By expressing my thoughts on life in the above 4 words there is a lot more to life and its phases and cycles through which we grow over the years! The life we have today and the one we had in our last birth was much different in many ways, we don’t remember and neither should we go back into it. The lord and its devotees always believe that its you today and in this life is what should matter and what should be looked at to add value to this cycle of birth so that the next one can also be pretty exciting & experiential and better than this one.

Life teaches us a lot in many ways and in many genres as well all through our growth stage and beyond. Some of us are very smart and intelligent since childhood while some are average and some do not wish to pursue higher studies as well. Doesn’t matter but life itself teaches us many things which at times the books at the highest levels do not cover in the syllabus and academia.

To look at LIFE with various perspectives here is my version of it in a nutshell with varietals and derivatives to pick on:

  1. Life is not a theory of formulae & notions: some people take life as per definitions related to various theories which we have studied over the years where something added to something, multiplied and subtracted from few elements leads to something interesting and new. This doesn’t work in day-to-day real life for all of us and therefore we need to little realistic as well and write our own statistics.

  2. Life is not living on other people’s terms: at times some people whom we come across in life are dominating & also my ship my order types! In today’s modern world it is not going to work, it has to be self-driven and well planned in order to be able to make things work for yourself and your family etc. it is not always living life from their perspectives but also being persistent living it on your own terms as well.

  3. Life does not always give you a second chance: Let us change the way we look at life and the world on a broader note. It says that watching your steps and decisions taken can have reactions and responses from the other side which may not always be condusive and acceptable by us. At times there are actions we take which have equal opposite reactions as well which can disappoint us and make us feel low and dejected. We need to change our perception.

  4. Life is a bouquet of colourful flowers, pick the right one: The influence of colors in our life have had a very strong significance over the years. One side we look at self-choices and self-thoughts and self-satisfying elements. We should be open to experimenting and trying out worthy tasks and risks in life which can bring a lot of praise & welcoming gestures being well exchanged among and within us to create that harmony & connect.

The colour elements can also be enhanced here by food and nourishment of the body – mind & soul by eating right, choosing the right ingredients for our cooking and also getting the perfect balance of colour- flavour & taste impress us on every plate we binge into.

Life is a melange of Likes- Dis-likes & So- So Quotients.

In this journey called Life we come across people whom we get along with very well, seems like a bonding of years and decades in the very first meet at times, while with some it’s a hi- hello factor of minutes and we feel that’s enough & done! And if we look at extremes then there is a Not at all factor which comes by in our mind and thoughts which doesn’t let the dots join at all and it’s a not easy to gel along and get along at all as well.

Life is full of Drama- Deals & Divinity!

While most of us in life are running behind materialistic acquiring techniques, some of us have long lists of things to do as we grow by the decades into physical maturity, few of us have a lot to do with finding the right balance between all the above ensuring the perfect balance helps to keep life at pace and gets us all we need with the push of a button. Be it land, property, money, wealth and valuables, luxury and brands its all somewhere a pleasing factor for us in life and we seem to be finding happiness around all of It which may not be always true. Life is also a journey to reach the higher level going within and inside instead of just outside and external, do remove some me time & mediate time!

Life needs to be lived beyond the clock & its timings:

While time management for some people is a big challenge, from reporting to work on time, to being able to meet people on time, to finishing tasks on time, to be able to find the work- life balance time-table too at times makes things worse for some people. Its all about placing the tasks in life in the order of their importance levels and then play the cards one by one – side by side- and if I may say multi- tasking which is a big challenge for many people be it in personal life or professional life. At times we are good at giving Gyan & Pravachan to people around us but when it comes to us and ourselves, we are always struggling!

Life is lead by example & ease out on expectations:

It is always good to listen to motivational talks and reading inspiring quotes to pep up our mood and mind. What actually matters is how we implement them in our life in order to fix things as they come by and be able to work on problems with a proactive approach and in a very positive way so much so that it doesn’t affect us and our surroundings as well. Today’s generation tells us do not tell us stories of your times- old school of thought! Instead tell us how we can achieve things faster in life, what are the key secrets to being successful in days to come and not years to go by. Therefore, it is imperative to ease out on our expectations from anyone around since it can lead to disappointments and leading by example in such a way that it impacts people around us in a very acceptable manner.

Emotions- Expressions & Enthusiasm formulate life:

At times life throws across a number of Frisbees and Freebees which are just not meant for us and we should accept them with an open heart as they could be a saviour for us or a blessing from angels trying to help us from something unpleasant. We should work on getting emotionally stable and strong as not everyone wants to value them based on their perceptions, not everyone will allow us to be as expressive as we wish to, hence look at working on the same on a positive note and finally life needs to be lived with a lot of enthusiasm and not complaining and on a low note. We need to take every day as it comes by and ensure that life is being looked at on a positive note and write our own formulae of life in such a way that we can not only make the most of this journey and also have memories and sweet memories all along and not keep any space for negativity and unwanted trash.

Life needs Stability- Sustainability & Serenity: as mentioned earlier the journey we are a part of can come to an end any second, any minute, any hour or any day which we are not aware of. We need to take every day as a stepping stone to our self-development & self-improvement which can help in order to sustain ourselves in a stable way for as long as we are present on this track of life and along the path of taking things in the best way for enhancing our life with colors in various forms and formats from the colour wheel of life making it all the more pleasing & enjoyable!

What will 2025 look like for the Indian hospitality industry? Will it continue on the trajectory set by 2023 and 2024, or are there disruptions on the horizon? Most analysts predict the current growth story to persist, and peers in the hotel industry remain publicly optimistic.

However, while a rising tide lifts all boats, it is essential to examine what is driving this tide. Is it the natural ebb and flow, where an inevitable downturn follows a surge? Or are these rising waters signaling deeper disruptions—perhaps even a tsunami? While no dramatic shocks are expected in the coming year, it is important to look beneath the surface, as certain undercurrents may pose challenges in 2025.

The Numbers Don’t Tell the Whole Story

Room rates continue to rise across almost every market, but in dollar terms, they have remained largely flat due to the depreciation of the Indian Rupee. This presents a double-edged sword. The current market buoyancy is driven by a growing domesticaudience, supposedly unaffected by currency fluctuations—though that is not entirely true. The leisure segment, in particular, faces increasing competition from Southeast Asian destinations, where, despite currency appreciation, overall value remains more attractive and affordable than many domestic alternatives. As a result, we can expect intensified competition, which could slow the upward trajectory of room rates.

On the flip side, the industry still relies heavily on imported products, particularly in the premium segment, making operations more expensive as the Rupee weakens. Maintaining current GOP (Gross Operating Profit) margins will become an increasingly strenuous challenge.

The Foreign Arrival Gap

Despite global travel rebounding, foreign arrivals to India have yet to reach pre- pandemic levels, particularly in the leisure segment. Compared to our peers, India remains significantly behind in attracting high-spending tourists. A glance at major resort airports—Goa being a prime example—confirms this gap. With the appreciation of their home currencies against the Rupee, India should be a more compelling choice for international travelers, yet this has not materialized.

This leads to a deeper concern: has the underlying value proposition kept pace with rising prices?

Sustainable Growth or Short-Term Euphoria?

Steady growth and strong EBITDA figures are always welcomed. However, if price increases are not backed by corresponding value additions, the current optimism could swiftly turn into a long-term setback. Simply raising prices without enhancing offerings amounts to price-gouging, which is unsustainable.

While price is fundamentally dictated by supply and demand—both relatively inelastic in the short term—hoteliers must be strategic. They need to anticipate inevitable shifts in supply and adjust accordingly.

The Expansion Challenge

If the ambitious growth projections of major hotel brands hold true, the number of available rooms in India could double in the coming years. Even accounting for discrepancies between projected and actual execution, this expansion will be significant.

The resulting pressure on topline revenue may not be immediate in 2025, but it will become evident in the years ahead.

Talent Shortages and Operational Pressures

A growing concern across the industry is the deepening talent crunch, which will have serious implications for both operational efficiency and financial performance. 1. Parinde main Parinda from Uttar Pradesh

Parinde main parinda looks like this rich extravagant dish, which weighs down the table as you keep it. Quite a lot of work goes into the preparation of this dish. It is a rendition of the bigger roast, that was basically made with whole camel, stuffed with smaller animals, one inside the other, till the smallest cavity fills with a boiled egg. It is made with duck, chicken, quail and a boiled egg. Each bird was prepared and marinated separately and differently. The flavor of each is retained while they come out beautifully in culinary nirvana.



2. Shufta Kanaguchhi from Jammu and Kashmir

Here is dish which has the exclusive and precious morel mushrooms as an ingredient. This dish is basically all dry fruits sweetened gracefully. Kashmiri Shufta is one of the few sweet dishes from Srinagar. This dish is paradise in a bowl. It is a thick concoction of cottage cheese, dry fruits, saffron, milk, desi ghee and morel mushrooms. This dish was the invasion by Timur in 15th century that left a legacy of Kashmiri cuisine.





3. Phulkari Pulao from Punjab

Move over lubricant laced hearty dishes, here’s a dish prepared from four different variety of rice. It’s called ‘Phulkari Pulao’, which is a mix of a variety of rice. This is refreshing since traditional pulao is increasingly giving way to biryani. Nice to know the hearty Punjab is varied too.



4. Jadoh a Dish from North-East India

Jadoh is a Khasi delicacy from Meghalaya, with rice as its basic ingredient. It’s got pork, rice, herbs and is richly garnished with cilantro. Served simmered and savoury! Jadoh is one of the recipes from Meghalaya which is on the verge of loss.


5. Tit-Koh from Tamil Nadu

This is a refreshing dish with freshness of coconut water, fish sauce and honey. It has the richness of pork and caramel. Garnished and sprinkled with red chillies on top.



6. Chena Poda from Odisha

Here is a creamy rich dish made of ricotta cheese, sugar and brown sugar. With the crunch of roasted cashew nuts and raisins. Sometimes, jaggery was also used to make it. Cooked hot and served cold, fresh and slightly moist.  Chena Poda originated in the town of Nayagarh in the first half of the twentieth century.



7. Kalmi Saag from West Bengal

Kalmi Saag is a leafy vegetable that is available mostly in summers. It is grown in the wetlands and this recipe has very cooling effects on the body. Very simple and basic to cook, with the only other vegetable to accompany being onion.



8. Ratalachya Gharya from Maharashtra

This one is a traditional dish of the Maharashtrian food legacy. It looks like stuffed paratha. It’s got sweet potato for stuffing and the highlight being that it’s served with spicy Mirchi cha thecha.



9. Saasni Machi from Gujarat

This dish is a conglomeration of Gujarati and Parsi Flavors. It’s basically a white, egg and rice flour-based sauce. Only white fish like pomfret is used to make this dish. It also contains some local seasonal vegetables which are hard to come by now.



10. Lehsun ki kheer from Rajasthan

Here is an exotic sweet dish with goodness of khoya, milk, dry fruits and, wait-for-it, garlic! Yes. They had a kheer made out of garlic. Absolutely sumptuous and thick, served cold and in perfection with rich desi ghee for preparation.

11. Crab Curry from Bihar

Crab recipes are just as tricky and hard to come by as they are delicious. This rich and authentic recipe was however, very simple to cook. Novel how a state that boasts of rich vegetarian dishes had a crab-based dish as its speciality once.

Here are a few recipes from my favourite list which should be revived and made popular in the menus all across for the food connoisseurs:

Recipe-1] Lehsun ki Kheer from Rajasthan

Ingredients:

20-25 garlic cloves, peeled

1 litre of milk

1/2 cup sugar (adjust to taste)

A pinch of saffron strands (soaked in a tablespoon of warm milk)

1/4 cup mixed nuts (almonds, cashews, and pistachios), chopped

1/2 teaspoon cardamom powder

Ghee (clarified butter) for frying the garlic cloves

A few strands of saffron for garnish (optional)


Method:

1.Heat a small amount of ghee in a pan and fry the peeled garlic cloves until they turn golden brown. Be careful not to burn them. Once fried, remove from the pan and set aside.

In a separate heavy-bottomed pan, bring the milk to a boil. Stir it continuously to prevent it from sticking to the bottom.

2.Once the milk comes to a boil, lower the heat and simmer it until it reduces by about one-third of its original quantity. Keep stirring occasionally to prevent the milk from scorching.

3. Add the fried garlic cloves to the simmering milk and continue to cook. Stir gently to combine them.

Add the sugar and mix well. Continue to simmer until the kheer thickens, and the garlic cloves become soft and well-incorporated into the milk. This may take about 30-40 minutes.

4.Add the saffron strands soaked in warm milk, chopped nuts, and cardamom powder. Stir well and continue to simmer for another 5-10 minutes.

5. Once the kheer has thickened to your desired consistency and the garlic cloves have become soft and flavourful, remove it from the heat.

Let the kheer cool to room temperature, and then refrigerate it for a few hours to serve it chilled.

6.Garnish with saffron strands before serving if desired.

Lehsun ki kheer is a sweet and aromatic dessert with a hint of garlic flavor, making it a unique and delightful treat. Enjoy this traditional Rajasthani dish as a special dessert after a meal.



Recipe-2] Crab Curry from Bihar

Ingredients:

500 grams of fresh crabs, cleaned and washed

2 onions, finely chopped

2 tomatoes, finely chopped

2-3 cloves of garlic, minced

1-inch piece of ginger, minced

2 green chilies, split lengthwise

1/2 cup mustard oil

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon cumin powder

1 teaspoon coriander powder

Salt to taste

Fresh coriander leaves for garnish

Water as needed.


method:

  1. Heat the mustard oil in a deep, heavy-bottomed pan until it starts to smoke. Remove it from the heat and let it cool slightly.

  2. Once the oil has cooled a bit, return it to the heat and add the chopped onions. Sauté the onions until they turn golden brown.

  3. Add the minced garlic and ginger and sauté for another couple of minutes until the raw smell disappears.

  4. Add the chopped tomatoes and green chilies to the pan. Cook until the tomatoes become soft and the oil starts to separate.

  5. Add the turmeric powder, red chili powder, cumin powder, and coriander powder. Cook the spices with the tomato-onion mixture for a few more minutes until the oil separates.

  6. Now, add the cleaned crabs to the pan. Stir well to coat the crabs with the spice mixture.

  7. Season with salt and cook for about 5 minutes, stirring occasionally.

  8. Add enough water to cover the crabs and bring the mixture to a boil. Reduce the heat to a simmer, cover the pan, and let the crab curry cook for about 20-25 minutes or until the crabs are cooked through and the curry thickens. Stir occasionally to prevent sticking.

  9. Check for seasoning and adjust the salt and spices if needed.

Once the crab curry is ready, garnish it with fresh coriander leaves.

Serve the Bihar-style Crab Curry hot with steamed rice or roti (Indian bread). Enjoy this flavourful and spicy crab curry, a traditional dish from Bihar, as a delightful addition to your Indian cuisine repertoire.



Recipe-3] Chenna Poda from Odisha.

Ingredients:

For Chena (Paneer):

1 litre of cow's milk

1-2 tablespoons lemon juice or vinegar

Water

For Chhena Poda:

1 cup homemade chhena (paneer)

1/2 cup sugar (adjust to taste)

1/4 cup semolina (sooji)

1/4 cup grated coconut (fresh or desiccated)

1/4 cup chopped nuts (cashews and almonds)

1/2 teaspoon cardamom powder

A pinch of salt

2 tablespoons ghee (clarified butter)

1/2 teaspoon baking powder

1/4 teaspoon baking soda


Method:

  1. Making Chhena (Paneer):

Heat the milk in a heavy-bottomed pan and bring it to a boil.

When the milk starts boiling, reduce the heat and add lemon juice or vinegar while stirring continuously. This will cause the milk to curdle and form chhena (paneer).

  1. Once the chhena has separated from the whey (the liquid part), strain it through a muslin cloth or a fine sieve. Rinse the chhena under cold water to remove any traces of lemon juice or vinegar.

  2. Squeeze out excess water from the chhena by tying it in the cloth and hanging it for about 30 minutes.

  3. Preparing Chhena Poda: Preheat your oven to 180°C (350°F).

In a mixing bowl, crumble the chhena and add sugar. Mix well and let it rest for 15-20 minutes to allow the sugar to dissolve.

  1. Add semolina (sooji), grated coconut, chopped nuts, cardamom powder, and a pinch of salt to the chhena-sugar mixture. Mix everything thoroughly.

  2. Heat ghee in a small pan and add it to the chhena mixture. Mix well. Add baking powder and baking soda to the mixture and combine it evenly.

  3. Grease a round cake pan or a baking dish with some ghee.

Pour the chhena mixture into the greased pan and spread it evenly.

Bake in the preheated oven for about 35-40 minutes or until the top turns golden brown and a toothpick inserted in the centre comes out clean.

  1. Remove the Chhena Poda from the oven and let it cool in the pan for a while. Once it has cooled slightly, gently invert it onto a plate or a serving platter.

  2. Cut into slices or squares and serve your homemade Chhena Poda as a delicious Odia dessert. Enjoy the rich, caramelized flavors of Chhena Poda, a delightful sweet treat from Odisha!

The word accidental is quite a touching one and has been through our mind and system a couple of times earlier as well. The fact of the matter is that our industry is a highly performance oriented one which calls for not just physical fitness, grooming standards, language barriers, unexpected expectations of guests, clients and more. What needs to be looked at is the passionate uncompromising attitude and a willingness to make a difference.

My own experience of 25 years now has been a real to eye witness of some people who passed ways, crossed lanes and stayed on the same platforms etc who in my opinion were a complete mis fit as a part of the hospitality & culinary operations. Looking back two and a half decades things and time was so very different and diverse.it was never easy to start anything new and being a part of a new system always has its pros and cons. Being a people’s profession here we are expected to have next levels of patience factor, understanding nature and humility with empathy towards one another.

Over the years, we have observed that people who wish to attain success and be known in this industry have somewhere been influenced by a number of things and not to forget social media. Today if you ask someone like a aspiring culinary professional, what is your aim in the next 3 years approx. in the industry the reply would be-a sous chef or a head chef with a branded property with several perks and benefits! I do not wish to anyway turn down the motivated candidate but after having a healthy discussion with my fellow colleagues, chefs and hoteliers, human resource managers etc we somehow did not feel very convinced with the reply. Though it does depend on performance, appraisals all through the way and hotel expectations etc a candidate must also realise and be a little wiser in giving replies in order to get the conversation going ahead and be able to lead to a starting point correctly matched, well valued and perfectly gauged.

Here are a few points which one must keep in mind when it comes to making a successful & promising career in the hospitality industry.

  1. BE GROUNDED IN YOUR ASPIRING AIMS: fresh aspiring to be professionals graduating from esteemed hospitality management institutions across the country should always keep in mind that achieving success is not an overnight task, it is a process which takes its own due course of time. Hence let us not try to look for short cuts and jumping the ladder up strategies. 

  2. BE REALISTIC IN WHAT YOU EXPECT: It has been observed that fresh graduates in today’s times are a little not too sure of how and where they wish to start their career. At times they get through a particular hotel and are still not satisfied with the offer letter since they heard something unpleasant from somewhere about the place etc. also do not confuse yourself with multiple offer letters to start your first job. Be wise!

  3. PEER ADVICE - NOT THE BEST ADVICE: Students today feel more comfortable in picking on advice and help from peers and they feel that that is the best way to get the replies to their confusions and queries. Experience is the key and which should not be ignored. Nothing can beat experience of a person hence make a better choice on whom to go up to and get the support.

  4. SOCIAL MEDIA SUPPORT – DOUBLE CHECK: Since I come from the classic era when we didn’t have social media etc it was a different world all together for us. We did better quality reading in studies, spending time in the libraries making notes and getting our queries resolved by our valued teachers who were everything to us in helping us shape our careers. We would not hesitate to walk up to them with a bunch of questions to get the real answers etc same way social media can be a good platform to get your replies but one should connect with experienced people as well.

  5. VOICE YOUR QUERIES IN ADVANCE: To some graduating students the real world and hotel industry seems like a new training centre, where they will go daily and sit down in a classroom and ppt shows will be presented etc. the industry on the other hand has ever since been clear that we need people who are tough, and can withstand pressure and carry out tasks effectively. This gap needs to be filled up perfectly well in order to have a smooth flow as a part of the industry. Ask questions, clarify your doubts, reach out to us and check with us with are the possibilities etc before taking the leap.

  6.  FOCUS ON THE FEASIBILITY & NOT FEAR: Students across the country have been reaching out to me over the years now and some of the most commonly put-up queries include that what is the scope for growth in the industry? What is the possibility or being stable? Are there chances that we can be asked to leave after a set tenure or so? What if I don’t get the desired results from my work place after I complete my 1 year or probation period etc. My reply to all the above has been the same which says keep your focus on your goal and not in short term visions. You need to do your best every single day at work and prove your abilities, skills & talent to the people there. If one can see that you are a good performer why would a hotel or a company want to lose an asset? 

  7. GIVE YOUR 100 PERCENT ALWAYS: easy to say this line and motivate everyone around but yes that’s how it is. One needs to be self-motivated in our industry. You cannot keep waiting for someone in the team, seniors etc be there when you want and praise you every hour, day and week. Trainers and human resource professionals too shared the same with me when it comes from the industry perspective, you have to keep some part of your personal life on the side and offer your services without hindrances and distractions in order to achieve the motto of the hotel or property from revenue generation to customer satisfaction!

  8. DO NOT TAKE CRITICISM TO HEART: Feedback and Criticism are 2 elements which should be taken on a very constructive note and for self-improvement. The very fact that we as humans are not perfect at all we need to be open to ideas, views and opinions for doing better not just at our place of work being our dharma which should create good karma but also in our personal life as well. There are good days & bad days in the lives of everyone but with a little calm, cool and composed mindset we can conquer all such negativities and turn them into positive energy and use it to the best of our capacities.

  9. CHANGE IS ALL THAT IS CONSTANT- ACCEPT IT: A simple line to write and share but ends up complicating a lot of people and their careers. It is important to self- introspect on the word Change! It is imperative, can’t be avoided, cannot be escaped from and is not worth going against. In a highly unpredictable world in which we are living today, we cannot guarantee what is going to happen the next minute or day or week hence it is for us to think practical and go with the flow at times and do not complain against the odds and evens which are not matching your horoscope or stars. We all have come up in our life accepting change as it sees the good and betterment for us. 

  10. IT IS OK NOT TO BE OK SOMETIMES: Each one of us is ultimately a human being and there are times in our life when situations and roleplays fall out in such a way that we start struggling in between the mind and the heart. Both of them have a different frequency and therefore it is not necessary that it has to be always a bingo or agree factor. There are days when we just want to pull back a little bit, take a break from our highly physically and mentally strenuous professional life, taking a break or a leave is no crime! But the fact of the matter remains about the proper timing & feasibility which would not affect the work and the organisation on the whole. Balance is the word and make sure that you don’t shift your focus from work and in the bargain the no of days not worked ratio exceeds no of days worked.


On a Concluding Note: Every industry and profession have a few pre-requisites and attributes which a candidate must possess before entering into it and it also happens at times that our mind and heart might agree on it but the real-world rejects. It is very close to the quote Man proposes- God disposes! All of us must do a proper homework- research and speak to experienced people before taking up a highly competitive, challenging & glamourous profession of which we at times only witness the front picture and not the hard work that goes behind to make it happen!

While the past year was tough for all industries alike, the way hospitality industry operates, and education is imparted, has been reshaped. There's never been a better moment to seize the opportunity and join an industry poised to enter the next major stage of development.

All other industries are inextricably linked to the hospitality sector. It's critical to comprehend the skills that students who seek hospitality education will acquire before I respond to your questions about why they should. As I frequently emphasize, hospitality management is a humane approach to conventional business education. And that's precisely what sets this course apart from others, along with the chances it offers.

Contrary to popular belief, a degree in hospitality provides doors for employment in nearly every field. The hospitality industry is not just about hotels and restaurants. Students are well equipped to work in industries like travel and tourism, banking & finance, real estate, consulting, luxury lifestyle & retail, event management and so many more.
