto a plate, add in the binding agents mix well and shape into a dough like texture.

4. Apply little oil on the fingers and divide into equal portions, slightly flatten them and coat with options as available and shallow fry them until nice crisp on the outside.

5. Serve hot. 

Chefs Variations:

Try the same cutlets with stuffing of cheese and nuts in the center, can also make them nonveg by using mince, boiled chopped eggs etc.

Recipe- 2] KIDNEY BEAN BROTH

Ingredients

  • Oil/olive oil- 1 tbsp.

  • Garlic- 1 tsp chopped

  • Onion- ½ chopped

  • Carrots- ½ cup sliced

  • Boiled sweet corn-1/2 cup

  • Salt and pepper to taste

  • Mixed herbs- ½ tsp

  • Chili flakes- ½ tsp

  • Tomato puree- ½ cup

  • Green capsicums-1/2 no cubed.

  • Water/veg stock- 3-4 cups

  • Boiled rajma- ½ cup

  • Chopped parsley/coriander- 2 tsp.


Method:

1. Prepare all the ingredients for the soup.

2. Heat oil add in the garlic, onions and saute for 30 seconds.

3. Add in the tomato puree, salt and seasonings/herbs/spices to taste.

4. Add in the vegetables and mix well, add in the beans and water/stock, allow to simmer for 20 mins.

5. Now shall add in the capsicum last and bring to a boil, adjust the texture of the soup.

6. Serve hot garnished with herbs/grated cheese/ dash of sour cream.

Chefs Variations: Try the same recipe with boiled chicken cubes, use chicken stock for the soup, also can use veggies like broccoli, zucchini cubes, tofu as well in the soup with rajma.





3] KIDNEY BEAN PILAF

Ingredients:

  • Boiled rajma- 1 and half cup

  • Basmati rice- 1 and half cup

  • Water/stock as needed.

  • Oil/butter/ghee- 1 tbsp.

  • Bayleaf- 2 no

  • Peppercorns- 8-10 nos.

  • Sliced onions- 1 cup

  • Ginger-garlic paste- 1 tsp mix

  • Tomatoes chopped- ½ cup

  • Salt to taste

  • Red chili powder- ½ tsp

  • Dhaniya-jeera powder- 1 tbsp. mix

  • Garam masala powder- ½ tsp

  • Kasoori methi- 1 tsp

  • Cubes of potatoes-1/2 cup fried

  • Assorted veggies- carrots/beans etc can be added.

  • Green peas- ½ cup boiled

  • Assorted non-veg/veggies if any of your choice can be added.

  • Fresh coriander- 2 tbsp. for garnish.

  • Fried onions- ½ cup for garnish.

    To serve with:

  • Choice of raita/ papad/pickle.

Method:

1. Heat oil in a pan add in the whole spices add in the sliced onions and start cooking, add water little by little as they get brown, add ginger garlic paste.

2. Add in the tomatoes, salt and spices, little water, cook well, add in the kasuri methi, rajma, rice and mix all well.

3.Add double the amount of water/stock to make the pulao and allow to simmer, cover and cook in steam.

4. Serve hot garnished with fresh coriander leaves.


Chefs Variations:

Try the same recipe with soy keema and rajma along with additions as desired. We can also make kofta with rajma and paneer and layer the kofta gravy into a biryani concept, grated cheese, fried onions, rose water, and serve hot. Rajma pulao with chicken curry cuts also tastes good in a methi garlic masala.

Sinha will head Food and Beverage Service as well as Food Production (Kitchen) department at the property. He will oversee the functioning of all four Food and Beverage outlets at the hotel namely ChaoBella, Edesia, Copper Bar and French Heart along with room service and banquets.

As the Director of Food & Beverage, he will be responsible for heading and managing the Food and Beverage operations and maintaining high standards of guest satisfaction.  Sinha possesses strong business acumen with a capability to execute a wide range of strategies to establish market presence. He is a master in identifying new streams and curating culinary events for long-term revenue growth. He will be directly taking care of menu engineering, problem resolution, revenue management, staff management, operations management and event curation.

Hyatt Plans to Utilize Mobile Health Passport, VeriFLY, for Meetings, Events

Hyatt Hotels Corporation (NYSE: H) today announced plans to explore VeriFLY + Stay, a mobile health passport for the hospitality industry using the VeriFLY app that provides verification of COVID-19 credentials and travel guidelines. This mobile app can facilitate peace of mind for in-person gatherings by providing meeting attendees and colleagues with a seamless option to directly receive and present COVID-19 test results.  Tens of thousands of travelers already have confidently and safely verified their COVID-19 health status with VeriFLY since January 1, 2021.

“Since the onset of the pandemic, we have believed that accessibility to testing and resources would play a critical role in the travel industry’s recovery,” Frank Lavey, senior vice president of Global Operations, Hyatt. “Collaborating with Daon, a leader in identity assurance, to test VeriFLY + Stay for colleagues and meeting attendees furthers our commitment to our guests’ and colleagues’ wellbeing and represents an important step in providing peace of mind to meeting attendees before, during and after an event.”

To be, or not to be is a famous line from William Shakespeare’s play Hamlet. The Poona Hoteliers Association Executive Committee had to deal with the question of “To do, or not to do the 3rd edition of PHA Premier League in these Covid-19 Pandemic times?”

The PHA (Poona Hoteliers Association) President Mr. Sharan Shetty teamed-up with the Chairman of Organizing Committee - Mr. Amit Sharma along with other Executive Committee members decided to go ahead with the popular cricket event. The PHA Ex-Comm strongly believed that the need for the event to be organized was much more in the current testing pandemic times than earlier.

The event was organized to solidify the solidarity of the PHA community, who had to face challenging times during the pandemic. The event generated overwhelming response seeing active participation from 20 teams. The tournament was played adhering to all the Covid-19 safety protocols in league cum knockout format spanning 3 days (March 1, 2021 – March 3, 2021).

The first two days saw some pulsating cricketing action, wherein teams tried to secure a quarterfinal berth. We saw teams winning matches by a narrow margin of 2 runs, huge margin of 100 runs, a bowler picking up an over hattrick, an opening partnership of 158 runs and many more exciting moments.

In the quarterfinal matches The Ritz Carlton won their match against Fort Jadhavgadh by a comfortable margin of 23 runs. In the 2nd quarterfinal AISSMS team fell short of the target by just 5 runs against defending champion Sayaji. The 3rd quarterfinal was won by Blue Diamond against Conrad by a margin on 11 runs. The pick of the quarterfinals was played between Corinthians & J W Marriot which resulted in a tie. The match was won in Super over by J W Marriott.

The 1st Semifinal was played between The Ritz Carlton and Sayaji wherein Sayaji – Imran put up a all-round performance to see his team through to the finals. In the 2nd Semifinal Taj Blue Diamond team posted a huge total of 111 runs for opposition J W Marriott, who fell short of the target by 25 runs.

The final match between Blue Diamond and Sayaji failed to live up to the big match expectation. Sayaji bowlers backed their Captains fielding decision by restricting the opposition to a modest total of 49 runs. The defending champions Sayaji trampled the target in just 4.4 overs with Captain Madhav leading from the front scoring a quickfire 28 runs. The final man of the match was bagged by Sayaji – Sandesh who setup his team’s win by picking 4 wickets. Team Sayaji created history by lifting the PHAPL championship for 3 consecutive years.

The entire tournament was played with great camaraderie and team spirit. The teams played great competitive cricket on field but above all celebrated the joy of togetherness. The wonderful initiative by PHA Ex-Comm has strengthened the bond between the PHA community and transformed them into a closely knit family woven by the uniting fabric of Cricket.

The popular PHAPL cricket tournament organized by Poona Hoteliers association has grown by leaps and bonds in the last 3 years and would scale greater heights in the coming years. Thanks to Poona Hoteliers Association members and one and all for their unflinching support in making the event a grand success.

New Appointment | Arun Kumar Singh joins FHRAI-IHM as Director

In his last stint, he played a pivotal role in obtaining a grant of 11 crores from Ministry of Tourism, Government of India for upgrading the training facility at IHMCTAN Mumbai

The FHRAI Institute of Hospitality Management (FHRAI-IHM) has appointed Arun Kumar Singh as its Director effective March 2021.

An illustrious career spanning over three and half decades in Hospitality Management, Singh brings to FHRAI-IHM his expertise in Institutional and academic administration. He will aid FHRAI-IHM’s Research and Development and be a value-add to the institute’s faculty.

Prior to joining FHRAI-IHM, Singh served as the Principal of IHMCTAN Mumbai, the Principal of Institute of Hotel Management of Lucknow and the State Institute of Hotel Management, Jodhpur.

In his last stint, he played a pivotal role in obtaining a grant of 11 crores from the Ministry of Tourism, Government of India for upgrading the training facility at IHMCTAN Mumbai. In the recent past, he assisted the Maharashtra Government in setting-up the State’s Institute of Hotel Management in Solapur.

“My tenure of twenty-four years in various Hospitality Management institutes has enriched my knowledge in the field. Over the years I gained exposure to infrastructure creation and development, student empowerment and up-gradation of knowledge and skill. Over the next five years, I aspire to lead FHRAI-IHM to become an institution of excellence in Hospitality education by fostering knowledge, innovation and entrepreneurship. In this endeavor, I hope to make an impact on the hospitality industry ecosystem in the country,” says Arun Kumar Singh.
