Delicacies to relish using minced options

Keema is one of those words which entices the taste buds of quite a few of us and we love to try interesting dishes with keema which serves as a variety in between several meal plans and days of the week when we crave to have some varieties on our plates. Before working with any kind of keema be it mutton or chicken it is important to observe a few points of quality and freshness which is essential to end up making a tempting delicacy. 

Firstly, the keema should be fresh as far as possible, these days we indulge in frozen varieties due to lock downs etc therefore we need to check on the packing date and best before must be verified before online or offline purchases to prevent food borne issues and stomach upsets etc. 

secondly, we also need to store it at the right temperature since we are now into summer the raw meat or keema tends to go rancid very fast if not stored properly due to rise in temperatures, ensure you thaw it properly and gradually before cooking and at room temperature, never put the frozen keema into water or immerse it in water baths to melt away the ice.

Thirdly, the grain and texture of the keema should be looked at it shouldn’t be too dry or too overly moist or like a paste as well, it should be well minced and should be coarse when cooked as well. While it is always best to pick the fresh lot and use at the earliest cold storage facilities do make convenience cooking happen for most these days!

Here are a few simple-easy to make recipes with Chicken Keema:

Recipe-1] CHICKEN KEEMA PAO KA ZAIKA

Ingredients:

Chicken keema- 250 gms.

Green peas- ½ cup

Oil/ghee- 2 tbsp.

Ginger-garlic-chili paste- 1 tbsp. mix

Onion paste-1 cup –raw.

Salt to taste

Tomato puree-1/2 cup fresh.

Turmeric powder-1/2 tsp

Red chili powder-1/2 tsp

Coriander powder-1 tbsp.

Water-1/2 cup

Garam masala powder-1/2 tsp

Fresh coriander leaves- 2 tbsp. chopped

Lime slices and onion slices to serve with- as needed.

Pao- 4-6 pieces.

Method:

1. Prepare all the ingredients for the recipe.

2. Heat oil/ghee and add in the ginger-garlic-chili paste and onion paste and saute it on a medium flame for 4-5 mins, add little water as needed while it cooks.

3. Add in the tomatoes, salt and all powdered spices, add chicken keema and frozen- blanched green peas and saute it well with the masala.

4. Add little water and simmer for 10-12 mins and allow the chicken keema to cook well.

5. Finally garnish with coriander leaves and serve with buttered pao, lime and onion slices as a one meal dish.



Recipe-2] DUM DAAR KEEMA MATTAR KA PULAO

Ingredients:

Basmati rice-  1 and half cup soaked in 3 cups water for 15 mins.

Oil/ghee- 2 tbsp.

Chicken keema- 250 gms.

Green peas-1/4 cup blanched

Potatoes-1/2 cup cut into cubes.

Bayleaf and peppercorns- 4-5 mix.

Salt to taste

Kasuri methi- 1 tsp

Sliced onions- 1 cup

Chopped tomatoes-1/2 cup

Sliced green chilies- 2-3 no.

Turmeric powder-1/2 tsp

Dhaniya jeera powder- 1 tsp mix

Garam masala powder- ½ tsp

Water – as needed to cook the pulao.

To serve with: papad, raita, pickle.

Method:

1. Prepare all the ingredients for the pulao.

2. Heat oil/ghee in a thick bottomed pan, add in the sliced onions and slit green chilies and saute them until light brown, add little water as needed.

3. Add in the keema and peas, potatoes and saute well, add salt and tomato, kasuri methi, and bhunao it for 2-3 mins.

4. Add in double the amount of hot water and bring to a boil, simmer and cook the pulao on low flame, covered and in steam for 15-18 mins.

5. Open, mix well check for seasonings, add a little fresh mint and coriander, fried onions, nuts like cashews and raisins and little rose water, and serve hot.

Recipe-3] KEEMA MATTAR MASTANA

Ingredients:

Chicken keema- 250 gms.

Green peas- ½ cup.

Oil/ghee- 2 tbsp.

Cinnamon stick-1-inch piece.

Cloves- 3- 4 no.

Ginger- 1 tsp chopped

Dry red chili- 2 no.

Chopped onions- ½ cup

Chopped tomatoes-1/4 cup

Curd- ¼ cup

Roasted crushed peanut powder-2 tsp

Salt to taste

Coriander powder- 1 tsp

Red chili powder-1/2 tsp

Turmeric powder-1/2 tsp

Water-1/4 cup

Coriander and mint leaves- 2 tbsp. mix

To serve with: roti, phulkas, parathas, laccha parathas etc.

Method:

1. Prepare all the ingredients for the recipe.

2. Heat oil/ghee in a pan, add in the whole spices, and onions, ginger and saute well for 2 mins.

3. Add in the tomatoes saute well, add in the chicken keema and peas.

4. Add in the salt, powdered spices and bhunao the keema well for 2-3 mins.

5. Simmer and add in the thick beaten curd and peanut powder and mix well, cover and cook the keema on a low flame for 12-15 mins and check.

6. Add mint and coriander leaves towards the end and serve as a main course with lime, onions or kachumber, raita and papad.

Recipe-4] KEEMA GOTALA ROLL UPS

Ingredients:

Chicken keema- 250 gms

Oil/ghee- 2 tsp.

Jeera-1/2tsp

Chopped green chilies-2 tsp

Garam masala powder-1/2 tsp

Tomato puree-2 tbsp.

Chop onions- 1 no for cooking the keema

Boiled mashed potato-1/2 cup

Salt and pepper to taste

Leftover rotis- 4-5 no.

Schezuan sauce- 2 tbsp.

Sliced onions- ¼ cup for the rolls.

Shredded white cabbage-1/2 cup

Grated cheese-2 tbsp.

Lime juice- 1 tbsp.

Chaat masala-1 tsp

Coriander and mint leaves- 2 tbsp. mix

Method:

1. To prepare the keema mixture for the roll ups heat oil/ghee in a pan add in the jeera, and onions, chilies and saute for 2-3 mins add in the tomato puree, and salt to taste, cook the mixture for 2-3 mins on low flame.

2. Add in the keema into the masala and bhunao for 2 mins, add in garam masala powder and little water to cook the keema on low flame for 15-18 mins.

3. Once keema is cooked add in the boiled mashed potatoes and mix well.

4. To assemble the rolls ups, warm up the leftover rotis and apply little schezuan sauce on them, place cabbage and sliced onions and now place the keema potato mixture, add grated cheese, sprinkle lime juice, chat masala and coriander- mint leaves.

5. As an addition one can add little imli chutney as well if desired and roll up the content and secure it well. Serve immediately.

Melbourne to host Australian Tourism Exchange 2024

Thursday, May 2023: The Australian Tourism Exchange (ATE) will return to Melbourne next year for the first time since 2015, with Australia’s largest annual tourism trade event to be held at the Melbourne Convention and Exhibition Centre (MCEC) from Sunday, 19 May 2024 to Thursday, 23 May 2024.

Tourism Australia Managing Director, Phillipa Harrison, today announced Melbourne as the next host of the event on the trade floor of ATE23 on the Gold Coast.

“After a couple of years of hybrid events it has been great this year to have ATE back to its traditional format on the Gold Coast and we can’t wait to work with Visit Victoria to deliver another amazing ATE in 2024,” Ms Harrison said.

“Melbourne has proudly hosted our premier travel trade event on eight occasions in the past and we look forward to taking ATE, and more than 2,000 delegates, back to Melbourne to drive future tourism business across Australia.”

“ATE brings together tourism businesses, tourism wholesalers and retailers from around the world for four days of appointments, as well as networking events, which are more important than ever before as competition grows for the tourism dollar.”

ATE24 will be the ninth time ATE has been staged in Melbourne, which first hosted the event in 1991 and then again in 1992, 1997, 1998, 2003, 2004, 2009 and 2015. Melbourne had been due to host the 2020, but the event did not go ahead due to the global pandemic.

 ATE provides tourism operators around the country with the opportunity to meet and do business with international buyers from around the world. ATE24 will run from 19 May 2024 to 23 May 2024, with delegates from 30 countries expected to attend.

ATE24 will be delivered by Tourism Australia in partnership with Visit Victoria.

73% of Indian travellers want to leave the places they visit better than when they arrived reveals Booking.com’s Sustainable Travel Report.

Booking.com’s latest Sustainable Travel Report, found that Indian travellers are integrating sustainable thinking into their vacation planning, beyond everyday small habits such as using reusable water bottles or reusable shopping bags. Some say, they now travel outside of peak season to avoid overcrowding and opt for walking, biking, or taking public transport as part of their means of transportation. Others have also taken on the “buy local” mantra, favouring small, independent stores to contribute to the local economy.

Recycling, reusing and the value of reducing are becoming the mantra of the Indian traveller

A majority of Indian travellers recognize by conserving resources now and being more sustainable, one can help save the planet. In just a year, Indians have grown extremely conscious of how they impact the planet and are implementing several measures as a result.

In a bid to save water, 55% travellers reuse their towels multiple times, up 21% from 2022. As more people are comprehending the value of reducing, reusing, and recycling 57% of them brought their own reusable water bottles, up by 12% since 2022. 52% individuals are utilising reusable bags to be more responsible; 44% practise recycling garbage while travelling and surprisingly, 51% of individuals always carry their personal, reusable water bottle.

Indians are making greater efforts to be more mindful of their travel impact at every step of their journey

Indians are taking several sustainability-related actions as their environmental consciousness grows.

Taking conscious habits from home when travelling, 66% now turn off their air-conditioning when they aren’t there (up 23% from 2022)

Indian travellers are moving towards sustainable travel practices and are becoming more selective when deciding their accommodations and modes of transportation primarily due to the worsening effects of climate change and growing environmental awareness.

When it comes to transportation, 51% of Indian travellers now plan their sightseeing so that they can walk, use bicycles or take public transportation - essential for ecotourism

Looking to further reduce their impact, 41% decide to go off-peak to avoid overcrowding, up 5% since 2022.

Additionally, taking the ‘buy local’ ideology is also a popular mantra amongst travellers while on vacation with 52% respondents favouring small, independent stores.

 Incentives and discounts can further drive Indians to be more sustainable

Today, while the intent is clear, there are several challenges travellers face to find and book sustainable properties, however, they are open to further incentives to travel sustainably. Nearly half of Indian (44%) travellers are asking for discounts and financial incentives to choose eco-friendly options. Additionally, it has been found that 53% of people would be motivated to travel more sustainably if they were given reward points for selecting sustainable options. These reward points can also be used to receive additional benefits or discounts through online travel agencies.

Mumbai, May 2023: Thomas Cook (India) Limited - India’s leading omnichannel travel services company and its Group Company, SOTC Travel surveyed over 3500 consumers, covering a comprehensive market (including India’s metros, mini metros like Pune, Chandigarh, Coimbatore and key Tier 2-3 markets of Jaipur, Indore, Tiruchirappalli, Madurai, Nagpur, Surat, Baroda, Bhubaneswar, Lucknow, Mysore, Visakhapatnam, Guwahati, Patna, etc.) to release the India Holiday Report - May 2023. The survey was conducted over a period of one month and administered via the Companies’ online channels. The India Holiday Report - May 2023 reflects highly positive travel sentiment with insightful consumer behaviour and travel trends.

 

Key findings include:

·     Increased holiday intent: Travel is clearly back on the Indian consumer radar with over 84% respondents indicating increased intent to travel in the next 6 months Vs. 45% pre-pandemic

o  Multiple shorter trips/mini-cations: in addition to at least one/two long annual trips of approx. 10-12 days, 82% respondents indicated preference for multiple (3-4) shorter trips/minications (domestic and international short haul)

o  Higher spends: despite supply constraints leading to higher pricing, over 80% respondents displayed appetite for higher spends of approx. 20% Vs. pre pandemic

 

·     High growth segments: While multigenerational families (75%), Couples/DINKS (62%) continue to display a strong travel desire, high growth segments that are emerging include:

o   Rise of Young India: As the youngest demography in the world, approx. 65% of India’s population is below the age of 35. Young India (millennials and Gen Z) form the new powerhouse for the sector with highest intent to travel (95%). Concept of YOLO (you only live once) is driving travel demand

o   Gen S: India’s Silvers/Seniors have significant disposable income post retirement, topped up with funds from their children, and are displaying high travel appetite (58%), especially for premium holidays like cherry blossom tours in Japan and cruises

o   Regional India-Bharat: Rising disposable incomes + aspirational value of holidays is resulting in strong desire (60%)

 

·     Experiences driving demand: pandemic induced restrictions has increased appreciation for life. 78% respondents opted for experience led travel to create memories of a lifetime with deeper exploration and distinctive local elements Vs. regular sightseeing: bucket list destinations/elements (65%); gastronomy (45%); outdoor-adventure-fun (50%); culture and history (30%)

 

·     Surge across both - domestic and international travel: While only domestic holidays were preferred by 40% respondents and only international by 66%; a significant 90% opted for both

o   Domestic destinations favoured were Kashmir (60%); Himachal and Uttarakhand (50%), Ladakh (35%), North East (40%) Kerala (25%), Andamans (30%), Goa (30%); Bhutan in the Indian subcontinent (30%)

o   International tourism is witnessing a strong resurgence. Despite visa challenges, Europe is a clear favourite preferred by over 46% of respondents led by Switzerland, France, Spain and Italy. Short hauls (50%) are witnessing rapid growth with increased interest for Thailand, Singapore, Malaysia, Indonesia, Dubai, Abu Dhabi, Oman; island destinations like Maldives, Mauritius (28%). Strongly emerging on the radar are destinations like Japan and S. Korea (25%); also Vietnam-Cambodia due to new flights and increased connectivity (30%). Long hauls like Australia with end-to-end digital visa processes are seeing uptick of 20%. USA continues to face visa challenges and was selected by 8%

 

·     Key considerations for travel:

o   Visa challenges: formed a barrier for 70% respondents

o   Flexibility: 66% respondents are keen on zero penalties for date changes/rebooking, etc.

o   Access to multiple/convenient payment options is of value to 35% respondents (Travel loans, EMI, BNPL…) 

o   Health & Safety continues to be a consideration for travellers, however reduced to 30% respondents

 

·     Mode of travel: 85% respondents displayed clear return of confidence in air travel with increased demand for air-inclusive packages, 15% for drivecations; cruise holidays/sea-cations seeing a surge of 70%

 

·     Customers opting for Hybrid/Omni-Channel routes to choose their Holiday: while digital models continue to see uptick of 66%; 58% respondents require the guidance of a holiday expert and prefer to purchase their holiday through retail outlets; 95% prefer phygital channels (combination of physical+digital models), based on their convenience

 

·     Sustainability: 30-35% respondents are becoming more mindful about the environment/local communities

The food trail will start off with chaats such as papdi chaat, and the unique kulle ki chaat, Bhe ke Kebab, Tulsi ke kebab from the walled city. Kulle ki chaat, for the unversed, is made by scooping out the centres of boiled potatoes, sweet potatoes or summer specials like watermelons, and filling them with a mixture of chickpeas, pomegranate seeds, spices, and tangy chutneys. The stuffed potatoes or watermelon are then garnished with a variety of toppings such as sev, coriander leaves, and chaat masala, which is a spice blend commonly used in Indian cuisine.  

Besides the chaats, Dehlnavi cuisine trail will also feature kebabs and fish fry. While bhey ke kebab or lotus stem kebabs will stand true to the earnest effort for uniqueness, the other offerings on Purani Dilli Fried Chicken and Fish Fry will reflect the vast diaspora of Mughlai kebabs and street foods of Delhi.

The main course, however will remain the highlight of the fare and perhaps for the first time ever, the vegetarian side will seem more enticing with Dal Dehlnavi served with a crisp biscuitty roti will catch your fancy. The nimona pulao will be as intriguing as the dal and biscuitty combination, since the usual nimona pulao has green peas (matar), it is given a unique spin with matar stuffed inside the salan mirchis! The matar paneer naize would be the perfect nod to rustic flavours and a smooth, creamy-like texture thanks to the pine nuts. The chatpate soya charra aloo mime the mock meat hype in Mughal corterie introduced by Bania community. While kunni dal which is slow cooked on a gentle flame with a blend of Bengal gram and black lentils is infused with a handful of secret spices and a hint of garlic, is sure to comfort you to no end.

The non-vegetarian fare on the other side will be as royal as it could get. Expect the all-time favourite Dilli Butter Chicken in luscious gravy with a velvety texture and an indulgent buttery taste that coats the tongue. The juicy and tender boneless chicken pieces perfectly cooked and complemented the buttery goodness of the dish, will guarantee a lasting impression on the taste buds. The extravagant Nihari and Gosht Pulao too irresistibly delicious and added the perfect touch of Mughlai to the unforgettable experience.

Dubai’s Department of Economy and Tourism launched its latest summer campaign starring veteran actress Poonam Dhillon and celebrity couple Divyanka Tripathi and Vivek Dahiya. The campaign video captures the destination’s bountiful outdoor and indoor activities one must experience with their family to make their holiday one to remember and treasure for a lifetime! The film’s core narrative celebrates family bonding as it brings together 3 generations in a unique storyline, where Poonam Dhillon is reflective of a relatable and sporting maternal figure who transports them into the diverse world of Dubai.

The conceptualized campaign film, ‘Do you believe it?’ showcases Poonam Dhillon and her grandkids excitedly unravelling their adventure-filled day exploring the sun-soaked modern metropolis. With striking, colourful visuals of a plethora of activities like time travelling to the future in a shuttle spaceship at Museum of the Future, adrenaline pumping activities including the Edgewalk experience at Sky Views, desert drive on vintage four-wheel drives followed by a hot air experience chasing the clouds and finally concluding the day with record-breaking speeds at the Storm Coaster.
