Event | The Grape stomping & Cake mixing brunch at Novotel Hyderabad Convention Centre

October 2021: Novotel Hyderabad Convention Centre today hosted their annual cake mixing & grape stomping brunch at the Hotel. The event was planned to welcome the advent of Christmas and New Year and usher in a season of good tidings and happiness.  The grape stomping began with much enthusiasm, with all guests soaking their feet in the barrels, set against the magnificent outdoor space. The participants were observed singing songs and vigorously stomping the grapes, clearly having a good time.

Novotel Hyderabad Convention Centre escorted guests to the mixing table which was beautifully arranged with Black currant, Golden Apricot, Rum Soaked Figs, Drunk Resins, Dates, Candied Orange Peel, Candied Ginger, Dry Cherries, etc. The invitees donned aprons, face masks, gloves, and caps, and armed themselves with bottles of liquor, ready to tackle the colorful mounds of dry fruits, nuts, and spices.

All of the guests enthusiastically joined the chef's crew in mixing fruits and nuts with liquor and spirits in preparation for the impending Christmas dessert. They also ate a delicious brunch prepared by the chefs and danced to the beats of a DJ and a live band.

Coconuts have been said to be known as the fruit of the tree of the palm family, while having originated somewhere in indo-Malaya they however remain an important crop of the tropical countries. The term coconut can refer to the whole coconut palm, the seed of the fruit which botanically is a drupe and not a fruit. While being a hard shell on the outside with tender flesh and water within it has a number of culinary applications and uses to offer us in our kitchens.

A preferred choice for a refreshing cool welcome drink coconut water is said to be very beneficial and nutritionally high for us while the tender coconut malai goes well into desserts, puddings, salads. Coconut milk laces our curries quite well and be it Indian or international cuisines recipes with veg, fish, chicken, or prawns it just blends to perfection.

Let us have a look at a few Health Benefits of Coconuts:

Coconut water offers a good source of potassium, a mineral that helps balance sodium levels in the body and regulates blood pressure. But the idea that coconut water is more hydrating than plain water or is a superior post-workout drink is largely a myth. As for coconut flour, which is dried, ground coconut meat, it has 5 g of fiber in just 2 tbsp., making it an impressive replacement for traditional white flour, especially for those following a gluten-free diet.

Recipe-1] SOOTHING SUMMER COCONUT SMOOTHIE

Ingredients:

Fresh tender coconut flesh or malai-1/2 cup

Coconut milk- 1 cup

Soy milk-1/2 to 3/4th cup

Banana-1 no ripe

Dates-3-4 no chopped

Honey- 1 tsp

Sliced cashews/almonds/walnuts-1 tbsp.

Flax seeds/ sunflower seeds- 1 tsp

Mint/microgreens/ nuts for garnish.

Method:

1. Prepare all the ingredients for the healthy shake and keep them chilled.

2. Using a jar of a food processor combine all of them and churn them up well to a smooth texture.

3. Adjust texture with milk as needed or add a little yogurt.

4. Pour the smoothie into jars/glasses and garnish with fresh shavings of coconut/sliced nuts/toasted seeds etc

Recipe-2] TROPICAL COCONUT CHICKEN SALAD

Ingredients

For the base of the salad:

Assorted lettuce leaves- 1 cup

For the body of the salad:

Fresh tender coconut malai-1/2 cup

Boiled chicken -1 cup cubes/ shreds

Celery- 2-3 tbsp. cut into small pieces.

Pineapple-1/2 cup cubes

Mango-1 no cubes

For the dressing of the salad:

Olive oil-2 tbsp.

Mustard paste-1 tsp

Salt and pepper to taste

Lime juice- 2 tsp

White vinegar-1 tsp

Sliced red/green chilies-2 no

Mixed herbs-1/2 tsp

Assorted seeds of your choice- 1 tsp

Assorted sliced nuts of your choice- 2 tsp

For the garnish of the salad:

Micro-greens/ cherry tomatoes/ mint/ parsley/ olives.

Method:

1. Prepare all the parts of the salad and keep ready.

2. Assemble the crispy lettuce leaves on a salad serving plate or a serving platter.

3. In a mixing bowl combine together all the ingredients for the dressing and mix them well.

4. Just before serving the salad, toss the body of the salad in the dressing and arrange it on the bed of lettuce, garnish appropriately and serve the delicious salad chilled.

Recipe- 3] COCONUT RIZ PILAF

Ingredients:

Basmati rice- 1 and a half cups, cleaned and soaked in 4 cups water for 20 mins.

Oil-2 tsp

Butter- 1 tsp

Garlic-1 tsp chopped

Lemongrass- 4- 5 pieces

Onion- 1 small chopped

Red/green chilies-2 no slit/shred.

Salt and pepper to taste

Veg stock/water- 2 and half cups

Coconut milk-1/2 cup

Tender coconut malai- 2-3 tbsp. shredded.

Fried cashew nuts and raisins- 2 tbsp. garnish.

Method:

1. Pre-prep all the ingredients for this tasty rice recipe.

2. Heat oil and butter in a pan add in the lemongrass, chili, onions, and garlic, and give it a nice saute for 1 min.

3. Add in the drained rice and fry it for 30 seconds, add in the veg stock or water, salt, and pepper to taste and allow to boil, cover and simmer until almost cooked.

4. Lastly add in the thick coconut milk and tender coconut malai and lightly blend it in, cover and cook in dum for 4-6 mins, garnish and serve hot with your gravies/curries, etc

Recipe-4] COCONUT PRAWN CURRY

Ingredients

Coconut milk-2 cups thick

Prawns- medium to large size-500 gms cleaned, deveined.

Oil/ghee-2 tsp

Butter- 1 tsp

Cumin seeds-1/2 tsp

Bayleaf-1 no

Cinnamon stick-1-inch piece

To make a paste with the following ingredients:

Onions- 1 cup fried, lightly browned

Garlic- 6-8 cloves

Ginger- 1-inch piece

Red chilies- 6-8 boiled

Tomatoes-2 med sized.

Water-1/2 cup

Other ingredients to finish with the curry:

Turmeric powder-1/2 tsp

Coriander powder-1 tsp

Salt and crushed black pepper to taste

Garam masala powder-1/4 tsp

Water-1 cup

Lime juice-2 tsp

Coriander leaves- 2 tbsp.

Method:

1. Prepare all the ingredients and keep aside.

2. In some cases we also marinate the prawns with salt, turmeric, lime and keep aside for 10 mins.

3. Heat oil/ghee and butter in a thick bottomed pan add in the cumin seeds, whole spices and saute for 30 seconds, add in the prepared paste mixture and cook it on a medium flame for 2-3 mins.

4. Add little water if needed and add in the prawns and all other spices and seasonings and give it a nice mix with the masala.

5. Simmer the prawns for 2-3 mins, add in the coconut milk and cover and cook for 4-5 mins, serve hot garnished with coriander, a splash of lime juice, crushed black pepper.

Recipe-5] COCO NAKA PUDDING

Ingredients:

Coconut milk-1 cup thick.

Desiccated coconut-2 tbsp.

Butter-2 tsp

Sponge cake/ chocolate brownie-  200 gms cut into cubes.

Milk- 2 cups

Brown sugar-2 tbsp.

Condensed milk- 2-3 tbsp.

Dates- 3-4 chopped

Assorted chopped nuts- 2 tbsp.

Cinnamon powder-1/4 tsp

Banana-1 ripe peeled and sliced.

Pineapple-1/2 cup cubes

Cherries/ kiwi/ mango etc assorted fruits can be added to the layer of the pudding as well.

Method:

1. Prepare all the ingredients for the pudding.

2. In a sauce pan heat up the milk, add in the dates, brown sugar, condensed milk and cinnamon powder and reduce for 10 mins.

3. Add in the coconut milk, desiccated coconut and bananas, butter and cook for 2-3 mins. Turn off the flame.

4. In a pudding bowl arrange the cubes of cake or brownie and fruits of your choice and top it up with the warm coconut milk mixture and allow to set in the fridge for 1 hour.

5. Serve this pudding with a scoop of ice-cream of your choice and some chocolate sauce and cherries to garnish.

According to Chef Jerson, art inspired presentations of food influence the diner’s perceptions and responses. The visual tasting experience adds to the complexity of the composition, and represents the culture of the food, through traditional or contemporary techniques. 

Food presentation, Chef Jerson avowed is a reflection of the personality of the chef, and being artistic and original in plating, further amplifies  the delightful flavour experience.   With detailed principles of plate presentation being demonstrated, the importance of  communicating quality through the components of the visual aesthetics were reiterated.  

The interactive session concluded with essential wisdom: “plating is the final step of respecting  food to creating that final first impression.

Appointment | Lilian Roger is new GM of Riyadh’s Rosh Rayhaan by Rotana

Rotana Hotels has confirmed that Lilian Roger has been appointed as general manager at Rosh Rayhaan by Rotana in Riyadh. He was previously in the same position at ART Rotana in Bahrain.

These are simply a few of the many countless stakeholders we have conducted campaigns with.

If you have seen pictures of the turquoise waters of Maldives flood social media, part of it is due to the many familiarization trips we have conducted with leading media, celebrities, and so on. In fact, we have conducted 22 familiarization trips so far this year.

We have also conducted six global campaigns this year. We are collaborating with Expedia, InsideFlyer, Skyscanner, Qatar Airways and CNN on these global campaigns. Through these campaigns, we have reached a staggering 59,738,116,794 potential travelers, with an estimated media value of $119,595,365.

Each marketing activity is possible due to the hard-working marketeers, industry partners, stakeholders and others. News | Restaurants in Maharashtra must shut at midnight, says govt

A day after two state ministers, Mumbai island city guardian minister Aslam Shaikh and health minister Rajesh Tope, said deadlines for the city's restaurants and eateries would be restored to pre-pandemic timings of 1.30am and for shops up to midnight, the state government issued an order allowing restaurants and eateries to operate till midnight and shops till 11pm.

Business hours of these establishments had so far been curbed to 10pm. With the extension, shop timings are back to pre-Covid times. While pre-Covid closing timing for vegetarian restaurants was 12.30am, restaurants and bar owners, who had hoped the state would restore their 1.30am deadline, were left disappointed."Many sectors like colleges, theatres and amusement parks will reopen this week, and we want to see the impact on cases. We want to give further relaxations, but in a phased manner," an official said. District administrations can curb timings depending on conditions, but cannot give an extension without the disaster management authority's consent.The order issued by the state government said that with the extension of timings, all other guidelines like 50% capacity for restaurants and the need to have fully vaccinated staffers in shops will continue. “The government observed that in light of the upcoming festive season, staggered timings for functioning of establishments like shops, restaurants and hotels will only lead to more crowding, hence a decision was taken to extend the timings,” the official said. District administrations have been allowed to restrict timings considering local conditions, but they cannot give further extension without the consent of the state disaster management authority.

The hospitality industry felt the timings should have gone back to the pre-Covid hours. Hotel and Restaurant Association of Western India (HRAWI) senior vice-president Pradeep Shetty said, “We welcome the Maharashtra government’s decision of extending the time of operations for restaurants till midnight. The additional two hours will provide much-needed succor to the beleaguered hospitality industry. The sector has been one of those most affected by Covid restrictions. However, we wish an extension had been granted till the pre-Covid deadline of 1.30 am and, considering the onset of the wedding season, it had been accompanied by the lifting of restrictions on banquets, weddings and events. The current limit of a hundred guests for weddings and social events is prohibitive and unviable under present circumstances.”AHAR president Shivanand Shetty said, “We will comply with the order, but it would have been better if timings had been extended till 1.30am as it is festival time and people like to spend time outside with friends and relatives. Restoring timings to pre-Covid days will help the industry recover quickly from the state of disorder it has been pushed into for the past 18 months.”Viren Shah of the Retailers Federation said that although most standalone shops in the city shut by 10pm, the 11pm deadline will help malls do some additional business.

The 7th edition of Chaliyar River Paddle will be held from November 12th to November 14th, 2021 with a message to go ‘plastic negative’.

The three-day paddling event organized by Jellyfish Watersports in association with Kerala Tourism promotes an eco-friendly watersports experience that connects younger and grownups to our waters.

The 68 km paddle will start from Nilambur, located on the foothills of Western ghats in Malappuram, and conclude at Beypore in Kozhikode district, where the river meets with the Arabian Sea.

The Chaliyar River Paddle offers opportunities at various levels from beginners to non-swimmers to well-established water sports enthusiasts, nature lovers, tourists, children, and people from all walks of life. The event naturally promotes our rivers, their beauty, authentic Malabar cuisine, and offers a unique opportunity to meet like-minded individuals. Local music bands will be joining hands to promote their talent and offers a relaxing evening to the paddlers. Food will be catered by the best local restaurants such as Calicut Paragon. 

Covid safety protocols will be followed throughout the event and a Covid vaccination certificate is a prerequisite to participate in the event. This year, given the situation, this event will be promoted as a phoenix event to boost tourism activities in Kerala. The event will offer an expedition, camping, and a source to the sea paddling experience, using Kayaks, SUP's, Raft and this year on 3rd day, the organizers are introducing sculling (rowers) and dinghy sailboats making it a wider range of non-motorized, human-powered watercraft used.

MCLEAN, Va. - Hilton today announced the latest in a series of technology innovations that enhance the guest experience across the company’s 18 world-class hotel brands.  In a first for a major hospitality company, Digital Key Share will allow more than one guest to have access to their room’s Digital Key, which turns the free Hilton Honors app on their smartphones into a room key.

Hilton also announced an enhancement to a highly valued Hilton Honors benefit, providing members with early confirmation of a favorite perk – complimentary room upgrades.  Eligible Gold and Diamond Hilton Honors members will be notified of their space-available upgrade 72 hours prior to arrival, enabling the member to choose their upgraded room directly when they check-in via the Hilton Honors app. 

These two enhancements join the recently launched Confirmed Connecting Rooms, another industry first that allows individuals to easily and instantly confirm at least two connecting rooms at the time of booking.

At the end of the shift, he hands over that to the manager or adds it to an online list.

A vegan menu is then created by the chef/manager.

When other guests inquire about a vegan menu, instead of pointing to some dishes on the menu, the guest is offered a special, standalone vegan menu.

If every interaction that is warranted a new, different response from the standard operating practices is recorded and actioned, you get a compound effect.

Actionable Insights

1. Ensure your team captures any situation, request, demand, question, that is not already framed and featured in your SOPs.

2. It could be as simple as where is the restaurant to who owns this place? No management judgement should be used to document. No filtering. 

3. Make it simple for your team to record all such incidents. Create a voicemail box, a simple email address, pen & paper, anything that they can do to capture the details where they work. If there is too much effort required to do so, it will not happen.

4. Create a Chief-Moment-Of-Truth Officer position to ensure that all such records are accessed, actioned and added to SOPs. p.s. Your SOPs are supposed to be living, breathing entities and not something that is filled away in vaults. 

 5. Reward the people who add/create more knowledge for everyone.

Cygnett Group of Hotels and Resorts plans to launch 9 new properties across multiple cities in different regions of India over the next six months. The new properties will come up in Dehradun, Jaipur (2 hotels), Bhiwadi, Dalhousie, Solan, Kolkata, Rajkot, and Goa.

The Cygnett Group is in the process of finalizing another 6 hotels, details of which will be announced soon. Like all Cygnett Group hotels, the new properties will target both business and leisure travelers. “There is a lot of pent-up demand, especially in the smaller cities and towns, and we want to aggressively capitalize on that demand,” said Sarbendra Sarkar, MD & Founder Cygnett Hotels & Resorts.

Speaking about the growth opportunities in India, Sarkar said, “We believe that the disruption created by the COVID-19 pandemic is now behind us and people have begun traveling again. The economy is steadily coming back on track and therefore the demand is accelerating, especially in non-metro cities.”

Pointing out that occupancy rates in Cygnett Group hotels have been going up for the past few months, Mr. Sarkar said that recovery in the hospitality sector has been faster than expected after the devastation caused by the pandemic.

Sarkar added that Cygnett properties are currently running at 70% occupancy as against India's average of 52% occupancy. He also highlighted the challenge of a declining Average Daily Rate (ADR). “ADR has gone down by 30% this season. That’s a little worrying for the industry,”  Sarkar said, adding that it would take another 8-10 months for the ADR to up to the pre-pandemic levels.

Radisson Hotel Group is set to become the world’s first hotel group to make all meetings and events across 400+ hotels in its EMEA portfolio carbon negative. For every event taking place at its participating hotels, Radisson Hotel Group will offset double the carbon footprint, to ensure that every meeting has a positive impact on the environment.

For meetings booked between 18 October 2021 and 31 January 2022 and taking place before 31st March 2022, Carbon Negative. Planet Positive will set a new sustainability standard in the global hospitality industry. The program allows clients to host meetings in a sustainable way by offsetting double the CO2 emissions from meetings and events free of charge to the client, making meetings that take place during this period at participating hotels carbon negative.

Carbon Negative. Planet Positive reinforces the Group’s 100% Carbon Neutral meetings offering, in place across the Group’s 1,600 hotels worldwide since 2019. The initiative forms part of the Group’s wider Responsible Business program which targets reducing the Group’s carbon footprint by 30%, and which aims to set science-based targets. Since the launch of the 100% Carbon Neutral Meetings program, the Group has offset over 30,300 tons of CO2 at no cost to its clients, which is the equivalent to removing more than 6,500 fuel driven cars1 off the road.

Carbon Negative, Planet Positive meetings complement the Group’s Hybrid Meetings solutions which launched in 2020 and offer owners and guests the flexibility and space optimization they require to better meet the rapid lifestyle changes of today’s travelers.
