A Mango-Led Summer Affair: Blah! Launches Its Vibrant Seasonal Summer Festival Menu

Blah! ushers in the season with its all-new Summer Festival Menu, reimagined as a vibrant celebration of Bangkok Summers bringing together bold, Asian-forward flavours, tropical ingredients, and refreshing, elevated sips. Inspired by the bustling street food culture and dynamic flavours of Bangkok, the menu goes beyond a conventional summer offering, blending seasonal produce with punchy, layered taste profiles. While mango remains a hero ingredient, it is thoughtfully woven into a larger narrative of sweet, spicy, tangy, and umami-rich elements that define the experience.

The menu opens with a refreshing lineup of Asian-inspired small plates, where dishes like the Raw Mango Litchi Salad, Citrus Mango Ceviche, and Alphonso Mango & Raw Papaya Som Tam deliver a burst of sharp, zesty, and spice-led flavours reminiscent of Bangkok’s street-style salads. These are complemented by light yet satisfying bites such as Mango Avocado Sushi and delicately rolled Rice Paper Rolls, balancing freshness with bold seasoning. Each dish is designed to be vibrant, flavour-packed, and perfect for sharing, capturing the essence of a tropical Asian summer.

Moving into heartier offerings, Blah! presents comfort-driven plates with a distinct Southeast Asian influence, including the Glass Noodles Stir Fry and the standout Thai Yellow Curry with Mango & Sticky Rice bringing together creamy textures with hints of sweetness and spice. Mango continues to feature across the dessert selection with indulgent creations like Mango French Toast, Mango Pancake with Tender Coconut Ice Cream, and Mango Sticky Rice Pudding, tying the menu together with a familiar yet elevated tropical note. Complementing the food is a refined beverage program, where cocktails draw inspiration from tropical fruits found across Bangkok and are crafted using clarified techniques for a cleaner, more layered drinking experience. Signature serves like Som Tam Picante and The Dragon Ball sit alongside refreshing mocktails such as Mango Matcha and Coconut & Chia Seeds.

Niketa Sharma, Founder of Blah!, shares, “At Blah!, we wanted to create a summer experience that feels light, refreshing, and enjoyable. With this menu, we’ve taken inspiration from Bangkok’s bold flavours and vibrant food culture, bringing together seasonal ingredients with our signature style to create something truly exciting for the season.”

Paired with its bright, contemporary interiors and lively, social ambience, Blah! emerges as a go-to destination to savour a Bangkok-inspired summer, offering an experience that is bold, refreshing, and far from the ordinary.

Novotel Vijayawada Varun Brings Goa’s ‘Lost Recipes’ and The Great Mediterranean Feast to the table | 19 May

Novotel Vijayawada Varun continues to expand the city’s culinary horizons by bringing distinctive global cuisines to Andhra Pradesh through thoughtfully curated food festivals and immersive dining experiences. From the sun-soaked flavours of the Mediterranean to the rich coastal traditions of Goa, the hotel is creating opportunities for guests to explore authentic regional and international cuisines without leaving Vijayawada. Through these limited-period showcases at The Food Exchange, Novotel Vijayawada Varun is positioning itself as a destination for culinary discovery, introducing residents and travellers to diverse food cultures, stories, and traditions from around the world.

The Great Mediterranean Feast | 15th to 19th May 2026

Novotel Vijayawada Varun is bringing the zesty, herb-laced spirit of the Mediterranean coast to the heart of Andhra Pradesh. From 15th to 19th May, The Food Exchange will transform into a coastal culinary destination with a specially curated Mediterranean Food Festival, a five-day celebration of soups, mezzes, tapas, and iconic desserts drawn from Southern Europe and the Levant.

At its heart, Mediterranean cooking celebrates simplicity, fresh vegetables, legumes, whole grains, and generous pours of extra virgin olive oil. The Food Exchange, known for its inventive approach to global cuisines, brings that philosophy to life with contemporary plating and bold, honest flavours.

The specially curated tasting menu reads like a tour of the coastline: Minestrone alla Genovese from Italy, crisp Cigar Böreği from Turkey, Spain’s beloved Patatas Bravas, and the herb-stuffed Spinach Fatayer of the Levant, capped by a golden, syrup-soaked Kunafa for dessert. Every dish is prepared with region-specific ingredients and traditional techniques, bringing a genuine taste of the Mediterranean to the table.

“Vijayawada has an incredibly vibrant food culture, and we wanted to complement that spirit with something new. The sun-drenched flavours of the Mediterranean like the Turkish börek, Italian minestrone and a show-stopping Kunafa, every dish on this menu tells a story. We can't wait for our guests to experience it,” said Chef Shivaramakrishna, Executive chef at Novotel Vijayawada Varun.

Lost Cuisines: Goan Cuisine | 17th May 2026

Novotel Vijayawada Varun is set to transport diners straight to Goa’s sun-kissed coast with “The Goan Cuisine” an exclusive, one-day culinary showcase at Food Exchange on Sunday, 17 May 2026. Expect a specially curated spread of traditional Goan favourites, many rarely seen on contemporary menus, celebrating the region’s coastal bounty, bold spices and distinctive Portuguese legacy.

Curated under Culinary Voices, Lost Cuisines Edition, this special showcase is a part of Novotel Vijayawada Varun’s six-month gastronomic journey to revive forgotten regional recipes and spotlight the stories behind them.

The menu brings together an irresistible line-up of coastal signatures. Sopa de Crab, Pineapple Sasav, Chicken Xacuti, Prawns Curry, Raw Banana Fry and the refreshing Kokum Mojito, among other delights. Thoughtfully crafted to capture Goa’s bold coastal flavours and aromatic roasted spices, each dish offers a delicious peek into a cuisine shaped by tradition, travel and timeless family kitchens.

“Goan cuisine is a celebration of the sea, the spice jar and centuries of cultural exchange,” said Executive Chef Shivaramakrishna, Novotel Vijayawada Varun. “For this Lost Cuisines edition, we’ve gone beyond the usual favourites to bring back recipes you don’t easily find today. Slow-cooked gravies, tangy kokum notes, roasted masalas and comforting coastal curries. If you’ve ever wanted to ‘taste’ Goa the way families have cooked it for generations, this one-day showcase is your boarding pass.”

What began as home-style cooking in Chinese settlements gradually evolved into India’s most loved Indo-Chinese flavours, defined by high-heat wok techniques, bold sauces, and deeply comforting tastes that continue to evoke nostalgia across generations.

Bringing this iconic legacy to Pune is Chef Edwin Liao, Owner and Head Chef of Tai Sen Chinese Eating House, Kolkata. With over 45 years of culinary experience, Chef Liao is a respected custodian of Tangra’s culinary traditions, known for preserving authentic recipes, mastering precise wok skills, and safeguarding flavours that have stood the test of time. His arrival in Pune marks a rare opportunity for diners to experience Tangra cuisine as it was meant to be —uncompromising, soulful, and steeped in heritage.

Adding to the celebration, guests are invited to witness the traditional Lion Dance performances at the hotel on 27th February, 28th February, and 1st March. Symbolising prosperity, joy, and good fortune, the Lion Dance brings alive the festive spirit of Chinese culture, transforming dining into a moment of shared celebration and cultural connection.

Designed to spark curiosity, nostalgia, and anticipation, A Taste of Tangra promises more than just a meal—it is an invitation to experience a living legacy, one that travels from the narrow lanes of Kolkata to the heart of Pune.
