Michelin-Starred Chef Daisuke Mori Brings a French-Japanese Pop-Up to Mirai, Mumbai

Chef Daisuke Mori makes his India debut with a two-night pop-up at Mirai in Mumbai on Wednesday 28 and Thursday 29 October 2026, from 8pm to 10pm. It is the restaurant's first collaboration.

Mori led the kitchen at Takumi by Daisuke Mori in Hong Kong, a French-Japanese restaurant that held a Michelin star for seven consecutive years from 2017 to 2023. A graduate of Osaka's Tsuji Culinary Institute, he has cooked at Chateau Restaurant Joel Robuchon in Tokyo, Restaurant Taillevent in Paris and Restaurant Signature at Mandarin Oriental Tokyo. He is currently Executive Chef at Carlyle & Co., Rosewood Hong Kong. His cooking pairs Japanese precision and seasonality with French technique.

The menus

The non-vegetarian menu (Rs 5,950++) opens with Giant Mud Crab with crab remoulade, cauliflower espuma and curry oil, then a Baked Mushroom Tart with potato mousse, onion compote and tapenade. Lobster Barley Risotto with bisque jus, Parmesan and seaweed follows, then Local White Fish Tempura of red snapper with seaweed dashi and yuzu, and Roasted Chicken with French chestnuts, rosemary and caramelised figs. Dessert is Matcha Panna Cotta with vanilla and silver leaf.

The vegetarian menu (Rs 4,950++) begins with Spinach & Sesame with Japanese sesame, silken tofu, sake and mirin, then the Baked Mushroom Tart, Green Asparagus with asparagus risotto, lotus root and garden herbs, Japanese Vegetables in tempura with seaweed dashi and yuzu, and Root Vegetables with caramelised spiced honey, black fig and mascarpone, before the same Matcha Panna Cotta.

The drinks

House of Suntory handles the bar, with a Toki Ginger Sour, Toki Highball, Roku & Tonic with ginger juliennes, Roku Natsu Jin Hai made with Roku Gin Sakura Bloom Edition, a Haku Martini and a Haku Pandan Grove.

"At Mirai, we have always believed that Japanese dining is as much about the experience as it is about the food. Hosting Chef Daisuke Mori gives us the opportunity to introduce Mumbai to his distinctive French-Japanese approach," said co-founders Saamir Chandnani and Rinchen Angchuk.
