The Anam Mui Ne Unveils ‘Vietnamese Market Favourites’

In Vietnam, the sidewalk comes to life as the country’s famed street food, based on recipes handed down the generations, is served with gusto on tiny tables huddled by low stools.

To pay tribute to this quintessential Vietnamese pastime of pulling up a stool and savouring street food, The Anam Mui Ne, a 1.2 hectare beachfront resort with a design inspired by the Indochine era, has unveiled “Vietnamese Market Favourites” held every Tuesday and Friday from 6-9.30pm.

Staged on the resort’s beach lawn, flanked by Mui Ne Beach and the property’s 266sqm saltwater infinity pool, the dining experience sees staff set up low bamboo stools and tables circled by an array of live stations concocting street food favourites before diners’ eyes.

Accompanied with signs explaining the fare, signature local dishes from the local Phan Thiet area are served. Hyper-local options include: mini rice cakes served with minced pork meatballs, quail eggs, braised fish and green mango; handrolls comprising finely ground pork seasoned with spices, wrapped in thin rice paper and served with fresh herbs, cucumber and pickled vegetables; and grilled sesame crackers, spread with fermented shrimp and filled with pork and Vietnamese ham, pickled vegetables and herbs, before grilled over an open flame.

Crispy fried pancakes Banh Xeo made with rice flour, water and turmeric powder, and stuffed with pork, shrimp and mung bean sprouts, Bo La Lot minced beef wrapped in betel leaves, and Mi Quang noodles with chicken are also among the host of delectable options.

Serving stations also brim with fresh seafood such as oysters and giant river prawns, hot dishes including Vietnamese braised beef Bo Kho, fresh salads such as pomelo salad with prawn and pork, and an array of desserts such as Vietnamese crispy sweet cake Banh Kep and seasonal fruits.

Entertainment from local instrumentalists playing the likes of the Dan Bau, a one-stringed zither with a bamboo rod for extensive pitch bending, add to the occasion’s ambience.

For us, balance begins with reverence.
The foundations of Awadhi cuisine — dum cooking, nuanced spicing, textural refinement, and tehzeeb in service — remain at the heart of everything we do. Gravies continue to be slow-cooked, kebabs handcrafted, and spice blends layered with patience.
Where we evolve is in interpretation. Textures feel lighter while retaining depth, plating gains refinement while holding warmth, and familiar global formats offer a new canvas where Awadhi flavours lead the narrative. Tradition gives us depth. Modernity gives us reach.

What’s next?

The design, led by Sabina Singh and the Olive Group’s in-house team, blends rustic Italian references with Bandra’s relaxed sensibility. Warm wood tones, textured surfaces, and softly lit alcoves create a space that feels quietly elegant rather than performative. At its centre stands a long-standing tree from the Olive courtyard, thoughtfully integrated into the bar’s layout as an organic focal point that anchors the room in both memory and place.

The restaurant’s architecture itself draws inspiration from the traditional Assamese Jaapi, an enduring symbol of hospitality and welcome. The roof design reinterprets the form through contemporary architectural expression, featuring a ceramic articulation along the ridge created by Assamese ceramic artist Jaya Boro, who also serves as Head of the Department at Shantiniketan’s ceramic studio. The roof is crowned with a copper pinnacle, reinforcing the cultural symbolism embedded in the structure.

Art, Culture and Conservation Narratives

Kaziranga Heritage integrates art and history as part of the guest experience. The estate’s curated art collection includes works by Assamese artist Mridu Moshum Bora, whose paintings depict Vaishnavite traditions, dance forms, and the wildlife landscapes of Kaziranga.

The property also features dedicated tributes to legendary Assamese cultural icons Bhupen Hazarika and Zubeen Garg, acknowledging the profound influence of music and storytelling in shaping Assam’s cultural identity.

Five-Star Hotel Project in Silchar; Polo Hotels Group to Develop First Luxury Property in Barak Valley

Silchar, March, 2026: In a major boost to hospitality infrastructure in Southern Assam, the Assam Cabinet has approved the development of Silchar’s first five-star hotel, to be built by Polo Hotels Group with an investment of approximately ₹103 crore. The announcement marks a significant step towards strengthening the tourism, business, and events ecosystem of the Barak Valley.

Announcing the decision, Dr Himanta Biswa Sarma, Hon’ble Chief Minister of Assam said, “Today, our cabinet has given a go ahead to construct a Five Star hotel in Silchar, to Polo Hotels Group. The Polo Hotels Group will be spending around 103 crore rupees on this project. This is going to be the first five-star hotel in Silchar.”

The project will introduce international-standard luxury hospitality infrastructure to the Barak Valley for the first time, positioning Silchar, the commercial and administrative hub of Southern Assam, to host high-value travel, corporate engagements, and large-scale events.

International-Standard Hospitality Infrastructure

The proposed luxury hotel will feature 100 premium rooms and suites, designed to meet global hospitality benchmarks while reflecting the cultural character of the Barak Valley.

Key facilities will include multiple specialty restaurants and bars, a resort-style swimming pool, a full-service spa and wellness centre, a modern fitness facility, and state-of-the-art banquet and conference infrastructure capable of hosting corporate summits, exhibitions, weddings, and government events.

Industry analysts note that India’s hospitality sector has witnessed a strong rebound in recent years. According to tourism estimates, India recorded more than 2.3 billion domestic tourist visits in 2023, while demand for MICE tourism (Meetings, Incentives, Conferences and Exhibitions) has expanded rapidly across emerging regional cities.

Expansion Strategy of Polo Hotels Group

The Silchar project forms part of an ambitious expansion plan by Polo Hotels Group, one of Northeast India’s most established hospitality brands.

The Silchar project is therefore expected to create substantial direct and indirect employment opportunities, while supporting local businesses, producers, and service providers across the Barak Valley.

Strengthening Tourism and Business Travel

Once operational, the hotel is expected to establish a new benchmark for luxury hospitality in Southern Assam, enabling Silchar to host national-level conferences, policy meetings, corporate gatherings, and destination events that were previously constrained by the lack of premium accommodation facilities.
